"Ready. Set. Cook! Reynolds Wrap Contest Entry. I love Rhubarb and Dutch Oven cooking. In reality I love all types of cooking period. I had some Rhubarb in the refirigrator, and had no idea of what to fix with it, until I heard about the Ready. Set. Cook! Reynolds Wrap Recipe Contest. I decided to take the challenge. Along with the Reynolds Wrap, I picked four ingredients from the list, and spent the whole night working on this recipe. The next morning my wife asked me what I had come up with. I couldn't tell her what it is; I just had to cut her a piece, and let her tell me what is. She liked it so much that she only allowed me three small slices.

2 (15 ounce) cans pear halves
2 cups rhubarb
1/8 cup water
1 cup sugar (divided)
2 tablespoons lemon juice, fresh
Reynolds Wrap Foil
2 3/4 cups cake flour
2 teaspoons baking powder
1/2 teaspoon salt
6 tablespoons unsalted butter, cool not cold and cut into 6 patties
1 large egg
1 cup heavy cream
2/3 cup cake flour
2/3 cup sugar
2 tablespoons unsalted butter, cold
2 tablespoons heavy cream
1/2 cup almonds, finely chopped

Steps:

  • Drain the pears into a large colander and set aside.
  • Peel and wash the rhubarb, then slice in half length wise, and cut into 1-inch pieces. Place the rhubarb in a large saucepan, and add the water, lemon juice and 3/4 cup of the sugar. Over medium heat, bring to a boil, stirring frequently, cooking the rhubarb until completely softened. Continue cooking until the mixture just starts to thicken. Set aside to cool on a wire rack, while preparing the rest of the recipe.
  • Using Reynolds Wrap® Foil, line a 10-inch/5-quart Dutch oven with two, 24-inch strips and lay across each other forming an "X". Using cake flour; grease and flour the aluminum foil. The aluminum foil is used as handles to lift the Kuchen from the Dutch oven. Also makes cleaning the Dutch oven easier.
  • Set the oven rack in the middle position, and preheat the oven to 375º.
  • Place the flour, baking powder, salt and the remaining sugar in an electric stand mixer bowl. Attach the wire whip, and at speed 1, mix for 15 seconds to combine the ingredients.
  • Attach the flat beater, and at speed 1, add the butter patties one piece at a time, mixing until you have small crumbs.
  • In a small bowl, whisk together the egg and cream, and add to the crumb mixture. Attach the dough hook, and at speed 2, mix until the dough clings to the hook.
  • Pour the dough into the Dutch oven. Arrange the pears, cut side down over the dough. Spoon the rhubarb over the peaches.
  • For the topping, in a medium size bowl, whisk together the flour and sugar. Using a pastry blender, cut in the butter until the mixture resembles fine crumbs. Add the cream and almonds, and gently mix with a fork until moist crumbs form. Sprinkle over the pears and rhubarb.
  • Cover the Dutch oven and bake for 15 minutes, remove the lid and bake for 30 to 35 minutes, or until lightly browned.
  • Cool on a wire rack for 15 minutes. Then gently remove the Kuchen from the Dutch oven, using the aluminum foil as handles, and set on a wire rack to cool.
  • Place the Kuchen on a cake stand, and serve.

A Dutch Oven Dinner is NOT complete w/o having these potatoes served with along with what ever is being eaten! Figure out how big a dutch oven you need for the amount of people you are going to be serving. If you are new to this type of cooking, do some in your own back yard until you have the amount of coals right. Remember - more coals, the hotter it gets in there. I've had to endure many burnt potatoes before!! 15 medium potatoes (sliced with skins on, about 1/4 thick)
1 teaspoon black pepper
2 teaspoons salt
1 lb bacon
3 medium onions (diced)

Steps:

  • Keep potatoes covered with salt water until ready to use or they turn dark and loose much of their appeal.
  • Place bacon in the bottom of the dutch oven, enough to make 1/8 inch in oven. Brown bacon in preheated oven with or without the lid on; If it's windy, or many people moving around - it's safer with the lid on.
  • Add onions, and cook until transparent.
  • Place potatoes in oven a layer at a time, seasoning as you go - Go easy on the salt because of the bacon.
  • When all potatoes are in stir thoroughly so seasoning and bacon and grease are well distributed throughout.
  • Place lid on oven and cover with coals.
  • Beginners be careful, and inspect often - Some cooks say stir at each inspection, thus insuring the bottom isn't burning - Personally, I think this results in broken and mushy potatoes. I, after the initial stirring, leave them alone - If I'm doubtful about the bottom, I take a spatula or spoon and slip under the potatoes and lift enough to.
  • check the progress then slip spatula out, leaving potatoes disturbed as little as possible by sampling frequently you can announce when done. (usually around 20 minutes).
  • *my advice - go easy with the coals when you are beginning. Keep them well dispensed on the bottom of the oven and the top. Use your "tool" to turn the dutch oven around on the coals often and move the top around a bit to keep the temperature inside even*.

3 oz box strawberry gelatin

  • 2. Beat eggs add to flour along with shortening and milk.Blend

1 pinch salt

1 (85 g) strawberry Jell-O gelatin dessert
5 cups sliced rhubarb
1/3 cup sugar
3 tablespoons flour
1/3 cup flour
2/3 cup sugar
3 tablespoons margarine or 3 tablespoons butter

Steps:

  • Pre-heat the oven to 375.
  • THE BASE: Cut margarine or butter into dry ingredients until it looks like coarse crumbs. Add egg & milk mixture; stir till moist. Pat evenly on bottom and 1" up the sides of 9x9" pan.
  • THE MIDDLE PART: Mix all the ingredients together and turn into crust lined pan.
  • TOPPING: Cut together and sprinkle evenly over the rhubarb.
  • Bake for 45 minutes; cool and serve with ice cream or whipped cream.

If you are using frozen rhubarb, measure while frozen then thaw completely in a colander. Do not press the liquid out.

2 1/2 cups sugar, divided
1 cup miniature marshmallow
1/2 cup butter, softened
1 teaspoon vanilla
1 3/4 cups flour

Steps:

  • In a large bowl, combine rhubarb and 1 1/2 c sugar. Transfer to a greased 11x7 dish. Sprinkle with marshmallows.
  • In a small mixing bowl, cream butter, vanilla and remaining sugar.
  • Combine flour, baking powder and salt then add alternately with milk to the creamed mixture.
  • Beat just until moistened. Spoon over rhubarb/marshmallows.

Rhubarb Kuchen recipe from my grandmother. Its a lovely dessert that is a blend of tart, tangy rhubarb and a thick, buttery almond crust.

3/4 cup butter, softened
1 1/4 cups granulated sugar
1/3 cup plain yogurt
1 egg yolk
1 teaspoon grated orange rind
2 cups all-purpose flour
1/2 teaspoon baking soda
1 pinch salt
3/4 cup sliced almonds
5 cups chopped rhubarb
1 tablespoon orange juice
1/3 cup strawberry jelly

Steps:

  • Cream butter with 3/4 cup of the sugar.
  • Beat in yogurt, egg yolk and orange rind.
  • Combine flour, baking soda, salt and 1/2 cup of the almonds.
  • Gradually stir into butter mixture until mixed.
  • Using wet spatula or hands, spread dough evenly onto bottom and 3/4 inch up side of greased 10-inch springform pan.
  • Toss rhubarb with remaining sugar and orange juice.
  • Arrange evenly over the dough.
  • Sprinkle remaining almonds around the edge.
  • Bake in 350 F or (180 C) oven for 45-50 minutes or until pastry edge is golden brown and rhubarb is tender.
  • Let cool on rack.
  • Remove side of pan.
  • To make Glaze: In small saucepan, bring strawberry jelly and 3 tbsp of water to a boil while whisking constantly.
  • Reduce heat and boil gently whisking often for approx.
  • 3 minutes or until thickened.
  • Brush over rhubarb and sides of cake.
  • Let stand to cool for 5 minutes.

MEXICAN STACK-UP #RSC

Ready, Set, Cook! Reynolds Wrap Contest Entry. This recipe combines traditional Mexican flavors and creates a fun "stack up" meal. It uses Reynolds Wrap Aluminum Foil to steam off the skin of the poblano pepper, as well as tent the dish while baking. This can be served as a main dish casserole or a yummy appetizer if sliced into small pieces.....great football food. Six servings as a main dish casserole or 12-15 appetizer sizes. If you like things hotter, add some diced jalapenos and garnish with jalapenos as well. Enjoy!

1 poblano pepper
Reynolds Wrap Foil
2 tablespoons olive oil
4 green onions, sliced thinly
4 garlic cloves, finely chopped
1 1/2 lbs ground beef
3 1/2-4 tablespoons taco seasoning mix, to your taste
1 pinch cayenne pepper
1 cup canned black beans, drained
2/3 cup corn kernel, fresh
8 ounces cream cheese, room temperature
1/3 cup chicken stock
2 tablespoons chives
1 tablespoon fresh cilantro, chopped
salt and pepper
8 corn tortillas
1 1/2 cups sharp cheddar cheese, grated
1 1/2 cups monterey jack cheese, grated
sour cream
green onion, sliced
black olives, sliced
jalapeno, sliced

Steps:

  • Preheat broiler to high broil. Set the rack 6 inches from the heating element. Place the poblano pepper on a baking sheet and broil for 4 minutes on each side, or until the skin is blistered and rising up.Watch closely so you don't scorch your pepper. Remove from the oven and place the poblano pepper on a sheet of Reynold's Wrap aluminum foil and wrap loosely to allow the pepper to steam for 10 minutes.
  • Turn the broiler off and preheat the oven to 350 degrees. Add olive oil to a large skillet and heat over medium heat. Add the green onions and cook for 1 minute, then add the garlic and cook for 1 minute. Add the ground beef and cook until no longer pink. Drain all grease from the pan, using a paper towel to soak up any extra grease.
  • While the onions and meat are cooking, remove the poblano from the Reynold's Wrap aluminum foil and let cool a bit. Peel the skin from the poblano and dice.
  • Add the chicken stock, taco seasoning, cayenne pepper, diced poblano peppers, black beans, corn, cilantro, cream cheese and chives to the skillet. Cook while stirring until it is creamy. Taste and add salt and pepper as you feel is needed. Remove from heat.
  • Choose a casserole dish that is at least 2 1/2 inches to 3 inches deep and can hold 2 stacks of 5 inch corn tortillas. Otherwise, you can make two separate casserole dishes. Spray with oil and place 2 corn tortillas (making 2 stacks!) in the casserole dish. Spread 1/4th of the meat mixture on top of the two tortillas. Top with 1/4 of the cheese. Repeat this step 3 times, ending with cheese.
  • Loosely tent your casserole dish with Reynolds Wrap Aluminum Foil. Use no stick Reynolds Aluminum Foil if you are afraid your cheese will attach to the aluminum foil. Bake at 350 degrees for 20 minutes. Remove the Reynolds Wrap Aluminum Foil and bake for an additional 15 to 20 minutes. Let the dish sit for 5 minutes before slicing and serving. Enjoy!

  • Mix together Flour and Sugar in a bowl.
  • Melt butter in microwave.
  • Pour Butter over the Flour mixture.
  • Fork mix a little bit. Make clumpy. Mix to much you will make a big ball. Don't want a big ball.
  • Sprinkle on top the Rhubarb.
  • Bake in oven 350 degrees for 30 to 40 minutes.
