1 tablespoon butter
1 tablespoon flour
1/2 cup water
2 egg yolks
1/2 cup sugar
1/2 cup cider vinegar
4 large eggs, boiled
1/3 cup cider vinegar
5 cups lettuce, cut in pieces
4 cups potatoes, boiled
6 slices bacon
1/3 cup water
2 tablespoons onions, chopped

Steps:

  • Have read chopped lettuce for 5-6 servings.and potatoes and eggs -- and chopped onions --
  • Dice bacon and fry in skillet till brown -- add 3-4 tbls of sauce mixture, vinegar and water.
  • Bring to a boil and keep hot.place a layer of hot potatoes, (mashed in bowl if you prefer) then a layer of lettuce, 2 sliced hard cooked eggs, and several tablespoons of hot bacon dressing --
  • Add remainder of potatoes, lettuce and sliced eggs.
  • Pour rest of dressing over this and serve immediately.

At our recent family reunion, my grandmother prepared a salad with this dressing. A Little tangy and quite addictive. The recipe came from a clipping in an Indianapolis newspaper. I halved the recipe for the salad I was making last night, but next time I will quarter it, a little goes a long way. Delicious none the less!

2 cups Miracle Whip
3 tablespoons prepared yellow mustard
1/2 cup sugar
1 pinch salt
1 pinch pepper
1 teaspoon celery salt

Steps:

  • Combine salad dressing, mustard, sugar, salt, pepper and celery salt.
  • Warm in microwave oven or in the top of a double boiler.
  • Dressing may be refrigerated and reheated as needed.
  • Mix desired amount with a tossed salad.

MASHED POTATOES:
2 potatoes, cooked
1/4 cup cream
2 tablespoons butter
Salt and pepper
DRESSING:
6 slices bacon
1/2 cup water
1/4 cup vinegar
6 scallions, sliced
4 tablespoons sugar
SALAD:
4 cups young lettuce or spinach leaves
4 hard boiled eggs, sliced

Steps:

  • Make the Mashed Potatoes: Cook the potatoes until tender. While the potatoes are cooking, heat up the cream. Add the butter and stir until melted. Add the cream and butter to the hot potatoes and mash. Season to taste. Make the Dressing: Brown bacon in a frying pan. Remove bacon and pat dry. When cooled slightly, crumble the bacon into small pieces. Add vinegar, sugar, and water to the pan with the bacon fat. Stir to dissolve the sugar. Make the Salad: Combine the lettuce, bacon, hard-boiled eggs, and scallions. Top with the hot dressing and stir until the lettuce wilts. Serve immediately with the wilted lettuce over mashed potatoes.

This is easy, tasty, filling & makes a great meal! You can add more or less of any of the ingredients if you want. You can make this to feed as many as you want. The prep time is a guess & I made it long to include cooking the potatoes & eggs.

1 head iceberg lettuce
1 medium onion
3-4 medium potatoes
6 hard boiled eggs
1 pkg salt pork
vinegar
salt and pepper

Steps:

  • 1. Tear up lettuce into a big pan, make sure pan is big & deep so you have plenty of room to mix everything up. Peel & cut up potatoes & boil 'til tender. While potatoes are cooking prep rest of ingredients.
  • 2. Chop onion up & cube salt pork into small pieces. Fry up salt pork, remove from pan & add to lettuce don't mix yet. Add onions to drippings & cook 'til tender, leave in pan & remove pan from heat.
  • 3. Peel & chop eggs coarsely, add to lettuce. Drain potatoes & mash. (You can make them like regular mashed potatoes with milk & butter as long as they're not to creamy.) Add to lettuce, sprinkle with salt & pepper to taste. Mix lightly.
  • 4. Heat up onions & drippings so they're hot & add vinegar to taste. Pour over lettuce mix & mix well. Serve.
