DUTCH KITCHEN HAM GRAVY FOR VERENIKA, SPAETZLE, EGG NOODLES, ETC
This is not the traditional ham gravy used for verenika, as it is much thicker and doesn't use any heavy cream. I've used it on verenika, spaetzle, egg noodles, mashed potatoes, ham ...

Steps:
- Place the ham in the bottom of a large pot over medium heat for a few minutes to get the flavor and juices out.
- Pour in the buttermilk, evaporated milk, sour cream, and ham base.
- Heat through, but do not bring to a boil.
- Mix the cornstarch (I start with a tablespoon or two) with cold water and stir into the gravy. Keep stirring for a minute or two to keep it from settling at the bottom. Repeat this until it is the consistency you want.

Add 3 tablespoons flour, 1/2 teaspoon salt, and 1/8 teaspoon ground black pepper. Stir. Pour in milk all at once, stirring constantly; cook and stir until thick and bubbly. Serve over the dumplings.
VERENIKA (OR VERENKI) CASSEROLE
This is a fast version of regular verenika, which is individual dumplings filled with a cottage cheese mixture, boiled, then fried, and then served with a ham gravy. But it has the flavor of the original verenika dish. Once a year, regular verenika is served at our MCC sale to raise funds for the Mennonite Central Committee. I got the recipe from our church cookbook and have changed it just a little.
