2 cups water
1/2 cup uncooked brown rice
1/2 cup uncooked long grain rice
1/4 cup sugar
1-1/2 cinnamon sticks (3 inches)
1 tablespoon butter
Dash salt
1 can (12 ounces) evaporated milk
8 caramels
1 tablespoon coarse sugar
1/8 teaspoon kosher salt

Steps:

  • In a large saucepan, combine the first seven ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 30 minutes or until water is absorbed., Stir in milk. Bring to a boil. Reduce heat; simmer, uncovered, for 12-16 minutes or until thick and creamy, stirring occasionally. Add caramels, stirring until melted. Discard cinnamon sticks., Spoon into dessert dishes. In a small bowl, combine coarse sugar and kosher salt; sprinkle over pudding. Serve warm or cold.

1 cup Carolina Arborio Rice
1 cinnamon stick
2 cloves
4 cups whole milk
1 14oz can sweet condensed milk
1 14oz can Evaporated milk
1/2 teaspoon kosher salt
1 tablespoon vanilla extract
1 cup dulce de leche (plus more for drizzling)
Ground cinnamon (for topping)

Steps:

  • In a large Dutch oven, combine the rice, cinnamon stick, cloves and milk. Cook, over medium heat, until it starts to boil. Then, lower the heat to medium-low, cover and cook until the rice is tender, about 20-25 minutes
  • Stir in the sweet condensed milk, evaporated milk and salt. Continue cooking over medium-low heat, stirring often, until thickened, about 20 minutes. As the mixture starts thickening, it's important to stir constantly, to prevent it from sticking to the bottom of the pot.
  • When the rice pudding has thickened, add the vanilla extract and mix to combine. Remove from heat and let it cool slightly.
  • To assemble the individual portions, spoon some dulce de leche in the bottom of glasses, individual dessert bowls or shooters. Add a few spoonfuls of rice pudding. Continue alternating the layers, finishing with a generous layer of rice pudding.
  • Sprinkle with ground cinnamon and, if desired, drizzle some dulce de leche on top of the glasses.
  • Serve warm, at room temperature, or chilled.

Dulce de Leche is a thick caramel made from condensed milk that is enormously popular in Latin and South America. It is commonly available in cans now so you don't have to make it yourself. It adds rich caramel flavor to this simple rice pudding.

1 c long grain white rice
1/2 c evaporated milk
3/4 c water
2 4-inch cinnamon sticks
1 pinch salt
1-3/4 c milk or almond milk
1/4 c golden raisins
1 c nestle la lechera canned dulce de leche
1/2 tsp vanilla extract

Steps:

  • 1. Place rice, water, evaporated milk, cinnamon sticks and a pinch of salt in a small/compact rice cooker and cook using the regular setting.
  • 2. When rice cooker is finished, scoop the rice into a small saucepan, along with the raisins, dulce de leche, and milk or almond milk, stirring to mix.
  • 3. Bring mixture to a bubble and simmer gently over low heat, stirring frequently, for about 25 minutes or until thickened and rice is tender. You can add a tablespoon or two of water or milk if the heat is too high and it starts getting too thick.
  • 4. Remove from heat, fish out the cinnamon sticks and stir in the vanilla. Cool to room temperature then refrigerate until serving time. This thickens up even more as it keeps so adjust the thickness with milk or water just before serving- the rice does this.

2 cinnamon sticks or 1 teaspoon ground cinnamon
1 cup long-grain rice
1 (13 1/2 ounce) can nestle la lechera dulce de leche

Steps:

  • HEAT milk and cinnamon sticks in large saucepan over medium-high heat until it reaches a boil; remove cinnamon sticks. Reduce heat to medium-low; add rice. Cook, stirring frequently, for 15 to 20 minutes. Add dulce de leche; cook, stirring frequently, for 15 to 20 minutes or until rice is tender and sauce is thickened. Garnish with sliced fresh fruit, if desired.
