Whether you plan on making these for Holiday gift giving or as a party appetizer, make more than you need because you cannot eat just one. Just about any kind of nuts can be used in this recipe like walnuts and almonds. All of the liquor cooks out but the alcohol leaves a delicious flavor, so don't be afraid to use it.

2 lb pecan halves
2 c brown sugar, divided
2 tsp ground cinnamon (if using amaretto)
1 c karo syrup or pure maple syrup (dark or light karo)
8 Tbsp bourbon or amaretto
2 tsp vanilla extract (or almond if using amaretto)

Steps:

  • 1. Whisk together maple or Karo syrup and 1 cup of your brown sugar and cinnamon in a large sauce pan. Add the bourbon or Amaretto and the vanilla or almond extract. The alcohol will cook out and just leave the flavor.
  • 2. Bring to a boil over medium heat stirring constantly. Add the pecans or whatever kind of nuts you prefer.
  • 3. Keep stirring over med heat until the pecans are coated in the sugar mixture.
  • 4. Continue to cook, stirring frequently until the liquid becomes thick and starts to solidify on your spoon. It needs to reach a high enough temperature for the sugar mixture to harden when cooled. (at least 240 degrees on candy thermometer)
  • 5. Remove from heat and add the remaining cup of brown sugar to the pan, quickly toss until all the nuts are coated with the sugar. Pour out on a sprayed, foil lined cookie sheet to cool and break apart any big pieces that are clumped together.
  • 6. Once they are cool they will be hard and crunchy. Technically they will keep for a few weeks in a sealed container, but they're usually gone in a few hours.

DRUNKEN CHESTNUTS

24 roasted chestnuts, peeled, recipe follows
2 tablespoons/30 ml sugar
1 cup/250 ml rum

Steps:

  • In a large mixing bowl add the roasted chestnuts, sugar, and rum. Carefully, light the content with a match to flambe the ingredients. Stir continuously to dissolve the sugar. Continue to stir until the rum has reduced to a thick syrup or is caramelized and the flame has died off.
  • To make Roasted Chestnuts: Using a sharp paring knife, make a slit on the rounded side of each chestnut. Place the chestnuts on a perforated pan and roast over a fire for 10 to 15 minutes. Alternatively cook in a preheated oven at 400 degrees F for 15 to 20 minutes. Peel the charred shell and serve.

These are a great finger food for buffets, tailgate parties, or office potlucks. So easy to make and the recipe can be easily doubled or even tripled as needed. I pinched this from Edible Austin, thanks to David Alan and Todd Duplechon, noted Austin chefs. Try them, I think they will become a staple on your appetizer list. Note: The cook time is for toasting the pecans

1 pound(s) chèvre (goat cheese)
1 tablespoon(s) dark chili powder
2 tablespoon(s) agave nectar
1 pinch(es) salt
1 pinch(es) fresh ground black pepper
INGREDIENTS FOR COATING
1/2 pound(s) toasted pecans
2 tablespoon(s) chives
2 tablespoon(s) spanish tarragon
2 tablespoon(s) parsley
2 tablespoon(s) mint

Steps:

  • PREPARING THE COATING: Toast the pecans for 10 minutes in a preheated 300º oven. Remove from oven and set aside to cool*** Place fresh chives, parsley leaves, tarragon and mint leaves in food processor and pulse until finely minced.
  • When pecans are cool, place in clean food processor and pulse until finely chopped.
  • Transfer pecans, chives, parsley, mint and tarragon to a medium mixing bowl and stir with wooden spoon until well blended. Set bowl aside in a convenient place.
  • PREPARING THE CHEESE: Place a large piece of parchment or waxed paper on a baking sheet.
  • In another glass mixing bowl, blend the chèvre, chili powder and agave nectar together; add the salt and pepper and continue to blend with wooden spoon until smooth and creamy.
  • Pinch off about 1/8 to 1/4 cup of cheese and roll between your palms until a nice even ball is formed. Place in pecan mixture and roll around until ball is covered. Gently press the pecan mixture into the cheese mixture and place balls on parchment paper.
  • Continue making balls until you have used all the cheese and pecan mixture.
  • Place baking sheet in fridge for an hour or so to give the cheese time to firm up again. Can be left in fridge overnight without harm.
  • When ready to serve, place on nice decorative platter over a bed of romaine or other greenery.
