GRILLED POUND CAKE WITH DRUNKEN BERRIES AND SYLLABUB

- For the pound cake: Preheat the oven to 325 degrees F. In a large bowl, cream the butter and granulated sugar. Blend until the grains of sugar are no longer visible. Beat in the vanilla. Then add the eggs and flour alternately. Grease and flour 2 loaf pans or a 9- by 9-inch cake pan. Pour the batter into the pan(s) and bake for 1 hour. Then remove and let cool on a wire rack.
- For the syllabub: In a large bowl, combine the heavy cream and granulated sugar. Whip with a whisk or hand mixer until the cream is whipped and fluffy. Slowly fold in the sherry, brandy, vanilla extract and lemon zest. Place the bowl in the refrigerator to set up.
- For the berries: In a large bowl, combine the berries and wine. Add the granulated sugar and mix. Cover and let sit to bring to room temperature. (You can put it in the refrigerator, I just happen to like the berries at room temp. Whatever floats your boat.)
- To serve: Preheat a grill, grill pan or broiler. Cut the pound cake into 1/2-inch thick slices. Stir the brown sugar into the warm melted butter. Brush both sides of the pound cake slices with the melted butter and brown sugar.
- Place the slices on the hot grill or under the broiler. If using a grill, get grill marks on both sides. If using a broiler, get some golden brown color on both sides.
- Cut the pound cake slices on a diagonal or in strips, and arrange in a creative way in the center of a dessert plate. Try and get some height. With a slotted spoon, ladle a good scoop of berries over the pound cake. Add a good dollop of syllabub on top of the berries, and dust with lemon zest and mint.
DRUNKEN BERRIES
Beautiful summer dessert using fresh berries and a splash of pear liqueur. Enjoy a la carte or a la mode. Exceptionally lovely on the Fourth of July. Serve berries by themselves or over vanilla gelato, with a small amount of excess liquid - but it should not be a berry soup.

- Combine sugar with water in a saucepan over medium-high heat, stirring until the sugar has dissolved and the mixture comes to a boil. Reduce heat to low and simmer for 5 minutes; remove from heat and let stand 5 more minutes.
- Stir pear liqueur into the syrup and refrigerate for 1 hour.
- Gently combine strawberries, blueberries, and blackberries in a large bowl and pour syrup over the berries to coat. Allow berries to stand for about 3 hours to absorb flavors. Mixture can stand up to 3 days if desired.

- Combine the red wine, star anise, cinnamon stick, cloves, brown sugar and salt in a medium saucepan and bring to a boil over medium heat. Reduce the heat to medium-low and simmer for 15 minutes. Strain into a medium bowl. Add the berries and stir to combine. Cover and refrigerate until chilled, 2 hours.
- To serve, spoon some of the berries and mulled wine into a coupe glass. Top with a scoop of frozen yogurt and garnish with some freshly grated cinnamon.

- Measure the cassis into the base of a large serving bowl and stir in the strawberries. Pile the raspberries and blueberries on top and scatter over the sugar, but don't mix yet.
- Cover the bowl with cling film. Just before serving gently toss the berries and serve with a big jug of cream.

- Soak berries in liqueur for 20 minutes.
- Melt chocolate with cream and salt over low heat until smooth and combined.
- Remove berries to 2 dessert bowls with slotted spoon. Drown drunken berries in chocolate river, top with mounds of whipped cream and garnish with orange zest and chocolate shavings.

- 1. Wash and split berries, place in bowl and add orange liqueur or extract, cover with plastic wrap and place in fridge for at least 30 minutes.
- 2. In a medium sauce pan add heavy cream and over medium heat bring to a slow boil and let reduce down some, break chocolate bar into pieces and add to cream,add salt and sugar, stir until chocolate is melted. Remove from heat and let cool. Will thicken some as it cools.
- 3. With a slotted spoon place berries in a glass serving bowl( I used my martini glasses) spoon chocolate over and top with whipped cream( store bought is ok, but I made mine with heavy cream and confectioners sugar to sweeten)

Not sure where i got this recipe, but I love it anyway. I like to put some in a pan and heat it, and serve over french vanilla ice cream. You think you have died and gone to heaven. It's a great one to impress dinner guest.

- Place berries(strawberries,blueberries, blackberries, rasberries) whatever you have in jar. Be careful not to crush the fruit. Add the sugar, vanilla bean and brandy to top off. seal jar and gently shake or roll on counter to mix brandy with sugar. Place in window seal for 2 wks then store in cool dark place.

DRUNKEN BERRIES & PANETTONE
Drunken berries with panettone and mascarpone

- Combine the wine, sugar, cinnamon, star anise, vanilla bean and lemon rind and juice in a medium saucepan; stir over medium heat until sugar dissolves. Bring to the boil, then simmer for 20 minutes or until the liquid has reduced by a third and is syrupy.
- Place the berries in a heatproof bowl and pour the syrup over. Cover and refrigerate until cooled to room temperature.
- To serve, preheat grill on high. Slice the panettone into two 4cm-thick slices. Cut each slice into 6 wedges and place the wedges on an oven tray. Toast for 1-2 minutes each side or until golden brown.
- Place the panettone in shallow bowls. Spoon over the berries and the syrup and top with a good dollop of the mascarpone.
