DILL PICKLE-RANCH PASTA SALAD

Your summer cookout will never be the same after you make this pasta that packs a dill pickle punch and comes together in three simple steps.

2 boxes Betty Crocker™ Suddenly Pasta Salad™ ranch & bacon salad mix
1 cup mayonnaise
1/2 cup sour cream
1/4 teaspoon garlic salt
8 oz Colby-Monterey Jack cheese, cubed
2 cups sliced dill pickles
1/2 cup dill pickle juice
4 tablespoons chopped fresh dill weed

Steps:

  • Boil pasta (from salad boxes) as directed on boxes; drain, and place in large bowl.
  • In small bowl, mix mayonnaise, sour cream and 1 of the seasoning packets (from salad box). Dis-card or save other packet for another use. Mix until well combined. Add to large bowl of pasta.
  • Stir in remaining ingredients. Cover and refrigerate 2 hours before serving.

1 (10-ounce) sack chopped romaine and mixed greens
4 radishes, sliced
3 tablespoons vinegar
1 teaspoon sugar
1 teaspoon sweet paprika
1 tablespoon grated white onion and juice
1/3 cup extra-virgin olive oil
Salt and pepper
2 tablespoons sesame seeds, optional

Steps:

  • Mix greens and radishes. In a small bowl, combine the vinegar, sugar, paprika and onions juice. Whisk in extra-virgin olive oil. Season the dressing with salt and pepper, to taste. Dress and toss salad then sprinkle with sesame seeds (optional) and serve.

6 ounces (about 1/3 pound) double cream blue veined cheese, softened to room temperature
1/2 cup heavy cream
1/2 cup sour cream
Salt and pepper
2 pinches ground cayenne pepper

Steps:

  • Mash softened cheese with fork in a bowl. Whisk in the cream and sour cream into cheese, the consistency should be smooth with an occasional small bit of blue. Season with salt, pepper, and cayenne pepper.

A delicious, light, spicy salad, excellent for summer cooking! A perfect side to any grilled Asian-style dishes. Wasabi paste may be used instead of the powder if it is more convenient. If you discover you have made the dressing too spicy, adjust by adding more mayonnaise.

½ cup uncooked white rice
1 cup water
1 small head iceberg lettuce, shredded
1 English cucumber, cut into 1 inch strips
2 avocados - peeled, pitted, and cubed
2 cups shredded imitation crabmeat
2 teaspoons wasabi powder, or to taste
1 tablespoon mayonnaise
1 tablespoon soy sauce
¼ cup rice wine vinegar
1 tablespoon white sugar
1 teaspoon sesame oil

Steps:

  • Place rice and water in a small saucepan, and bring to a boil. Cover, reduce heat to low, and simmer for 20 minutes, or until rice is tender. Set aside to cool.
  • In a large serving bowl, toss together the lettuce, cucumber, avocado and imitation crabmeat. Stir in cooled rice. In a small bowl, stir together the wasabi powder, mayonnaise, soy sauce, rice vinegar, sugar and sesame oil. Toss salad with dressing (recommended), or serve with dressing on the side.
