My 1st husband's aunt gave me this recipe close to 40 years ago, and I have been making it for potlucks and salad luncheons ever since - everyone loves it and wants the recipe once they try it. Even if you don't like all the ingredients, you can substitute if you'd like, too, for a different taste sensation. I call it my 4 ingredient recipe.

1 can(s) cream of mushroom soup
2 package(s) (8 oz) softened cream cheese
3 package(s) buddig or store brand, thinly sliced beef, chopped
4 - green onions, chopped (tops & bottoms)

Steps:

  • Remove cream cheese packages from refrigerator and warm to room temperature about an hour ahead, so it is soft and easier to stir in other ingredients.
  • Using 1-1/2 to 2 quart bowl, open can of mushroom soup and scrape can to get all soup out and into bowl.
  • Stir-in softened cream cheese. Make sure it is well blended.
  • Meanwhile, cut thinly sliced beef into small, approximately 1/4-inch squares, and add to cream cheese and mushroom soup mixture.
  • Wash and trim green onions to get rid of any dirt or bad spots, chop the onions, tops and all and add to cream cheese, soup and beef mixture.
  • Stir well until the consistency of a spread.
  • Place in refrigerator overnight so flavors mingle.
  • Remove from frig, place in serving dish and serve with various accoutrements: Use with carrots, celery, on crackers or by itself, can even be added to mashed potatoes for a different flavor as well. Can also be used as a spread for bread and as a sandwich (I do).
  • *Ingredients can be doubled for larger crowd, and lasts, if covered and refrigerated and you can leave it alone, for a week afterward. If you don't like cream of mushroom soup, try cream of celery.

This is an easy cold dip that my husband begs me to make every holiday. I originally got the recipe from my mother-in-law, and I substituted chives for the green onion since I am allergic to onions. They can be added back into the recipe if desired. I serve this with celery sticks, baby carrots, sliced peppers, and crackers.

2 (10 ounce) jars sliced dried beef
1 bunch green onions, chopped
2 (8 ounce) packages cream cheese, softened
1 (16 ounce) container sour cream
1 (1 ounce) package ranch dressing mix

Steps:

  • Rinse dried beef in warm water, pat dry with paper towels, and slice into smaller pieces.
  • Mix beef, green onions, cream cheese, sour cream, and ranch dressing mix in a bowl.
  • Cover bowl with plastic wrap and refrigerate 8 hours to overnight.

This is simple but filling and really tasty! I found this in the cookbook that came with my very first blender, 30 some years ago. *Dried beef is also known as chipped beef.

1/2 cup shredded dried beef
1 tsp prepared horseradish (not horseradish sauce)

I've been making this for years. The recipe came from one of the military wives that we were stationed with well over 40 years ago. I'm not fond of the Rye Krisp crackers -- unless I have this spread -- then I could eat the whole box! Note that the prep time does not include the 6-8 hours this spread should sit in the fridge before using.

1 teaspoon dried onion flakes
2 teaspoons sherry wine
1 (8 ounce) package cream cheese, softened
1/4 cup chopped stuffed green olive
2 tablespoons mayonnaise
1 (3 ounce) jar dried beef, chopped
rye crisp (crackers)

Steps:

  • Soak the minced onion in the sherry.
  • Meanwhile, stir together the cream cheese, green olives, mayonnaise, and chopped dried beef.
  • Add the onions and sherry mixture. Stir well.
  • Serve on Rye Krisp crackers.
  • Best of made 6 to 8 hours ahead of time.

1 package (8 ounces) cream cheese, softened
1 cup sour cream
1 package (2-1/2 ounces) thinly sliced dried beef, finely chopped

4-1/2 teaspoons finely chopped onion
1/2 teaspoon garlic powder
Pepper to taste
Assorted fresh vegetables or crackers

Steps:

1 (8 ounce) package cream cheese, softened
2 tablespoons milk
1/4 cup green pepper, finely chopped
4 green onions, chopped,tops included
1 teaspoon garlic powder
1/4 teaspoon pepper
1/4 teaspoon dill weed
1/2 cup sour cream
1/2 cup pecans, coarsely chopped
1 (4 ounce) package dried beef, chopped

Steps:

  • Mix all but pecans, and spread in an 8" pie plate.
  • Sprinkle pecans on top.
  • Bake 20 minutes at 350 degrees.
  • Serve hot with crackers.
  • This can be made ahead and refrigerated until baked.
