In June of 2020 we were still dealing with the Coronavirus ravaging our country and making us pretty much stir-crazy. Luckily in California the lockdown rules were loosening, and my husband and I were able to host some good friends at our home for the weekend. The weather was heating up and while we were spending the day by the pool (pretending we were at an exotic resort) my friend asked if I could make her a foofie drink. I went inside, took an inventory of my ingredients, and the COVID Creamsicle® cocktail was created.

1 fluid ounce good-quality vodka
½ cup ice as needed
1 scoop orange sherbet
1 scoop lemon sorbet
1 fluid ounce lemon-flavored sparkling water (such as Sanpellegrino®)
1 fluid ounce orange-flavored carbonated water (such as Perrier®)
1 fluid ounce Prosecco
1 slice lemon

Steps:

  • Pour vodka into a chilled single rocks glass or stemless wine glass and add ice. Add orange sherbet and lemon sorbet. Top with lemon-flavored sparkling water and orange-flavored carbonated water. Use a long-handled or tall drink spoon to quickly stir together until completely blended.
  • Top with Prosecco and garnish with lemon slice.

This is a great orange flavored cookie made from a jar of mix that makes a great gift. Use a jar with a tight fitting lid (the kind with a rubber ring and clamp-type lid is good). Attach the instructions on a recipe card.

3/4 c sugar
1/2 c orange instant drink mix (tang)
1 1/2 c vanilla or white chocolate chips
1 3/4 c all purpose flour
1/2 tsp baking soda
1/2 tsp baking powder
FOR MIXING:
1 jar(s) dreamsicle cookie mix
1/2 c butter, softened
1 egg, slightly beaten
1 tsp vanilla extract

Steps:

  • 1. Mix flour, baking soda and baking powder together thoroughly.
  • 2. Carefully layer ingredients in a quart jar, starting with sugar, then Tang, then chips and flour mixture last. Seal jar and attach instructions for baking.
  • 3. On the tag, print the FOR MIXING ingredients and the following instructions: Mix all ingredients until completely blended. Roll dough into walnut sized balls. Place 2 inches apart on lightly greased cookie sheet. Cookies will spread. Bake at 375F. for 12 to 14 minutes or until edges are lightly browned. Cool 5 minutes on cookie sheet and remove to wire rack to cool completely.

1/4 cup sugar
red food coloring
yellow food coloring
1/3 cup powdered coffee creamer
1/2 cup dry milk
1/4 cup powdered sugar
1/3 cup orange drink mix
1 cup marshmallows (orange and white)

Steps:

  • Mix the sugar and the food coloring until its the shade of orange you desire, a few drops should work fine.
  • Place the orange and white marshmallows in a ziplock bag (small one to fit inside the top of the jar).
  • Layer in a pint size jar in the following order:.
  • orange colored sugar.
  • 1/2 the milk mixture.
  • orange drink mix.
  • remaining milk mixture.
  • mini marshmallows.
  • There are 3 recipes you can attach to the jar.
  • Dreamsicle Warmer:.
  • Remove bag of marshmallows from jar and set aside.
  • Empty mix into a large bowl and mix together.
  • Place mix back into jar or other container.
  • Place 3T mix into a cup and add 1 C of boiling water.
  • Stir until mixture is dissolved- top with marshmallows.
  • Dreamsicle Cooler:.
  • Place in blender.
  • 1/3 C drink mix.
  • 8 ice cubes.
  • 1 C milk.
  • Blend until ice is crushed.
  • Dreamsicle Shake:.
  • Place 1 scoop of soft vanilla ice cream and 1 C milk into a quart jar.
  • Add 1/3 C drink mix.
  • Place lid on the jar and shake, shake, shake!

Cookie mix in a quart jar for gift giving. Layer ingredients in a 1 quart wide mouth jar in order given. Press each layer firmly before adding next ingredient. Attach a card to jar with the recipe directions on it.

3/4 cup sugar
1 1/2 cups vanilla chips
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1 3/4 cups flour
1/2-1 cup butter or 1/2-1 cup margarine, very soft
1 egg, slightly beaten
1 teaspoon vanilla (optional)

Steps:

  • Mix together flour, baking soda and baking powder.
  • Empty jar of cookie mix into large mixing bowl.
  • Use your hands to thoroughly blend mix.
  • Mix until completely blended, finish mixing with your hands.
  • Shape into balls the size of walnuts.
  • Place 2" apart on sprayed bake sheet.
  • Bake at 375 for 12-14 minutes until tops are very lightly browned.
  • Cool 5 minutes on bake sheet then move to rack.
