5 lbs potatoes, peeled and cut into quartered
6 garlic cloves, slightly crushed
4 ounces cream cheese
4 ounces butter
1/2 cup milk, heated
salt
1 teaspoon pepper
1 bunch scallion, 1/3 cup sliced
1 bunch fresh parsley, 1/2 cup minced

Steps:

  • Boil potatoes and garlic in a large pot with salted water till fork tender about 20 minutes.
  • Drain and return to pan; add butter, cream cheese and milk mash with a potato masher until smooth.
  • Stir in scallions and parsley.
  • season to taste with salt and pepper .
  • Use a little more milk if you prefer thinner mashed potatoes.

5 pounds potatoes, peeled and quartered
¼ cup butter
6 cloves garlic, minced
2 cups 2% milk
1 cup freshly grated Parmesan cheese
¼ cup chopped fresh parsley
1 teaspoon sea salt
½ teaspoon ground black pepper

Steps:

  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, 20 to 25 minutes.
  • While potatoes are cooking, melt butter over medium-low heat in a small saucepan. Add garlic and saute until soft, about 5 minutes.
  • Drain potatoes and return to the pot. Add garlic-butter mixture, milk, Parmesan cheese, parsley, sea salt, and pepper; mash until smooth.

2 1/2 lbs red potatoes
2 1/2 lbs idaho potatoes
1 1/4 cups butter
1 1/4 cups creamy pureed horseradish
1 1/2 cups heavy cream
2 1/2 teaspoons kosher salt
1 1/2 teaspoons fresh black pepper, ground

Steps:

  • Wash potatoes well, leaving the skins on.
  • Cut the potatoes in half lengthwise. Place in a kettle and fill with enough water to cover potatoes.
  • Bring to a boil, reduce heat and simmer until potatoes are very tender.
  • Drain well and add butter while potatoes are hot. Begin to hand mash.
  • Add all remaining ingredients and mash well leaving them just slightly lumpy.
  • Makes about 10-12 cups or 6 to 8 servings.

1 Tbsp. oil
2 lb. Yukon Gold potatoes (about 6), peeled, cut into 2-inch cubes
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, cubed, softened
1/4 cup tightly packed fresh parsley, chopped
2 Tbsp. milk
1 tsp. chicken bouillon powder

Steps:

  • Heat oven to 375°F.
  • Cut 1/4-inch-thick slice off top of garlic head to expose tops of cloves; place garlic, cut side up, on sheet of foil. Drizzle with oil; wrap in foil. Place in shallow pan.
  • Roast 45 min. or until garlic is tender. Cool slightly.
  • Meanwhile, cook potatoes in large saucepan of boiling water 20 min. or until tender; drain. Return potatoes to pan.
  • Squeeze garlic cloves to remove roasted garlic. Add to potatoes along with remaining ingredients.
  • Beat with mixer until desired consistency.

4 lbs small red potatoes
4 tablespoons butter
1 (5/8 ounce) package Italian salad dressing mix
1/2-1 cup milk (I use skim milk)
1 -1 1/2 cup mozzarella cheese
salt & pepper
3 lbs large red potatoes
8 tablespoons butter
1.5 (5/8 ounce) packages Italian salad dressing mix
1 cup milk (I use skim milk)
2 -2 1/2 cups mozzarella cheese

Steps:

  • If you happen to use larger potatoes for the double batch, halve the large potatoes because the small ones for the regualr batch can be left whole.
  • Place all the potatoes in a deep pot and cover with water.
  • Place a lid on the potatoes and bring it to a boil.
  • Once it starts to boil, uncover and cook until tender (about twelve to fifteen minutes).
  • Then drain potatoes and put them back into the hot pot.
  • Add the butter, the seasoning package, milk and cheese. It really depends on how creamy and cheesy you like your potatoes when deciding how much you want to add of the milk and cheese.
  • Smash the potatoes until they are the desired texture.
  • Add the amount of salt and pepper to taste you like and enjoy.

Steps:

  • In a large pot, combine potatoes and lightly salted water to cover.

1 1/2 lbs red potatoes, unpeeled and quartered into 1 1/2" pieces
1 teaspoon salt
3 slices bacon, cut into 1" pieces
1 -2 tablespoon butter
2 tablespoons chopped fresh parsley
1 -2 clove minced garlic
salt and pepper

Steps:

  • Put the potatoes and salt in a medium saucepan and cover with cold water.
  • Bring to a boil over high heat and simmer for 1 minute, then drain and pat dry.
  • In skillet, saute bacon over medium heat and cook until crispy.
  • Remove bacon with a slotted spoon and set aside on paper towels.
  • Add butter to bacon fat and increase heat to medium.
  • Add potatoes to pan so that the cut sides get nice and brown.
  • Cook, turning only as needed until the potatoes are golden brown, about 25 minutes.
  • Stir in parsley, garlic and bacon and stir until lightly browned.
  • Season with salt and pepper to taste.

1 1/2 teaspoons butter or 1 1/2 teaspoons olive oil
1/4 teaspoon dried sage

Steps:

  • Peel potatoes and cut in half. Place in large stovetop pot with 4 whole garlic cloves. Cover with cold water and bring to a boil. Reduce heat to a gentle boil and cook until potatoes are tender.

IRISH MASHED POTATOES

In Ireland, this dish is known as Champ. It has many variations -- you might try it with cabbage, soft garlic, leeks, parsley, chives, peas or even dulse -- but it is always served with melted butter. The best fun is dipping your potatoes into the melted butter.

2 large onions, finely sliced
100 g butter
1 tablespoon vegetable oil
8 large potatoes (Irish or King Edward are best)
salt & freshly ground black pepper
100 g spring onions
225 ml milk

Steps:

  • Heat 1/2 the butter and one tablespoon of the cooking oil in a frying pan over a high heat.
  • When the butter starts to bubble, add in the onions and cook, stirring constantly, for five minutes or until the onions start to wilt.
  • Turn the heat down very low and continue to cook, stirring occasionally, until the onions are evenly browned and wilted, but not crisp.
  • In Ireland, potatoes are always boiled in their skins, drained and then left in the hot pan for the skins to dry and crack before they are peeled and mashed.
  • If you like, though, you can also peel the potatoes beforehand, wash the starch off, then boil in salted water until tender.
  • Drain and mash.
  • Meanwhile, trim and slice the spring onions, including all the dark green bits.
  • Place in a pan with the milk and simmer until tender.
  • Tip the milk and onion and 25g of butter into the mash and beat with a wooden spoon until light and fluffy.
  • Season with salt and pepper.
  • Melt the remaining butter.
  • Serve the mash in a mound on each plate, making a well in the centre of each mound to fill with the remaining melted butter.
  • Top with the onions.
  • Serve immediately and encourage your diners to dip their spoonfuls of mashed potato into the pools of butter.

3/4 cup chopped fresh flat-leaf parsley
1/2 cup olive oil plus 3 tablespoons olive oil

5 lbs yukon gold potatoes (or other yellow fleshed potatoes)
1 1/2 cups milk
1/2 cup unsalted butter, cut into 1/2-inch pieces
1 1/4 teaspoons salt
3/4 teaspoon vreshly ground black pepper

Steps:

  • Make oil:.
  • Purée chives and parsley with oil and salt in a blender until smooth. Pour herb oil through a fine strainer into a glass cup, pressing on and discarding solids.
  • Prepare potatoes:.
  • Peel and quarter potatoes. Cover potatoes with salted cold water by 1 inch in a 5-quart heavy pot, then simmer, uncovered, until very tender, about 25 minutes.
  • While potatoes are simmering, bring milk, butter, salt, and pepper to a simmer, stirring until butter is melted.
  • Drain potatoes in a colander and return to pot. Add the hot milk mixture and mash with a potato masher until almost smooth, then stir in 4 tablespoons of the herb oil.
  • If desired, serve potatoes drizzled with some of remaining oil. Enjoy!

  • Oil can be made 4 days ahead and covered and chilled. Bring to room temperature before using.
