Many people cringe when they hear the term "meat loaf", but it's one of my favorite foods that Mom made while I was growing up. I love the ketchup topping, and the loaf freezes well. -Daria Burcar Rochester, Michigan

Number Of Ingredients 10

2 eggs, beaten
1/4 cup milk
2 cups soft bread crumbs
3/4 cup finely chopped onion
1/3 cup finely chopped green pepper
2 tablespoons prepared horseradish
1-1/2 teaspoons salt
1 teaspoon ground mustard
2 pounds ground beef
1/4 cup ketchup

Steps:

  • In a bowl, combine the first eight ingredients. Crumble beef over mixture and mix well. Press into a greased 9x5-in. loaf pan. , Bake at 350° for 1 hour. Spread with ketchup; bake 15-20 minutes longer or until a thermometer reads 160° and meat is no longer pink. Let stand for 10 minutes before slicing. Meat loaf may be frozen for up to 3 months.

My BF gave me this recipe and I think it makes just about the best tasting meat loaf I have ever put in my mouth! I bought one of those 'As seen on TV' meatloaf pan sets and it really works great. The loaf comes out perfect every time.

Number Of Ingredients 9

2 - 2-1/2 lb hamburger meat (i use the 93% lean kind)
1 can(s) (15 ounce size) tomatoe sauce
1 large egg
1/2 pkg saltine crackers, crushed
1/2 c finely diced bell pepper
1/2 c finely diced sweet onion
1/4 c tomato ketchup
2 rings bell pepper
2 rings sweet onion

Steps:

  • 1. Preheat oven to 375 degrees.
  • 2. Mix first 6 ingredients together in a large bowl.
  • 3. Form into a loaf shape in a casserole or loaf pan. Cover the entire top of the loaf with the tomato ketchup.
  • 4. Place the rings of bell pepper and onion on top of the loaf.
  • 5. Make an aluminum foil 'bubble' to go over the loaf. The foil must not touch the loaf.
  • 6. Bake in preheated oven for 80 to 90 minutes. During the last 10 minutes of cooking, remove the foil bubble from the top.
