This is my favorite soup from a restaurant in Waxahachie, Texas called The Dove's Nest. The recipe comes from the restaurant's cookbook.

2 tablespoons olive oil
1 medium onion, chopped
3 cloves garlic, minced
2 1/2 cups chopped tomatoes or 2 (10 ounce) cans tomatoes and green chilies, chopped
6 tomatillos, chopped
1 medium jalapeno, seeded,minced
2 cups chicken stock
1 (7 ounce) can chopped green chilies
2 cups chopped cooked chicken
1/2 teaspoon oregano
1/2 teaspoon cumin
1/4 cup chopped cilantro
2 (19 ounce) cans cannellini or 2 (19 ounce) cans great northern beans
1 tablespoon fresh lime juice
salt and pepper
sour cream
shredded monterey jack cheese
fried corn tortilla strips

Steps:

  • Heat the olive oil in a large stockpot over medium-high heat.
  • Add the onion.
  • Saute for 3 to 5 minutes or until softened.
  • Add the garlic.
  • Cook for 1 to 2 minutes longer.
  • Do not brown.
  • Add the tomatoes, tomatillos and jalapeno.
  • Cook until the tomatillos are tender, stirring occasionally.
  • Add the chicken stock, green chilies, chicken, oregano, cumin, cilantro, beans and lime juice.
  • Cook until heated through, stirring frequently.
  • Season with salt and pepper.
  • Ladle the chili into serving bowls.
  • Serve garnished with a dollop of sour cream, shredded cheese and fried tortilla strips.

1/2 cup vegetable oil
1/2 cup chopped onion
1/4 cup white wine vinegar
1/4 cup honey
2 teaspoons Tabasco sauce
salt and pepper
8 ounces smoked turkey, cubed
2/3 cup crumbled blue cheese
2/3 cup coarsely chopped pecans, toasted
1 cup red seedless grapes

Steps:

  • To make dressing, combine the oil, onion, wine vinegar, honey and Tabasco sauce in a blender container.
  • Process until smooth.
  • Season with salt and pepper.
  • To make salad, combine turkey, bleu cheese, pecans and grapes in a salad bowl and mix gently.
  • Add the dressing, tossing to coat.

My family (elderly parents included) were too busy eating and "mmmm-ing" and "oooo-ing" to initially comment. When they finally finished, each of them declared that this was the best salad they had ever eaten. Truly a texture delight, it is also a perfect blend of sweet, sour, crunchy, smooth and all around delicious. The dressing is sweet, so you don't want to "over dress" your salad. You may change this salad by exchanging mandarin oranges, blueberries, craisins, or other fruit of choice for the strawberries, Although I prefer almonds or pecans, you can use walnuts or sunflower seeds. And substituting good goat cheese for the bleu cheese is also another variation. No substitution has ever been bad in my estimation.

1 lb fresh spinach, rinsed and dried well
1 quart strawberry, cleaned, hulled and sliced
1/3 cup slivered almonds or 1/3 cup pecans, toasted
1/4 cup blue cheese, crumbled
1/2 cup olive oil
1/4 cup balsamic vinegar
1/2 teaspoon Worcestershire sauce
1 tablespoon shallot, very finely minced
1/2 cup white sugar
1 teaspoon Dijon mustard

Steps:

  • In small bowl mix together olive oil, vinegar, Worcestershire sauce, shallot and sugar.
  • Whisk in teaspoon of Dijon mustard until dressing is smooth. Allow to sit for at least 30 minutes before using.
  • In large bowl, combine spinach, strawberries, nuts, and cheese.
  • If you are sure you will be using all of the spinach salad, dress salad lightly immediately before serving. If you will have some salad left over (which rarely happens in my family) allow each individual to dress their own salad. It is a sweet dressing so a little goes a long way.

4 cups red leaf lettuce, torn into bite-size pieces
6 ounces smoked turkey, sliced
1/2 Red Delicious apple, sliced
3 ounces blue cheese, crumbled
3 tablespoons pecan halves
Cider Vinaigrette (recipe included)
Cider Vinaigrette
1/4 cup vegetable oil
3 tablespoons cider vinegar
1 tablespoon minced onion
1 teaspoon Dijon mustard
1/2 teaspoon sugar

Steps:

  • Combine first 5 ingredients in large bowl. Add enough dressing to season to taste. Season generously with pepper. Toss well and serve.
  • Whisk all ingredients in small bowl to blend. Season to taste with salt.
  • Makes about 1/2 cup.

6 large nectarines, halved and pitted
canola oil
1/2 cup crumbled blue cheese
1/4 cup honey
fresh coarse ground black pepper

Steps:

  • Heat grill to high.
  • Brush the cut sides of nectarines with oil.
  • Grill cut side down until caramelized and brown, about 2 minutes.
  • Turn nectarines over and grill for 1 or 2 minutes more, until the flesh is almost soft.
  • Place the nectarines cut side up on a platter and divide the cheese among the cavities.
  • Drizzled with honey and grind fresh pepper over the top.
  • Serve immediately.
  • Yum!

12 cups cubed cooked turkey breast
2 pounds green grapes, halved
5-1/4 cups diced celery
1 to 1-1/2 cups chopped pecans, toasted
3 green onions, sliced
2 cups mayonnaise
1-1/2 cups chicken broth
3/4 cup vinaigrette
1 tablespoon prepared mustard

Steps:

  • In several large bowls, combine the turkey, grapes, celery, pecans and onions. In a large bowl, whisk the mayonnaise, broth, vinaigrette and mustard until smooth. Pour over turkey mixture and toss to coat. , Cover and chill for at least 4 hours before serving. Refrigerate leftovers.

  • break walnuts into pieces, add to grapes.

  • wisk in olive oil and pour over grape mixture, stirring to coat.
