1/4 cup butter, cubed
1 package (14.4 ounces) frozen pearl onions, thawed and drained
2 cups heavy whipping cream
1/2 cup grated Parmesan cheese
1/2 teaspoon salt
1/4 teaspoon pepper
10 ounces fresh baby spinach (about 13 cups)

Steps:

  • In a large cast-iron or other heavy skillet, heat butter over medium heat. Add pearl onions; cook and stir until tender, 6-8 minutes. Stir in cream. Bring to a boil; cook until liquid is reduced by half, 6-8 minutes., Stir in cheese, salt and pepper. Add spinach; cook, covered, until spinach is wilted, 3-5 minutes, stirring occasionally.

4 packages (10 ounces each) fresh spinach, trimmed
2 tablespoons butter
2 medium onions, finely chopped
3 tablespoons all-purpose flour
1 teaspoon salt
1/2 teaspoon white pepper
2 cups whole milk
1/2 cup heavy whipping cream
1/2 cup grated Parmesan cheese

Steps:

  • In a Dutch oven, place steamer basket over 1 in. of water. Place a fourth of the spinach in basket. Bring water to a boil. Reduce heat to maintain a low boil; steam, covered, 3-4 minutes or just until spinach is wilted. Transfer to a colander; drain. Repeat with remaining spinach. , When spinach is cool enough to handle, squeeze dry. Coarsely chop spinach., In clean Dutch oven, heat butter over medium-high heat. Add onions; cook and stir until tender. Stir in flour, salt and white pepper until blended; gradually whisk in milk and cream. Bring to a boil, stirring constantly; cook and stir 1-2 minutes or until thickened. Stir in cheese and spinach; heat through.

Getting more spinach into our diet is something I've been working on lately, but not everyone likes just plain spinach. This recipe adds spinach to fried onions and mushrooms. The balsamic vinegar is wonderful but substitute a splash of lemon juice if you like. Easily doubled.

1 teaspoon olive oil
1 medium onion, sliced thinly lengthwise (any kind of onion you like)
4 ounces mushrooms, sliced
1 garlic clove, minced
2 cups spinach leaves, loosely packed
1/4-1/2 teaspoon balsamic vinegar, to taste
salt and pepper, to taste

Steps:

  • Preheat a medium saute pan on medium heat.
  • Add olive oil.
  • Add onions and mushrooms, stirring for 5-10 minutes, until golden brown, adding garlic halfway through.
  • Add spinach and stir a minute or two, until spinach is just wilted.
  • Remove from heat and add balsamic vinegar, salt and pepper to taste.

My mother has been making this for years. She found the recipe in one of her church cookbooks from Hawaii. I really like this recipe because not only does it taste great, but using only three ingredients it is easy and can be ready quickly. We always double the recipe to use a pint of sour cream and the whole packet of the Lipton mix.

2 (10 ounce) boxes frozen chopped spinach
0.5 (1 1/4 ounce) envelope Lipton Onion Soup Mix
1 cup sour cream

Steps:

  • Put frozen spinach in a medium size sauce pan.
  • Turn heat to medium and heat spinach until it thaws completely.
  • Add soup mix and sour cream.
  • Stir until heated completely.
