This was a hit at our teachers luncheon and I ended up buying the cookbook it's from: Better Homes and Garden Easy Everyday Vegetarian.

8 corn tortillas
1 1/2 cups shredded monterey jack cheese
1 cup frozen corn
4 green onions, sliced
2 eggs
1 cup buttermilk
1 (4 ounce) can diced green chilies

Steps:

  • Grease a 2-quart square baking dish.
  • Tear tortillas into bite-size pieces (pizza cutter works well).
  • Arrange HALF the tortillas in the baking dish.
  • Top with HALF of the cheese, HALF of the corn, HALF of the green onions.
  • Repeat layers with remaining tortillas, cheese, corn and onions.
  • Stir together eggs buttermilk, and green chilies.
  • Gently pour over tortilla mixture.
  • Bake uncovered in a 325 degree oven for about 30 minutes or until a knife inserted near the center comes out clean.
  • Serve warm with salsa or picante sauce.

For almost 30 years, I've been preparing this zippy side dish for all sorts of gatherings. In fact, whenever I'm invited to an event that involves food, it's "understood" that I'll bring this casserole. Plus, it's a great way to use up hard-cooked eggs. -Patricia Friend, Milledgeville, Georgia

1 large onion, chopped
2 medium green peppers, chopped
1/2 cup butter, cubed
1/4 cup all-purpose flour
2 cups frozen corn
2 cups cooked long grain rice
1 can (14-1/2 ounces) diced tomatoes, undrained
4 hard-boiled large eggs, chopped
2-1/2 cups shredded sharp cheddar cheese, divided
2 tablespoons Worcestershire sauce
2 to 3 teaspoons hot pepper sauce
2 teaspoons salt
1 teaspoon pepper

Steps:

  • In a large skillet, saute onion and peppers in butter until tender. Stir in flour. Remove from the heat; add remaining ingredients except for 1/2 cup cheese. , Pour into a greased 2-1/2-qt. baking dish. Bake, uncovered, at 350° for 45 minutes. Top with remaining cheese; let stand 5 minutes.

1 pound ground beef
1 medium onion, chopped
3 celery rib, chopped
1 can (16 ounces) kidney beans, rinsed and drained
1 can (14-3/4 ounces) cream-style corn
1 can (8 ounces) tomato sauce
4-1/2 teaspoons Worcestershire sauce
1 teaspoon chili powder
1 garlic clove, minced
6 corn tortillas (6 inches)
1/2 cup shredded cheddar cheese

Steps:

  • In a large skillet, cook the beef, onion and celery over medium heat until meat is no longer pink and vegetables are tender; drain. Stir in the beans, corn, tomato sauce, Worcestershire sauce, chili powder and garlic; cook for 3 minutes., Place one tortilla in a greased round 2-qt. baking dish; top with 1 cup meat mixture. Repeat layers fives times. Sprinkle with cheese. Bake, uncovered, at 350° for 25-30 minutes or until bubbly.

Easy and perfect dish to take to a potluck! This is a perfect vegetarian dish!

2 eggs, beaten
1 c buttermilk
4 oz diced green chilies

Steps:

  • 1. Tear four tortillas into bite-sized pieces. Arrange in greased 2 quart baking dish. Top with half the cheese, half the corn, and half the green onions. Repeat the layers.
  • 2. In a mixing bowl, stir together eggs, buttermilk, and green chilies. Gently pour over tortilla mixture.
  • 3. Bake at 325 degrees for 30 minutes, or until knife inserted in center comes out clean. ENJOY!
