Number Of Ingredients 12

1 1/4 cups all-purpose flour (see Cook's Note)
1/2 cup unsweetened cocoa powder
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon fine salt
1 cup bittersweet chocolate chips
3/4 cup milk
1/2 cup packed light brown sugar
4 tablespoons unsalted butter, melted
1 tablespoon vegetable oil
2 teaspoons pure vanilla extract
2 large eggs

Steps:

  • Preheat the oven to 350 degrees F. Line 12 muffin cups with paper liners.
  • Whisk together the flour, cocoa powder, baking powder, baking soda and salt in a large bowl. Stir in the chocolate chips. In a medium bowl, whisk together the milk, brown sugar, butter, oil, vanilla and eggs until smooth.
  • Quickly fold the milk mixture into the flour mixture with a rubber spatula. Divide the batter evenly among the prepared muffin cups. Bake until a toothpick inserted in the center comes out clean, about 25 minutes. Transfer the muffins from the pan to a wire rack to cool.

½ cup almond butter
1 ripe banana, mashed
¼ cup unsweetened cocoa powder
2 tablespoons ground flax seeds
1 tablespoon honey
1 teaspoon vanilla extract
½ teaspoon baking soda
1 cup finely grated zucchini, excess moisture squeezed out
¼ cup semisweet chocolate chips
¼ cup bittersweet chocolate chips, or to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Line muffin cups with aluminum foil liners.
  • Mix almond butter, banana, cocoa powder, ground flax seeds, honey, vanilla extract, and baking soda together in a bowl until batter is well blended; fold in zucchini and semisweet chocolate chips. Scoop batter into the prepared muffin cups. Top each with bittersweet chocolate chips.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 25 minutes. Place muffins on a wire rack to cool.

1 (18 ounce) package fudge cake mix
1 (3 ounce) package chocolate instant pudding
3/4 cup water
4 eggs, beaten
1/2 cup vegetable oil
1 cup mini chocolate chip (Frozen keep them in your freezer.)
1/4 teaspoon almond extract

Steps:

  • Mix cake mix, pudding, water, eggs, oil, and almond extract until smooth.
  • Stir in chocolate chips last, blend through.
  • Fill muffin cups 3/4 full and bake in preheated oven at 350 degrees between 25-35 minutes until done, but do not over cook.
  • This will depend on the size of the muffin cups used.
  • This recipe will make 1 jumbo pan (6) and 1 regular size (6) or 12 to 18 regular size muffins.
