This is a really quick and easy recipe to whip up. Tip: if you have too many ripe bananas to eat, peel and freeze them. That way you'll always have them on hand to make this recipe (or any recipe that calls for mashed banana).

2 cups flour
1 cup sugar
2 tablespoons unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup milk
1/2 cup mashed ripe banana
1/3 cup butter, melted
1 tablespoon lemon juice
1 teaspoon vanilla
3/4 cup mini chocolate chips or 3/4 cup regular chocolate chips

Steps:

  • Mix together flour, sugar, cocoa, baking soda and salt.
  • Make a well in the centre of the dry ingredients.
  • Add milk, banana, butter, lemon juice and vanilla.
  • Beat with a fork till well blended, about 2 minutes.
  • Stir in chocolate chips.
  • Pour into greased 9-inch square cake pan.
  • Bake in preheated 350F oven 45-50 minutes or until toothpick inserted in centre of cake comes out clean.
  • Cool completely and cut into squares.

1 ½ cups all-purpose flour
⅔ cup white sugar
1 ½ teaspoons baking powder
¼ teaspoon salt
1 cup mashed bananas
1 egg
½ cup unsalted butter, melted
¼ cup milk
¾ cup semisweet chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
  • In a large bowl, mix flour, sugar, baking powder and salt.
  • In a separate bowl, combine bananas, egg, melted butter and milk.
  • Stir banana mixture into flour mixture until blended. Be careful not to over mix.
  • Stir in chocolate chips.
  • Pour batter into 9x13 inch pan. Bake at 350 degrees F (175 degrees C) 30 to 35 minutes, or until a toothpick inserted into center of cake comes out clean. (It will have some melted chocolate, but no crumbs.)

This tender cake is different from all the banana breads out there - possibly because Jim Lahey brings his celebrated skills as a bread baker to the recipe, which we adapted from "The Sullivan Street Bakery Cookbook." The spices, molasses and dark brown sugar combine for an intense, fragrant and almost caramel-like richness, while the mix of butter and olive oil make the crumb melt in the mouth. Be sure to use very ripe bananas for the best flavor; they should be spotted with brown and soft.

3/4 stick/6 tablespoons/84 grams unsalted butter, at room temperature, more for greasing pan
1 cup plus 1 tablespoon/135 grams all-purpose flour
1 1/4 teaspoons baking powder
1/4 teaspoon fine sea salt
1/4 cup/60 milliliters extra-virgin olive oil
1/3 cup/80 grams granulated sugar
1/4 cup/40 grams dark brown sugar
1 tablespoon molasses
1/2 teaspoon ground allspice
1/2 teaspoon ground cinnamon
1 1/2 teaspoons espresso or strong coffee, cooled (optional)

1 cup smashed ripe bananas (about 2 medium bananas)

Steps:

  • Heat oven to 425 degrees. Grease an 8-inch round cake pan and line the bottom with parchment paper.
  • In a medium bowl, whisk together flour, baking powder and fine sea salt.
  • In the bowl of an electric mixer fitted with a paddle attachment, beat butter, oil, sugar, brown sugar, molasses, allspice, cinnamon, espresso and vanilla until just combined. The secret to this cake's texture is to stop mixing before the sugar is dissolved.
  • Use a spatula to mix egg into butter mixture, then stir in flour mixture just to combine. Fold in bananas and chocolate chips. Scrape batter into prepared cake pan and bake until top is golden and sides begin to pull away from pan, about 25 minutes.
  • Let cool for at least 20 minutes (or longer, until completely cooled), then run a thin spatula around the edges to separate from the pan. Invert onto a serving plate. Cake will keep for 1 day, covered.

This recipe uses four bananas, which is more than is typical for a single loaf. The natural sugars from the ripe, brown bananas keep the bread incredibly moist for up to one week, even sliced. The high moisture of the batter can make it tricky to determine doneness, so take care not to underbake the the loaf. It should have a dry, shiny, cracked surface, and a tester inserted into the thickest portion should come out with a few moist crumbs attached. Serve this banana bread for breakfast or brunch, or even as a simple dessert, topped with a scoop of coffee ice cream.

4 very ripe medium bananas, peeled
6 tablespoons/85 grams unsalted butter, melted
1/3 cup/80 milliliters plain Greek yogurt
1 cup/220 grams light or dark brown sugar
2 large eggs
2 teaspoons vanilla extract
2 cups/255 grams all-purpose flour
1 1/2 teaspoons baking soda
1/2 teaspoon fine sea salt
1 cup/135 grams finely chopped chocolate or mini chocolate chips (see Tip)
3/4 cup/130 grams coarsely chopped toasted nuts, such as almonds, walnuts or pecans (optional)
Coarse sanding or turbinado sugar, as needed for finishing (optional)

Steps:

  • Heat the oven to 350 degrees. Lightly grease a 9-by-5-inch loaf pan with nonstick spray.
  • In a large bowl, mash the bananas coarsely using a fork. They should be fully broken apart, but it's OK if some larger lumpy pieces remain. Whisk in the melted butter, yogurt, brown sugar, eggs and vanilla until well combined.
  • In a medium bowl, whisk the flour, baking soda and salt to combine. Add the flour mixture to the banana mixture and stir to combine using a silicone spatula or wooden spoon. Scrape the sides and base of the bowl well to make sure the mixture is uniformly combined.
  • Gently stir in the chocolate until combined, then pour the batter into the prepared loaf pan and spread into an even layer. If using, sprinkle the surface generously with coarse sugar.
  • Transfer the pan to the oven and bake until the edges of the loaf start to pull away from the edge of the pan, and a tester inserted into the center comes out with just a few moist crumbs attached, 60 to 75 minutes. If the top of the loaf is becoming too dark before it's baked through, loosely cover with foil.
  • Transfer from the oven to a cooling rack and run a thin knife around the edge of the banana bread to separate it from the pan. Let cool in the pan for 10 minutes before unmolding and cooling completely.
