CHEESY BAKED SPINACH CASSEROLE
Steps:
- Preheat oven to 375 degrees. Grease a 9-inch oval baking dish or equivilant with non-stick cooking spray.
- Defrost spinach in the microwave or under warm water. Use your hands to squeeze out all the excess moisture in the spinach. Add to a medium mixing bowl.
- Add remaining ingredients to the spinach. Mix until combined. Pour into prepared baking dish and bake 30 minutes or until hot and bubbly.

- Preheat the oven to 400 degrees F.
- Melt the butter in a medium saucepan over medium heat. Add the garlic and onion and cook, stirring occasionally, until softened, about 6 minutes. Add the heavy cream, nutmeg and cayenne and bring to a simmer. Simmer, stirring occasionally, until slightly thickened, about 5 minutes. Mix in the spinach, 1/2 teaspoon salt and 1/4 cup of the Parmesan. Add the cream cheese and stir until melted. Season with salt and pepper to taste.
- Transfer the mixture to a 1 1/2- to 2-quart baking dish and sprinkle with the panko and remaining 1/4 cup Parmesan. Bake until bubbling and light golden on top, about 15 minutes.

- 1. Preheat oven to 350. Cut butter and cheese into 1/4 inch cubes. Set aside.
- 2. In medium bowl beat eggs lightly. Add flour, cottage cheese, butter, and American cheese. You can add a pinch of salt & pepper, but I normally don't. Defrost the frozen spinach, and do your best to remove and squeeze out most of the water. Add to mixture and mix well.
- 3. Place in a greased ovenproof dish (I use a large ovenproof round Pyrex bowl). Bake at 350 for 1 hr. Serve hot.

- Preheat oven to 350 degrees. Lightly grease a 13 x 9 inch baking dish.
- Drain spinach well. Saute onion and garlic in 2 Tbsp of the melted butter.
- Mix spinach with eggs, cottage cheese and cheddar cheese, additonal 6 Tbsp butter, and flour. Add sauteed onions and garlic and mix together. Season with salt and pepper.
- Pour into prepared dish and bake for 1 hour.
