As an appetizer or light lunch, these mini pizzas are easy to make and use readily available ingredients. Blue cheese adds a unique flavor, and pita bread is the perfect crust.

6 pita breads
1 (6.5 ounce) can tomato sauce
1 (4 ounce) can sliced black olives, drained
1 ounce diced pimento peppers, drained
2 small tomatoes, thinly sliced
4 ounces shredded mozzarella cheese
4 ounces blue cheese, crumbled
1 pinch dried basil
1 pinch dried oregano
1 pinch crushed coriander seed

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Warm pitas in the preheated oven or in a microwave for 1 minute, or until soft. Spread lightly with tomato sauce, pressing to flatten while spreading. Sprinkle with black olives, pimento peppers, tomatoes, mozzarella cheese, blue cheese, basil, oregano and coriander.
  • Spread the pitas on a large baking sheet and place in the preheated oven 8 minutes, or until the pita bread has reached desired crispness. Serve whole, or cut into slices.

2 3/4-3 cups all-purpose flour
1 teaspoon sugar
1 (1/4 ounce) packet fast rise yeast
1 cup very warm water (120 F to 130 F)
1 tablespoon extra virgin olive oil
1/2 teaspoon salt
1 pint cherry tomatoes
4 ounces Fontina cheese, shredded (1 cup)
3 tablespoons freshly grated parmesan cheese
12 kalamata olives, pitted and cut into slivers
fresh oregano leaves

Steps:

  • Mix 1 cup flour, sugar, and yeast in bowl. Stir in the water and oil until blended. Pulse 1 3/4 cups flour and salt in food processor to mix. Add yeast mixture and pulse until blended. With motor running, add remaining flour, 1 tablespoon at a time, until soft dough forms (you will need to process about 2 minutes). Dough is ready when it comes together in a ball.
  • Dust work surface lightly with flour. Turn out dough and knead until smooth, 1 to 2 minutes. Roll dough into 1 1/2-inch balls in your hands. Then flatten into 3-inch rounds. Cover with clean kitchen towel; let rest 10 minutes.
  • Preheat oven to 450°F Line two baking sheets with parchment paper. Divide dough into 4 pieces. Wrap 3 in plastic; refrigerate. Cut remaining dough into 12 equal pieces; shape each into 1 1/2-inch ball. Arrange on baking sheets; flatten into 3-inch rounds. Lightly coat with nonstick cooking spray.
  • Cut tomatoes into thin slices, then fan out slices. Top each pizza with 2 or 3 slices. Sprinkle with 1 teaspoon fontina, a little Parmesan, plus a few olive slivers and oregano leaves. Bake until bubbly and crust is golden, about 10 minutes. Repeat with remaining dough.
  • Cook's Clue:.
  • To keep dough from sticking to the food processor, lightly coat the inside of the bowl with nonstick cooking spray.

Great little pizzas. Use this basic recipe and add, remove, modify with your favorite ingredients. Great for low-fat diets when you're craving some 'zaah!

2 whole wheat pita bread
30 g reduced-fat mozzarella cheese
1/2 cup pasta sauce (Ragu, etc)
1/4 cup chopped onion
1/4 cup chopped green pepper
50 g black forest ham (chopped)

Steps:

  • Preheat oven to 400.
  • Spread pasta sauce evenly over both pitas.
  • Sprinkle with onion, green pepper and ham.
  • Cover with cheese.
  • Place on a cookie sheet or baking stone and bake for 10 minutes (or until cheese starts to brown).

Although this is called Cheese Pita, it is actually made with phyllo. My kids just call it cheese pie.

1 lb phyllo dough (1 pkg.)
1 lb cream cheese, or
1 lb ricotta cheese
3 eggs, beaten
1 teaspoon salt
1/2 lb butter, melted

Steps:

  • thaw phyllo.
  • preheat oven to 350 degrees.
  • lay thawed phyllo on a flat surface and cover with damp tea towel.
  • mix cheese, eggs and salt - set aside.
  • on an 11" x 17" greased baking pan lay phyllo to cover.
  • brush with melted butter.
  • repeat until there are six layers.
  • spread cheese filling evenly over phyllo, leaving about 1/2" around the edges.
  • cover with phyllo brushed with butter.
  • repeat until there are eight layers.
  • tuck in egdes.
  • brush top lightly with butter.
  • bake until top browns, approximately 30 minutes.
