drizzle of balsamic vinegar
1 pita bread
1 tbsp tomato sauce
1/2 ounce mozzarella cheese (shredded)
1 tbsp feta cheese (crumbled)
1/4 cup fresh spinach
2 tbsp sliced roasted red peppers
1 tbsp sliced kalamative olives
1/4 tsp dried oregano
1 pita bread
1 tbsp peanut butter
2 tbsp marshmallows
1-2 tbsp chocolate chips

Steps:

  • Preheat oven to 400 degrees.
  • Assemble each pizza with desired toppings. And bake for 10 minutes until cheese (or marshmallows are melted).

3 medium tomatoes
1 tablespoon extra-virgin olive oil, plus more for brushing and drizzling
Kosher salt and freshly ground pepper
3 cups baby arugula
1/2 cup pitted kalamata olives, roughly chopped
1 tablespoon fresh rosemary, roughly chopped
1 large red onion, cut into 1-inch-thick rounds
4 6-to-8-inch pocketless pitas
1/2 cup ricotta cheese
1/4 pound part-skim mozzarella cheese, diced
Pinch of red pepper flakes

Steps:

  • Core the tomatoes and halve them crosswise, then squeeze the juices and seeds into a large bowl. Whisk in 1 tablespoon olive oil and season with salt and pepper. Add the arugula but don't toss; set aside. Dice the tomatoes and toss in a separate bowl with the olives and rosemary.
  • Preheat a grill to medium high. Brush the onion rounds with olive oil and season with salt. Grill until soft, 3 to 4 minutes per side. Transfer to a plate and separate the rings. Reduce the grill heat to medium.
  • Brush both sides of the pitas with olive oil and grill until marked, 2 to 3 minutes per side. Top with some of the tomato-olive mixture, ricotta, mozzarella and onion. Cover and grill until the cheese melts, 2 to 3 minutes.
  • Toss the arugula with the dressing and pile on top of the pitas. Season with salt and the red pepper flakes and drizzle with olive oil.

6 pita breads
1 (6.5 ounce) can tomato sauce
1 (4 ounce) can sliced black olives, drained
1 ounce diced pimento peppers, drained
2 small tomatoes, thinly sliced
4 ounces shredded mozzarella cheese
4 ounces blue cheese, crumbled
1 pinch dried basil
1 pinch dried oregano
1 pinch crushed coriander seed

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Warm pitas in the preheated oven or in a microwave for 1 minute, or until soft. Spread lightly with tomato sauce, pressing to flatten while spreading. Sprinkle with black olives, pimento peppers, tomatoes, mozzarella cheese, blue cheese, basil, oregano and coriander.
  • Spread the pitas on a large baking sheet and place in the preheated oven 8 minutes, or until the pita bread has reached desired crispness. Serve whole, or cut into slices.

1 tablespoon extra-virgin olive oil
4 ounces Italian turkey sausage, removed from the casings
2 garlic cloves, grated
1 (10 ounce) package frozen leaf spinach, thawed, squeezed dry and roughly chopped
1 1/4 cups 2% percent cottage cheese
4 whole wheat pita bread, preferably pocketless
1/4 cup thinly sliced red onion (about 1/2 small onion)
4 ounces shredded part-skim mozzarella cheese (about 1 cup)
1/2 cup fresh basil leaf, torn

Steps:

  • Preheat the oven to 400 degrees F.
  • Heat 1 teaspoon of the oil in a medium nonstick skillet over medium heat. Add the sausage and cook, breaking up into small pieces with a wooden spoon, until no longer pink, about 5 minutes. Add the garlic and spinach and continue to cook until well mixed and the spinach is heated through, about 2 minutes. Remove from the heat.
  • Put the cottage cheese in the bowl of a food processor and puree until smooth. Lay the pita breads on 2 baking sheets and evenly brush with the remaining 2 teaspoons oil. Evenly spread with the pureed cottage cheese to the edge of each pita and then top with the sausage mixture, red onions and shredded cheese.
  • Bake until the pita is crisp around the edges and the cheese is melted, 12 to 15 minutes. Scatter with the basil.
