CHARLIE GIBSON'S ENCHILADA CASSEROLE
ABC NEWS' anchorman Charlie Gibson shared this easy and tasty recipe with the viewers of Good Morning America during the "Family Cook-Off" contest. It was voted the winner by the viewers and it's become a favorite for us, too.

Steps:
- Preheat oven 375 degrees.
- Crumble 6 cups of Doritos with your hands into a large mixing bowl.
- Add onion, chili, enchilada sauce, tomato sauce and 1 -1/2 cups cheddar cheese to the crumbled Doritos. Stir with a rubber spatula to combine.
- Place mixture into a 8 1/2 x 11 inch oven proof casserole dish.
- Bake for 30 minutes at 375.
- Remove from oven and spread the sour cream over the top of the casserole with a large spoon or rubber spatula. Top with remaining Doritos. Then add about a 1/2 cup of cheddar cheese.
- Bake for another 5 minutes.
LAYERED DORITOS CASSEROLE
Steps:
- Preheat oven to 350°F.
- Cook ground beef with onion and garlic until no pink remains. Drain any fat.
- Add salsa, taco seasoning, and ⅓ cup of water. Cook until thickened, about 5 minutes, and remove from heat.
- In a large bowl, combine beef mixture, sour cream, soup and 1 cup of cheese.
- Slightly crush Doritos (not completely, you don't want crumbs). Layer 1 ½ cups Doritos in the bottom of a 2 qt casserole dish . Top with ½ of the beef mixture. Repeat layers. Finally top with an additional 1 to 1 ½ cups Doritos and remaining cheese.
- Spray a piece of foil with cooking spray and cover casserole.
- Bake 30 minutes covered, remove foil and bake uncovered for an additional 20 minutes or until hot and bubbly. Top with lettuce, tomatoes and olives if desired.

DORITO CHILI CASSEROLE DIP
Steps:
- Preheat oven to 375 degrees Crumble 6 C doritos in mixing bowl Add onion, chili, enchilada & tomato sauces, and 1-1/2 cups cheddar cheese to the crumbled doritos. Stir with rubber spatula to combine. Place mixture into an 8-1/2 x 11" casserole dish. Bake for 20 minutes Remove from oven. Spread sour cream, over top and spread with spoon. Top with remaining doritos, sprinkle with remaining 1/2 c cheese. Bake another 5 minutes and serve.
DORITO® CASSEROLE
Got this recipe from a friend WAY back in junior high. Super simple and tastes delicious. My kids ask for it all the time. If you love enchiladas, you'll love this recipe. You can use any flavor Doritos® to suit your tastes. When reheating leftover casserole, stir in a little bit of milk to make it creamy again.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Cook and stir ground beef in a large pot over medium-high heat until the beef is crumbly and completely browned, 7 to 10 minutes. Drain and discard excess grease.
- Stir cream of chicken soup, enchilada sauce, and milk with the ground beef; bring to a simmer and cook for 5 minutes.
- Spread crushed tortilla snack chips into a 9x13-inch baking dish. Pour ground beef mixture over crushed chips; stir. Arrange cheese slices atop the mixture.
- Bake in preheated oven until the cheese melts, about 5 minutes; stir the melted cheese into the beef mixture.

Was given this recipe by a co worker. My husband says: 'You had me at Doritos®!' You can substitute 1 can Ro-Tel® tomatoes for the salsa.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly spray a 9x13-inch baking dish with cooking spray.
- Spread crushed chips out into the bottom of the prepared baking dish.
- Stir chicken, 1 cup Mexican cheese blend, salsa, cream of mushroom soup, cream of chicken soup, and sour cream together in a bowl. Pour chicken mixture over crushed chips into the baking dish.
- Bake in the preheated oven for 20 minutes. Spread remaining 1 cup cheese over the casserole and bake until cheese is melted and bubbling, about 5 minutes more.
