IVARS CLAM CHOWDER RECIPE (SO GOOD!)

Warm yourself up with this deliciously creamy Ivar's Clam Chowder!

Number Of Ingredients 11

3 thick strips bacon, coarsely chopped
½ cup finely chopped onion (¼-inch dice)
½ cup finely chopped celery (¼-inch dice)
½ cup finely chopped potatoes (¼-inch dice)
1 (6½-ounce) can minced clams, drained, clams and juice reserved
3 tablespoons unsalted butter
3 tablespoons all-purpose flour
2 cups half-and-half, warmed
½ teaspoon kosher salt
¼ teaspoon white pepper
2 tablespoons finely chopped fresh flat-leaf parsley

Steps:

  • Cook the bacon until browned in a medium saucepan over medium-high heat, until cooked, but not crispy. Drain the juice from the clams into a separate bowl, and set the clams aside (you will need the clam juice for the next step). In the same pot that you browned your bacon, stir in the onion, celery, and potato, and add the reserved juice from the clams. Add just enough water to cover the vegetables (as shown in picture above), set the pan over high heat, and bring just to a boil. Reduce the heat to med low, cover, and simmer for about 20 minutes, until the vegetables are fork-tender. Next, melt the butter in a large saucepan and add the flour and cook, stirring constantly for 2 minutes. Whisk in the warm half-and-half, and continue whisking and cooking for about 5 minutes over medium low heat until the flour is cooked, and mixture is thickening and smooth (note - you can substitute milk here, but will lose some of the richness of this recipe). Once you have the half and half base down add all of the cooked vegetables AND their cooking liquids to the base. Add the clams you set aside. Lastly, season with salt, and pepper and parsley.

I've had this recipe for three years. If I remember right the person who gave it to me said it came from a newspaper article from Seattle Washington. I love this recipe. Just be careful not to make this when you're really tired. Worst cooking disaster was misreading 1/2 tea sugar for 1/2 cup. Talk about yuck! Cooking and prep time is just a guess. It's been a good year since I made this last.

2 (6 1/2 ounce) cans minced clams
1 cup finely chopped onion
1 cup finely diced celery
2 cups finely diced potatoes
3/4 cup butter or 3/4 cup margarine
3/4 cup flour
4 cups half-and-half, warmed
1 teaspoon salt, to taste
1 dash pepper
1/2 teaspoon sugar

Steps:

  • In a medium saucepan, drain the juice from the clams; set the clams aside.
  • Combine clam juice with the onions, celery and potatoes.
  • Add enough water to barely cover and simmer, covered, over medium heat until the potatoes are tender, about 20 minutes.
  • In a large saucepan, melt the butter.
  • Add flour and stir in to the butter.
  • Slowly whisk in the warm half-and-half.
  • Cook and whisk until smooth and thick, about 5 minutes.
  • If you want a thinner chowder, add 1/2 to 3/4 cup water or clam broth.
  • Add the vegetables with their cooking liquid, clams, salt, pepper and sugar to the pan.
  • Stir well and adjust the seasonings if necessary.

1 package udon noodles
1 pound littleneck clams
1/4 cup cooking sake
3/4 cup regular sake
3 tablespoons light olive oil
2 tablespoons butter
1/2 small yellow onion, chopped
2 tablespoons grated ginger
3 cloves garlic, chopped
1/2 teaspoon hot pepper flakes
1/4 cup cooking sake
2 small seeded and chopped tomatoes
3 tablespoons finely chopped flat-leaf parsley
Salt to taste
1/2 cup whipping cream
1/2 cup clam juice (from the steamed clams)

Steps:

  • Prepare udon noodles according to package directions, drain.
  • In a steamer pot, add clams, cooking sake, and regular sake. Steam until the clams open up. Strain, reserving clams and liquid separately. Set aside.
  • In a saucepan, heat olive oil and butter. Add onion, ginger, garlic, and hot pepper flakes. Saute for 2 minutes. Add the cooking sake and simmer for 5 minutes. Add tomatoes, parsley and salt to taste. Simmer an additional 5 minutes.
  • Add whipping cream and simmer 3 minutes. Add reserved clam juice and simmer an additional 3 minutes. Toss the sauce over the noodles and garnish with the steamed clams.

1 lb potato, skin on diced very very small
2 (6 1/2 ounce) cans diced clams with juice
2 (6 1/2 ounce) cans chopped clams with juice
1 tablespoon liquid smoke
1 cup chopped celery
French onion soup mix (1-2 packets)
3 tablespoons oyster sauce
1 tablespoon white vinegar
1 (24 ounce) jar garlic alfredo sauce
1 quart half-and-half
1 (10 ounce) can evaporated milk
couple splashes hot sauce, I use tapito
2 tablespoons diced fresh parsley
2 tablespoons black pepper (to taste)

Steps:

  • Add your diced potatoes,celery, 1or 2 pk. of french onion soup mix (this will really determine your richness),and the juice from your cans of clams. (leaving the clams to add at the very end of the recipe or they will get chewy) and 1-2 tbl. liquid smoke, now add just enough water to cover maybe an inch over your potatoes and celery. Boil for 10 minute no longer or you won't have any potatoes for your chowder.
  • now add the rest of your ingredients, including your clams and simmer on low for at least 1 hours if not longer, (crockpot on low is awesome too) stirring frequently. serve with some tasty sourdough or toasted mauie onion chips, on top.

2 pieces fried bacon per person, chopped
1 1/2 cups Ore-Ida frozen hash browns
1/2 onion
1 canister Ivar's clam chowder
1 bottle clam nectar
1 cup extra clams, chopped
2 stalks celery, diced
Parsley

Steps:

  • In a dutch oven, Fry bacon until crispy Fry hash browns in butter ~ or bacon fat until brown and crispy, about half an hour Remove from pan, add more butter (or bacon fat) and fry onion until soft Put canister of Ivar's clam chowder in pan and heat up. Add hash browns, bacon, extra clams and nectar and heat up. Add celery, season with pepper and a little garlic salt. Sprinkle chopped parsley on top and serve. Serve with soda crackers.
