MOLLY'S CHICAGO DOG MEATLOAF WITH MUSTARD GLAZE

Nonstick cooking spray, for the pan
1 tablespoon olive oil
1 onion, finely chopped
1/3 cup milk
Pinch poppy seeds
3 stale hot dog buns, torn into pieces
2 tablespoons sweet pickle relish
1 teaspoon Worcestershire sauce
1 teaspoon kosher salt
1/2 teaspoon celery salt
4 pickled sport peppers or pickled pepperoncini, finely chopped
2 large eggs
6 tablespoons yellow mustard
Freshly ground black pepper
2 pounds ground beef (85% lean)
2 hot dogs
2 tablespoons brown sugar
2 tomatoes, sliced into wedges
1 pickle, sliced into coins
Pinch of poppy seeds
Pinch of celery salt
4 pickled sport peppers

Steps:

  • For the meatloaf: Preheat the oven to 350 degrees F. Grease a 9-by-5-inch loaf pan with cooking spray.
  • Set a medium skillet over medium heat and add the olive oil. Add the onions and saute until starting to brown, about 10 minutes. Allow to cool slightly.
  • Meanwhile, combine the milk, poppy seeds and hot dog buns in a large bowl and toss gently to combine; allow the milk to soak into the buns. Then, add the relish, Worcestershire sauce, kosher salt, celery salt, peppers, eggs, 2 tablespoons mustard and a few turns of black pepper to the bowl with the hot dog buns and stir to combine. Add the cooled onions. Add the ground beef and mix with your hands to combine.
  • Transfer half of the mixture to the prepared loaf pan, place the hot dogs on top on a diagonal so they run down the center and then cover them up with the remaining half of the beef mixture, smoothing it out on top.
  • In a small bowl, combine the brown sugar and remaining 4 tablespoons mustard and brush it over the top of the meatloaf. Bake until the internal temperature is 155 degrees F, about 50 minutes. Let sit for 10 minutes.
  • For the topping: Top with the tomato wedges, pickle slices, a sprinkle of poppy seeds, a sprinkle of celery salt and sport peppers before serving.

1 ½ pounds lean ground beef
3 stalks celery, chopped
2 carrots, grated
1 apple, cored and diced
2 eggs
2 slices white bread, torn into pieces
1 cup regular rolled oats
1 cup wheat germ
1 (6 ounce) can tomato paste
4 medium potatoes, cubed
3 carrots, chopped
1 stalk celery, cubed

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Coat a large roasting pan with oil and set aside.
  • In a large bowl, mix together the ground beef, 3 stalks of celery, grated carrots, apple, eggs, bread, oats, wheat germ and tomato paste using your hands. Divide the meat mixture into four equal parts and make loaf shapes. Place the loaves in the roasting pan. Surround them with the potatoes, remaining carrots and remaining celery. Cover the pan with a lid.
  • Bake for 80 minutes in the preheated oven, or until the meat is cooked through. The internal temperature should be 175 degrees F (80 degrees C) when taken with a meat thermometer. Allow to cool.
  • Portion the food into containers with one loaf and one quarter of the vegetables in each one. Refrigerate. To serve, give your dog 1/3 of a container with each portion of kibble.

I've been making this meatloaf recipe for approximately 40 years - I've tried many others but keep coming back to this one - it is more moist & tastier than any other I've tried - I hope you enjoy it as well. I generally fix mashed potatoes and green bean casserole with this - always brings a smile to my husbands face when I make this meal.

2 lbs ground chuck
1 (10 1/4 ounce) can cream of mushroom soup
1 small onion, chopped fine
1 cup breadcrumbs
1/4 cup ketchup
1/2 cup milk
2 eggs, beaten
1/4 cup ketchup
2 tablespoons brown sugar

Steps:

  • Mix all ingredients well - split the mixture evenly between two loaf pans. Bake @ 350° for 1 1/2 hours.
  • Before applying the topping pour off any grease (should be minimal if you use chuck). Mix ketchup & brown sugar together & spread evenly over the two loafs.

1/2 cup brown rice (cooked)
3/4 cup water
1 carrot, peeled and diced
1 celery rib, diced
3/4 lb ground beef
1 lb ground turkey or 1 lb chicken
1 cup old-fashioned oatmeal
1 egg, slightly beaten
1 tablespoon ketchup

Steps:

  • Preheat oven to 350F.
  • Bring water to boil in small skillet.
  • Add carrot and celery. Reduce heat to medium and cook 5 minutes. Drain and let cool.
  • Place all ingredients in a large bowl and mix thoroughly to combine.
  • Place meatloaf on foil-lined baking sheet. Form into a fun shape (like a bone or hydrant!) Should be between 1 and 2 inches high on sheet.
  • Bake 1 hour. Remove from oven and let cool about 10 minutes.
