The Best Louisiana Crunch Cake Ever image

One of my all time favorite southern classic desserts, that is excellent during the holidays, and even better everyday!

Number Of Ingredients 12

3 cups cake flour
1 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon baking soda
2 cups granulated sugar
1 cup butter, softened
4 large eggs, room temperature
1/4 cup sour cream
1 cup buttermilk
2 teaspoons pure vanilla extract
1/4 cup granulated sugar
1/4 cup sweetened flaked coconut

Steps:

  • 1. Preheat oven to 350 Degrees Fahrenheit.
  • 2. Sift together cake flour, salt, baking powder and soda. Set aside.
  • 3. In a large separate bowl, beat butter until very fluffy (approx. 5 minuets) then add 2 cups of sugar. Continue to beat until light and fluffy (approx. 2 more minutes).
  • 4. Beat in eggs, one at a time, making sure that each egg is thoroughly blended before adding the next egg.
  • 5. Mix in sour cream and vanilla extract.
  • 6. Blend in some of the dry ingredients followed by some of the buttermilk in alternates. This is a way to ensure that the ingredients are being thoroughly blended together -- For example; add dry mixture followed by buttermilk, dry mixture, buttermilk dry mixture -- so on and so forth -- DO NOT OVER BEAT OTHERWISE CAKE WILL BECOME HARD AS A BRICK ONCE FINISHED BAKING!
  • 7. Grease a bundt cake pan. I used a non stick angle food spring formed tube pan. If you do not have a non stick pan, be sure to grease your pan and dust with flour! Add in 1/4 cup of sugar to the bottom of pan and about 3 inches up the sides, tapping the pan to ensure even distribution. Leave excess sugar in pan. Sprinkle coconut flakes to the bottom of the pan. Scrape batter into the bundt pan and spread evenly.
  • 8. Bake for about 50 minutes to an hour or until a wooden skewer inserted comes out clean (if it comes out wet, bake another 10 minutes or so, if it comes out crumbly, you over baked the cake).
  • 9. Let cake cool for about 10 minutes, then carefully remove from pan, making sure that the sugary coconut side is faced upward. Use a knife to scrape the sides if cake becomes stuck. (this step is very important otherwise your cake will continue to bake and will become very dry and completely stuck in the pan).
  • 10. Drizzle glaze over the crunchy top portion of cake. Please use my Vanilla Almond Glaze recipe to complete this cake!

this is the MOISTEST crumb cake I have ever tried. it's my mother-in-law's recipe, and I just can't get enough of this, and I usually don't like crumb cake.

3 cups flour
1 teaspoon baking powder
1 1/2 cups sugar
1/2-2/3 cup butter
3 large eggs
1 teaspoon baking soda
1 cup buttermilk
2 teaspoons vanilla extract
1 teaspoon almond extract
salt

Steps:

  • Sift flour, baking power, salt, sugar and soda.
  • Cut in butter until mixture has the consistency of course meal or small peas.
  • Reserve about 1 1/2 cups of this mixture.
  • Combine the eggs, milk and extracts and stire into the remainder of the dry blend.
  • Pour into 2 well-buttered 10-inch pie pans.
  • Brush the top of the dough w/ butter and sprinkle with the reserved crumb mixture.
  • Bake at 350° for 25-30 minutes or until cake is done.

OLD FASHIONED CRUMB CAKE

A simple, moist mellow spiced crumb cake that is perfect for brunch or any other time. Long time family favorite.

1 cup white sugar
1 ½ cups all-purpose flour
½ cup butter, cut into pieces
1 teaspoon ground cinnamon
½ teaspoon ground cloves
1 teaspoon baking soda
1 pinch salt
1 cup buttermilk
1 egg, lightly beaten

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 7x11 inch baking pan or casserole dish.
  • Combine sugar, flour and butter. Use a fork to cut butter in until mixture resembles coarse crumbs. Set aside 1/2 cup of this mixture to use as topping.
  • To the remaining flour mixture, add cinnamon, cloves, baking soda and salt. Lightly stir in the buttermilk and egg. Pour batter into prepared pan. Sprinkle cake with reserved topping.
  • Bake in preheated oven for 25 minutes, until a toothpick inserted into center of the cake comes out clean.

I had been watching a show on foodnetwork.com and they were showcasing the famous New Your Style Crumb Cake. I was looking all over for a good substitute and ended up making my own to capture that perfect crumb topping and soft cake. I never have any left and my kids say you best not be late for breakfast Mom made crumb cake!

2/3 cup(s) light bown sugar packed
1 teaspoon(s) ground cinnamon
1 stick(s) butter, melted
1 3/4 cup(s) buttermilk biscuit mix
1 box(es) yellow or butter flavor or white cake mix
3 large eggs
1 1/2 cup(s) sour cream
1/3 cup(s) vegetable oil

Steps:

  • Preheat oven to 350*F. Grease and Flour 13x9 inch pan and set it aside. FOR THE TOPPING: Whisk sugar, cinnamon, and butter in medium bowl to combine. Add Bisquick and stir with rubber spatula or wooden spoon until mixture resembles thick, cohesive dough; set aside to cool to room temperature, 10 to 15 minutes.
  • For the Cake: Combine cake mix, eggs, sour cream and oil then blend for 4 minutes. Pour batter into the 13x9 inch pan. With Your hands, break off Topping Dough and Sprinkle the crumb mixture over the cake and bake at 350*F for 35-40 minutes.
  • The Crumb topping will be thick and you need to break it up over the cake but it will remain in clumps. You need the clumps to make the topping into crumbs like when it comes out of the oven.
  • You may add a sprinkling of Powdered Sugar over top after it cools. Serve with lots of soft butter.
  • Be sure to buy the cake mixes when they go on sale for $1 or less per cake mix. This recipe sure saves money over the frozen crumb cakes that run about $4-5. each. This freezes well and cake may be warmed in the microwave before serving. Always serve with a pat of butter on top! For a dessert serve with light whipped topping!
