CANDIED APPLE PIE
I like to use a lattice top crust because the red apples show through the crust and make a beautiful presentation. At Christmas I sprinkle green decorating sugar on the lattice crust (any other time plain sugar).

Steps:
- Preheat oven to 350 degrees F.
- Filling: Place apples, red hots, sugar and water in large saucepan. Bring apple mixture to a boil until red hots and sugar are dissolved (apples should not be completely cooked). Take off heat. Add almond extract and tapioca to mixture. Let cool till room temperature.
- Crust: Using food processor, pulse flour, pecans, salt, butter and sugar together. When you can't see large butter chunks, add water one tablespoon at a time. When dough forms, wrap in plastic wrap and place in refrigerator for 1/2 hour to 1 hour. Roll out on lightly floured board. Place bottom crust in buttered pie pan. Spoon room temperature apple mixture into bottom pie crust. Roll out remaining crust.
- Bake for 45 minutes.
- Serve with whipped cream, vanilla ice cream or all by itself.
DONNA'S CANDIED APPLES
Steps:
- In a medium nonstick pan, dissolve the cinnamon candies in water over low heat. Peel, core and cut the apples in 1/2 lengthwise. Once the candy has dissolved arrange the apples, flat side down, in the pan. Cook on low to medium heat until the apples are tender; turning often, about for about 45 minutes. The apples should be the color of the candy. When ready transfer to a serving platter and let cool.
- Once apples have cooled dollop 1 teaspoon of the Cream Cheese Topping on each apple. Garnish with a small piece of fresh parsley or a fresh mint leaf. Refrigerate until serving.
- Add all the ingredients to a small bowl and thoroughly combine with a hand-held mixer. Topping should be stiff. Refrigerate until ready to use.
POISON CANDIED APPLES

- Wash and dry the apples and remove the stems. Insert a wooden twig into each apple about halfway through. Line a baking sheet with parchment paper.
- Add the sugar, corn syrup, 1/2 teaspoon of the blue food coloring, 1/2 teaspoon of the red food coloring and 1 cup water to a small saucepot and stir together. Attach a candy thermometer to the pot and bring the mixture to a boil. (Do not stir once the sugar starts to boil.) Boil until the mixture reaches 295 degrees F, 15 to 20 minutes. Immediately remove from the heat and add the remaining 1/2 teaspoon blue food coloring and 1/2 teaspoon red food coloring, using a wooden skewer to swirl a figure eight in the pot and being careful not to blend.
- Immediately dip the apples into the mixture, carefully tilting the pot as necessary to coat. Allow any excess coating to drip back into the pot, then place the apples on the parchment-lined baking sheet to set, about 1 hour.

- Peel apples and cut in half lengthwise; remove cores. In a large saucepan over medium heat, bring the water, sugar and candies to a boil, stirring constantly until sugar and candies are dissolved. Reduce heat; carefully add apples. Cook, uncovered, until apples are tender, about 8 minutes., With a slotted spoon, transfer apples to a serving dish; pour syrup over apples. Serve warm or chilled. Garnish with mint if desired.

OLD-FASHIONED RED CANDIED APPLES
These are the kind you found at the circus or carnival! Not the newer version covered with cramel. ;) Candy thermometer is needed for this, as well as popsicle sticks. The number of apples needed depends on the size of the apples, probably 4 medium ones. The recipe states that each batch candies approximately 1 dozen medium apples. I'm not sure I trust that. - Mix 1st 3 ingredients in saucepan.
- Put on high heat with candy thermometer positioned in center of fluid level.
- While it is boiling, thoroughly wash and dry your apples, and spear with the sticks.
- Boil mixture until reaches hard crack (300ºF), then immediately add red food coloring and stir.
- Quickly immediately dip the apples, twisting to cover, and set on a greased cookie sheet.
