BALSAMIC AND TOMATO ROAST CHICKEN

4 thick slices eggplant (aubergine), cut lengthwise
4 chicken breast fillets
1 x 400g (14 ounce) can whole peeled tomatoes, drained and quartered
2 tablespoons salted capers, rinsed
1/4 cup (2 fluid ounnces) balsamic vinegar
1 tablespoon olive oil
2 tablespoons brown sugar
1/4 cup whole basil leaves
cracked black pepper

Steps:

  • Preheat the oven to 200° C (400° F). Place the eggplant on the bottom of a baking dish and top each slice with a chicken breast. Combine the tomatoes, capers, balsamic, oil, and sugar and spread over the chicken breast. Bake for 20-25 minutes or until the chicken is cooked through. Sprinkle with the basil leaves and pepper and serve with a rocket (arugula) salad.

ROAST CHICKEN WITH LEMON & ROSEMARY ROOTS

You can eat this roast chicken as a healthy Sunday lunch. Swede, celeriac and carrots flavoured with rosemary, lemon and garlic ramp up the taste

4 large carrots (about 400g), cut into big chunks
1 celeriac (about 575g peeled weight), cut into roastie-sized chunks
1 large swede (550g unpeeled), quartered and cut into thick slices
2 red onions , cut into wedges
1 garlic bulb
2 tbsp rapeseed oil
2 tsp sprigs rosemary leaves and woody stalks separated
1 lemon
1 medium chicken (about 1.4kg)
2 x 200g bags curly kale

Steps:

  • Heat oven to 200C/180C fan/gas 6. Tip the carrots, celeriac, swede, onions and garlic into a large roasting tin with the oil, rosemary leaves and a grinding of black pepper. Toss well and roast for 5-10 mins while you get the chicken ready.
  • Grate the zest and squeeze the juice from the lemon, set aside and put the lemon shells and the woody stalks from the rosemary inside the chicken. Stir the veg, scatter over the lemon zest and drizzle over the juice, then sit the chicken on top of the veg and roast for 1-1 1/4 hrs until the chicken is tender but still moist. Take the chicken from the oven and leave to rest for 10 mins. Keep the veg in the oven and steam one of the bags of kale (if you're eating this over two days for the Healthy Diet Plan, otherwise steam both).
  • Squeeze the garlic from the skins, carve the chicken and serve with the vegetables.

I made this up one night with ingredients I had on hand, and now it is a weekly request in our house! Everyone always asks for the recipe, and it is so simple. Serve it over a bed of mixed greens for a fancy presentation, or over pasta for a more traditional Italian feel!

¾ cup grated Romano cheese
¼ cup bread crumbs
1 tablespoon granulated garlic
2 teaspoons ground cayenne pepper
2 teaspoons dried thyme
1 teaspoon ground black pepper
1 teaspoon salt
6 thin chicken cutlets
1 tablespoon olive oil
1 green bell pepper, diced
6 sun-dried tomatoes
2 cloves garlic, minced
salt and ground black pepper to taste
3 ounces shaved Romano cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Combine 3/4 cup Romano cheese, bread crumbs, granulated garlic, cayenne pepper, and thyme in a shallow bowl. Press each chicken cutlet into the cheese mixture, turning to coat. Arrange chicken in a baking dish.
  • Bake chicken in the preheated oven until slightly golden, about 25 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  • Heat the oil in a large skillet over medium heat. Add bell pepper, sun-dried tomatoes, and minced garlic to the skillet. Season with salt and pepper. Cook and stir until bell pepper and tomatoes soften, about 10 minutes.
  • Transfer baked chicken to a plate; top with bell pepper and tomato mixture. Garnish with shaved Romano cheese.

1 (8 ounce) package egg noodles
1 (12 ounce) carton small curd cottage cheese
1 (8 ounce) carton sour cream
3/4 cup chopped green onion
2 tablespoons butter, melted
1/8 teaspoon pepper
1 garlic clove, crushed
6 boneless skinless chicken breast halves
3 ounces sliced monterey jack cheese, 3 slices, halved
2 eggs, beaten
1 cup fine dry breadcrumb
1/3 cup butter
1 chicken bouillon cube
1 cup boiling water
1/2 cup chopped onion
1/2 cup chopped green pepper
2 tablespoons butter, melted
2 tablespoons all-purpose flour
1/4 teaspoon salt
1/4 teaspoon black pepper
1 (4 ounce) can sliced mushrooms, drained
1 (2 ounce) jar diced pimentos, drained

Steps:

  • Cook egg noodles according to package directions, drain. Rinse with cold water, and drain again. Combine with next 6 ingredients; stir well. Add noodles and toss lightly; set aside.
  • Place each piece of chicken between 2 sheets of wax paper; flatten to 1/4 inch with meat mallet or rolling pin. Place a slice of cheese over each piece of chicken, and top with 1-2 tablespoons of noodle mixture. Fold long sides of chicken over noodles and cheese;fold ends over and secure with wooden picks. Spoon remaining noodle mixture into a lightly freased 12 x 8 x 2 inchbaking dish; set aside.
  • Dip chicken in egg, coat with bradcrumbs. Melt 1/3 cup butter in a heavy skillet; brown chicken on all sides. Place chicken over noodles in baking dish.
  • Dissolve bouillon cube in boilingg water. Saute onion and green pepper in 2 tablespoons butter until tender. Add flour; stir until smooth. cool 1 minute; stir constantly, until thickened. Stir in last 4 ingredients, pour over chicken. Bake uncovered at 400 F for 20-30 minutes.

1/2 cup seasoned bread crumbs
2 tablespoons dried parsley (or oregano or your favorite dried spice)
1/4 cup fresh romano cheese or 1/4 cup parmesan cheese, shredded
1/4 cup butter, melted

Steps:

  • Preheat oven to 400 degrees.
  • Combine bread crumbs, parsley and cheese.
  • Brush chicken with butter, then roll in crumb mixture.
  • Place meaty side up in ungreased, shallow baking pan.
  • Sprinkle remaining crumb mixture on top.
  • Bake, uncovered, for 40 minutes or until chicken is no longer pink.

5 chicken cutlets, cut in 1 inch pieces
1 tablespoon chopped garlic
5 tablespoons olive oil
1 (14 1/2 ounce) can Italian-style stewed tomatoes
1 1/2 tablespoons chopped onions or 1 1/2 tablespoons generous splash onion juice
1 (1/2 lb) penne or 1 (1/2 lb) other pastas
basil
oregano
parsley
fresh ground pepper

Steps:

  • Saute chopped cutlets in olive oil.
  • Toss and brown.
  • Throw in garlic and onion, saute another two minutes.
  • Drain off less than a 1/4 of the canned tomato juice.
  • Throw in the tomatoes, turn heat to high and heat through about 5 minutes, reducing some liquid.
  • Season with ground pepper and other seasoning to taste. Let cook on medium till meat is tender.
  • Serve over boiled penne.

½ cup grated Parmesan cheese, divided
1 tablespoon chopped fresh chives

Steps:

  • Bring a large pot of lightly salted water to a boil. Add noodles and cook for 8 to 10 minutes or until al dente; drain.
  • While noodles are cooking, combine the sour cream, 1/4 cup cheese, chives, salt and pepper in a medium bowl. Mix together.
  • Stir butter into drained noodles, then stir in sour cream mixture. Place on a warm platter and sprinkle with remaining 1/4 cup cheese.
