This Middle Eastern dish is a family favorite. The blend of the spices coupled with the tartness of the lemon makes it out of this world. This recipe has been passed down in my family for many years.

1 (16 ounce) jar grape leaves
2 lbs beef or 2 lbs lamb, minced
1 cup long-grain uncooked rice (basmati rice works best)
3/4 cup tomato sauce
2 tablespoons tomato paste
1 medium onion, finely chopped
2 garlic cloves, minced
2 teaspoons salt
1 teaspoon black pepper
1 teaspoon cumin
1 teaspoon paprika
1/2 teaspoon ground coriander
1/2 teaspoon ground cloves
1/2 teaspoon ground nutmeg
1/2 teaspoon cinnamon
1 pinch ground cardamom
1/2 cup fresh-squeezed lemon juice
2/3 cup canola oil
4 -5 carrots
water

Steps:

  • Soak grape leaves in water for 20 minutes. Drain.
  • Peel and slice carrots lengthwise and line bottom of pot with them. This helps keep the grape leaves from sticking to the pot.
  • Soak rice in hot water for 10 minutes and drain. In a large bowl, combine rice, beef, onion, garlic, tomato sauce, tomato paste, and all spices.
  • Place each grape leaf shiny side down with stem end toward you on a flat surface. Cut off stem. Place 1 tbsp of rice mixture on leaf near the stem end. Roll top over once, fold ends in, and continue to roll completely (rolling away from you). Repeat with remaining leaves.
  • Arrange rolled grape leaves in pot seam side down, tightly packed. Place each layer in opposite direction of previous layer, in a criss-cross fashion. For even cooking, try to have no more than 4 layers.
  • Combine lemon juice and oil and pour over grape leaves. Top with water until approximately 1" below top layer.
  • Place large plate on top, and place a heavy weight on plate (a foil-wrapped brick works great).
  • Bring to a boil, then reduce heat to low and simmer for 1 hour 15 minutes to 1 hour 30 minutes, until rice is thoroughly cooked. Allow to rest for 20-30 minutes.
  • Serve with lemon wedges or Greek yogurt. Enjoy!

This is a Greek recipe that I developed from 3 different recipes, and it is DELICIOUS! The recipe serves 4-6 people as a main dish, but you can serve more people as an appetizer. It is also great to bring to a potluck buffet.

1 lb ground lamb
3 teaspoons fennel seeds
3 teaspoons dried dill
3 teaspoons dried cilantro
2 onions (finely chopped)
1/2 cup celery (finely chopped)
2 tablespoons butter
1/2 cup instant rice (uncooked)
1 tablespoon mint sauce
3 tablespoons dried parsley
salt and pepper
1 (8 ounce) jar grape leaves (Orlando California brand)
3 cups chicken broth
3 -4 tablespoons lemon juice
1/2 cup dry white wine or 1/2 cup cream sherry
1/2 tablespoon oil (to grease dish or pan)
2 egg yolks
3 -4 tablespoons lemon juice
2 tablespoons peanut oil
1 1/2 tablespoons cornstarch
1/4 teaspoon salt
1 cup water (divided 3/4 cup & 1/4 cup)

Steps:

  • DOLMA DIRECTIONS:.
  • Saute onions and celery with 1 tablespoon butter until wilted. In a large bowl, add ground lamb, onions, celery, rice, mint sauce, parsley, salt and pepper. Mix well.
  • Remove grape leaves from jar and open up onto a large plate.
  • Remove one leaf (the bigger the better) and place onto a flat surface with shiny side down.
  • Place a small amount of the filling toward the stem side of the leaf and then roll up (tuck in the left and the right side as you roll) towards the top of the leaf.
  • Make sure you do not put too much filling in each one.
  • Grease the bottom of a Corningware dish or Saucepot with a little oil or Pam, and then line the bottom with some of the smaller grape leaves that you did not use as rollups.
  • Place into the dish/pot the rolled grape leaves close together and arrange in layers.
  • Add chicken stock, lemon juice, wine or sherry, and remaining tablespoons of butter.
  • In order to prevent the grape leaves from opening up during cooking, place a small flat Corningware plate or lid on top of the grape leaves.
  • Then place Corningware glass cover onto the Corningware pot.
  • Simmer on low for about 1 hour.
  • After the 1 hour, set aside to cool.
  • While cooling, make the egg-lemon sauce.
  • After the sauce is made and you have drained the stuffed grape leaves by holding the lid in place and pouring the liquid into the sink, place several stuffed grape leaves on a dish and pour some hot egg-lemon sauce on top and serve.
  • EGG-LEMON SAUCE DIRECTIONS:.
  • Lightly beat 2 egg yolks with 1/4 cup of water.
  • In a measuring cup, place 2 or 3 tablespoons lemon juice and add enough water for a total of 3/4 cup of liquid. Add 1/4 teaspoon salt.
  • Heat 2 tablespoons peanut oil in a small pot and then add the cornstarch, stirring. Add a little of the lemon juice and water mixture to prevent it from becoming lumpy.
  • Next, add a little more of the lemon juice and water mixture until smooth, and then add the rest of the lemon juice and water mixture and continue stirring until smooth.
  • Remove from the heat for about 1 minute.
  • Gradually add the beaten egg yolk mixture, stirring with a whisk until smooth. (Keep in mind that heating will cause the eggs to set, which you do NOT want to do.).
  • NOTE: If you have any stuffed grape leaves leftover, you can heat them in a frying pan the next day and serve with the egg-lemon sauce. Or microwave the stuffed grape leaves with some egg-lemon sauce on top, prior to heating.

1/4 cup olive oil
1 large onion, minced
1 1/2 lbs lamb or 1 1/2 lbs pork (I use pork)
3/4 cup short-grain rice
3 tablespoons chopped of fresh mint or 3 teaspoons dried mint
3 tablespoons chopped fresh dill or 3 teaspoons dried dill
salt & freshly ground black pepper
100 jarred grape leaves, packed in brine, rinsed thoroughly (about)
1 1/2 lemons, juice of
boiling water
2 beef bouillon cubes
2 eggs
1 1/2 lemons, juice of
2 tablespoons cornflour

Steps:

  • Combine meat with olive oil, onion, herbs, rice and season generously.
  • Line the pot you will be cooking your dolma in with a couple of layers of torn grape leaves (to prevent the dolma from being scorched while cooking).
  • Place a grape leaf, shiny side down, on surface in front of you.
  • If the stem is quite thick, cut it out with a knife, making a V.
  • Pinch off about a teaspoon of the meat filling and place in the centre of the leaf.
  • Fold in sides of leaf and roll up, not too loose and not too tight (allowing a bit for the expansion of the rice as it cooks), into neat little packets.
  • Place neatly in pot and continue making dolma until you've used up all your meat mixture.
  • Pour lemon juice over and cover dolma with boiling water, covering dolma with about 1/2 inch of water.
  • Weight down with a plate and put lid on pot.
  • Cook at a gentle simmer for 45 minutes to 1 hour, or until rice is tender.
  • Carefully remove dolma, and place in a heatproof platter.
  • Make Egg-Lemon Sauce (Avgolemono).
  • Beat the eggs with the lemon juice and corn flour.
  • Slowly dribble in hot stock left from cooking dolma, whisking egg mixture constantly.
  • Keep adding hot liquid slowly, whisking, to temper the eggs.
  • Pour the egg mixture into the pot with the remaining stock and whisk over a medium-low heat until sauce has thickened.
  • Pour sauce over your dolma and enjoy!

1/4 cup green bell pepper, chopped fine
1/4 cup parsley, chopped
8 ounces crushed tomatoes or 8 ounces tomato sauce
cayenne pepper
1/4 cup lemon juice
1 teaspoon basil
1 teaspoon black pepper (to taste)
1 teaspoon salt (to taste)
1 medium yellow onion (chopped)
1 (14 ounce) can chicken broth or 1 (14 ounce) can beef broth, enough to cover the vegetables

Steps:

  • PREPARATION OF VEGETABLES:.
  • A variety of vegetables can and should be used including red, gold, and or green bell peppers. Also used are large sized zucchini squash, tomatoes, and onions.
  • Scoop out the vegetables leaving an opening for the filling of about 1 1/2 to 2 inches in diameter and about 2-3 inches deep. Fill the scooped out vegetables with the filling mixture and place upright in a large covered casserole.
  • Pour over the crushed tomatoes or tomato sauce with broth or 1 cup of water. Cover and cook in a preheated 350 degree oven for about 1-1 1/2 hours.
  • Try this dish served with a dollop of Mahdzoon (YOGURT) over the filled vegetables.

This is a special occasion dish. We make this during Ramadan. My husband bases this on a version from "Great Book of Couscous". The potatoes and zucchini must be a certain size for this to work well.

2 zucchini (each about 7 inches long)
2 potatoes (each about 4 inches long)
1/2 lb ground beef or 1/2 lb lamb
2 tablespoons parsley, chopped, divided
2 tablespoons rice, uncooked
1 tablespoon onion, chopped
1 egg, beaten
1 1/2 teaspoons salt, divided
1/2 teaspoon black pepper, divided
1/2 teaspoon cinnamon
2 tablespoons oil
1/3 cup onion, chopped
1 lb lamb shank, in 4 pieces
3 cups water
1/2 cup chickpeas
1/4 teaspoon cinnamon
1 tablespoon lemon juice

Steps:

  • Peel the zucchini and potatoes.
  • Chop the stem off the zucchinis.
  • Chop the potatoes and zucchini in half short ways so now you have 4 zucchini pieces, each about 3 inches long and 4 potato pieces, each about 2 inches long.
  • Carefully scoop out the inside of each zucchini piece, leaving a wall about 1/4 inch thick around. Discard the scooped out part.
  • Carefully scoop out each potato in the same manner but save the scooped out portion.
  • Mix together the ground meat, 1 tablespoon of parsley, rice, egg, 1 teaspoon salt, 1/4 teaspoon pepper and 1/4 teaspoon cinnamon.
  • Stuff the meat mixture into the potatoes and zucchini, loosely.
  • Heat oil in large pan and saute onion and lamb together.
  • Add the water and bring to boil over medium high heat.
  • Add the chick peas, 1/2 teaspoon salt, 1/4 teaspoon pepper and 1/4 teaspoon cinnamon and simmer over low heat for 20 minutes.
  • Put the stuffed vegetables in the sauce along with the reserved potato pieces. Cook covered for 1/2 hour.
  • Remove from heat and add lemon juice and 1 tbsp parsley.

1 onion, chopped
2 - 3 cloves garlic, minced
1/4 cup dill weed (dried)
5 to 6 cups chopped fresh cilantro
2 fresh jalapeño peppers, chopped
2 tsp. salt
4 green onions, chopped
1 1/4 pound ground beef, cooked and drained
1/4 cup shortening
fresh, frozen, or canned grapes leaves (125 leaves)
2 cans tomato sauce
1 cube butter for topping

Steps:

  • Wash grapes leaves. If using fresh, wash well. Mix first set of ingredients (rice through shortening) Wrap dolma leaves Place in baking dish. Pour tomato sauce over dolma and dot with butter. Then add enough water to cover. Bake 350° two hours or more. During the baking, add more water if it is all gone. Makes about 100 to 125 dolmas. May be frozen before cooking, but don't thaw before baking.

EASTER LAMB SOUP WITH DOLMA

Try something different this Easter with a spectacular seasonal lamb soup. A special occasion soup from Crete, it's served with dolma - stuffed vine leaves

50ml olive oil
4 fresh bay leaves
1 tsp dried oregano (wild oregano is best, available online)
1 large white onion, finely chopped
3 garlic cloves, finely chopped
1 leek, finely sliced
800g lamb shoulder, off the bone, cut into roughly 5cm cubes (ask your butcher for the bone)
200ml white wine
1 cos lettuce (about 500g), thinly sliced
100g finely chopped parsley
100g finely chopped mint
250g finely chopped dill
200g spinach, shredded
2 large eggs
3 lemons, juiced, plus wedges to serve
chilli flakes, to serve (optional)
80g short-grain rice
4 tbsp olive oil
1 lemon, juiced
200g jar preserved vine leaves (you'll need about 20)

Steps:

  • Tip the oil, bay, oregano, onions, garlic and leeks into a large pan over a medium heat and cook gently for 10 mins until the onions and leeks soften and become translucent. Add the lamb along with the bone, and cook for 10 mins more until the lamb has started to colour. Pour in the wine, then add the lettuce. Cook for 5 mins more. Tip in 3 litres cold water, cover and cook for about 1 hr until the lamb is tender.
  • Meanwhile, tip the herbs into a bowl with 1 tsp sea salt and the spinach. Rub the salt and herbs into the spinach with your hands for 2 mins until the herbs and spinach have wilted. When the lamb has had 40 mins, add half the herb and spinach mix to the pan and continue cooking for the remaining 20 mins. Remove the bone and discard, then remove the meat using a slotted spoon, transfer to a board and shred using two forks. Return the meat to the pan, remove from the heat and add the rest of the spinach mix.
  • To make the dolma filling, spoon a third of the lamb and spinach from the soup into a bowl using a slotted spoon, then mix with the uncooked rice, 3 tbsp of the oil, the lemon juice and some seasoning. Spread the vine leaves out on a board and put a teaspoon of the filling in the centre of each. Roll each one up into a cigar shape, tucking in the ends as you go to enclose the filling. Arrange the dolma in a single layer in a small saucepan and drizzle with the rest of the oil and a ladleful of the soup. Cover and cook for 20 mins over a medium heat. Remove from the heat and set aside.
  • Whisk the eggs with the lemon juice and a ladleful of the soup, then tip this back into the pan with the rest of the soup, then stir (off the heat) until the soup is glossy and silky. Put about three dolma in each bowl, ladle over the soup, sprinkle with some chilli flakes, if you like, and serve with lemon wedges on the side for squeezing over.

Assorted vegetables with a ground beef stuffing that will melt in your mouth! My all-time favorite food to eat. My dad was born and raised in Iran and this is a recipe passed down for generations. I wanted to share this with others because all my friends bug me or my dad to make dolma. It's a big hit! You can stuff all kinds of vegetables, like tomatoes, or different kinds of squash, or use grape leaves as well, so feel free to experiment. I hope everyone enjoys the dolma as much as me and my family have for years.

3 pounds ground beef
3 (6 ounce) cans tomato paste, divided
¾ cup chopped fresh parsley
¾ cup chopped green onion
½ cup unsalted butter, softened
1 tablespoon salt
¾ tablespoon ground black pepper
1 ½ cups uncooked white rice
1 medium head cabbage, leaves separated
4 large green bell pepper, chopped
2 large eggplants
2 large zucchini, sliced

Steps:

  • Combine ground beef, 2 1/2 cans of tomato paste, parsley, green onion, butter, salt, and pepper in a large bowl.
  • Before adding uncooked rice, rinse until water runs clear; this keeps the rice from becoming sticky. Add rice after rinsing and mix contents until blended well.
  • Bring a pot of lightly salted water to a boil; add cabbage. Boil until just tender enough to fold, 2 to 3 minutes. Drain and set aside.
  • Meanwhile, hollow out bell peppers, eggplants, and zucchini.
  • Stuff hollowed vegetables with meat mixture. Set in a large pot (pack vegetables together so there isn't much room in between them). Fill cabbage leaves with 3 to 4 tablespoons of leftover meat mixture and set in the pot with the other vegetables. Pour water in the pot on top of the vegetables until almost covered. Stir in remaining tomato paste. Weigh down the food by placing a heavy, heat-proof plate on top.
  • Bring water to a boil; reduce heat to medium and cover the pot. Let cook for 1 hour. Drain half of the water in the pot (leave heavy plate until done cooking) and recover, reducing heat to a simmer, and allow to slow cook for 1 hour more. Serve warm and enjoy!

STUFFED VINE LEAVES - AUTHENTIC TURKISH DOLMA RECIPE

"Dolma" in Turkish translates to any vegetable stuffed with a rice-based mixture. Lots of spices are used for the stuffing. For me, the most important one is the lemon salt. It gives a nice aromatic taste, which can not be replaced by the combination of lemon juice and table salt. If you can not locate any lemon salt, don't forget to replace it with only half the amount of kosher salt (two tbsp will be too much) and juice of half a lemon. 1 lb pickled grape leaves, pickled in brine then washed and drained
4 medium onions, diced
2 cups rice, washed under cold water and drained
1 cup flat leaf parsley, chopped finely
1/2 cup olive oil
1/3 cup pine nuts
1/4 cup dried currant
1 tablespoon dried mint flakes
1 teaspoon allspice
1/8 teaspoon black pepper
1/8 teaspoon ground cinnamon
1 teaspoon granulated sugar
2 tablespoons lemon salt
1/2 lemon, juice of

Steps:

  • Dice the onions and sauté with 1/4 cup of olive oil.
  • When they turn translucent, add the pine nuts and sauté for 5 more minutes.
  • Add rice and stir constantly for 5-10 minutes until the rice is translucent.
  • Add the spices (dried mint, cinnamon, lemon salt, black pepper, dried currants, sugar and allspice) and chopped parsley.
  • After another quick stir, add 1/2 cup of boiling water and simmer on low medium heat for 15-20 minutes until all the liquid is absorbed by the rice mixture.
  • Take off heat and let cool.
  • And now, here comes the fun part. Traditionally, you would put a spoonful of the cooled mixture in the center of the top part of the leaf, fold the sides inwards and then roll the leaf like a cylinder. But since I have "The Ultimate Dolma Machine" (follow the link mentioned in the description section), I just placed a leaf on the rubber compartment of the machine, put a tbps of mixture in the middle and with a single slide, there comes my dolma from the other side of the machine. The process was a breeze. It took me only 10 minutes to roll nearly 40 perfectly shaped dolmas. Below is the process fully photographed.
  • As the final step, spread a layer of vine leaves on the bottom of a large and heavy pot (to prevent the stuffed leaves from burning).
  • Lay all your dolmas side by side and tuck very tightly.
  • Transfer the remaining 1/4 cups of olive oil, juice of half a lemon and 2 cups of boiling water, cover with a plate upside down (so that the dolmas don't move around in boiling water) and bring to a boil.
  • Reduce the heat to medium low and simmer until all the water is absorbed (roughly 45-60 minutes).
  • Transfer to your serving dish and let cool.

1 quart warm water
1 lb cooked ground beef or 1 lb lamb
1 cup cooked rice
1/2 cup minced onion
1/2 teaspoon salt
1/4 teaspoon allspice
1/4 teaspoon black pepper
1/3 cup water
1 tablespoon minced parsley
1/2 cup chopped walnuts

Steps:

  • Because these leaves are packed in brine it is important to rinse them well in warm water before using.
  • Separate the most perfect leaves from those which are imperfect.
  • Line the bottom of a glass baking dish with the imperfect leaves.
  • It is okay to line several layers.
  • These imperfect leaves act as a cushioning layer for the stuffed rolls and will be discarded after baking.
  • Mix stuffing ingredients thoroughly.
  • Place a grape leaf vein side up and stem end toward you on the counter. Near the base put 1 heaping teaspoon of stuffing.
  • Fold both sides over stuffing and roll up from the base end to the tip.
  • It is important to roll them tightly so that they don't become unrolled while cooking them.
  • Lay the rolls very close to each other in rows.
  • It is okay to make several layers if necessary.
  • Pour in warm water that will barely cover the first layer.
  • .
  • Cover dish and bake in oven at 350 degrees about 45 minutes.

1/2 teaspoon cinnamon
1/2 teaspoon ras el hanout spice mix
1 tablespoon olive oil
4 tablespoons water
salt and black pepper
1/2 large onion
1 large vine-ripened tomatoes
2 garlic cloves, minced
1/2 teaspoon cinnamon
1 chicken stock cube
1 liter water
1 teaspoon lemons or 1 teaspoon lime juice
salt and black pepper

Steps:

  • Vine Leaves:.
  • To prepare fresh vine leaves, trim the stalks & wash the leaves under running water. Blanch in lightly salted water for 15 minutes. Rinse then drain & set aside.
  • To prepare bottled vine leaves, take the leaves out of the bottle & soak in plenty of cold water for at least 20 minutes. Rinse the leaves individually under running water the set aside.
  • To prepare vacuum packed vine leaves, remove the leaves from the packet & soak in plenty of cold water for at least 15 minutes. Rinse the leaves individually under running water the set aside.
  • Finely dice the pepper, tomato & onion. Fry gently in a little olive oil along with the minced garlic for approx 4 minutes. Add the spices & seasoning & cook for a further 30 seconds.
  • Remove from the heat & add the rice, olive oil & water. Set aside.
  • Broth:.
  • Finely dice the onion & tomato & fry gently in a little olive oil. Add the cinnamon & seasoning, water, stock cube & lemon / lime juice. Cook for 15 minutes.
  • After 15 minutes, remove from heat. At this point, you can do one of three things: liquidize the sauce, strain it to leave just a broth or keep it as it is.
  • Stuff & fold your vine leaves:.
  • Remove one leaf from the bowl of water & place in the centre of a dinner plate.
  • Place one teaspoon full of filling into the bottom centre of the leaf - as in the photo.
  • Take the left corner of the leaf & fold up to cover the filling.
  • Do the same with the right hand side.
  • Bring in both sides then gently roll up the leaf.
  • Repeat these steps another 49 times - When folding the leaves, be firm but do not wrap them too tightly as they may split as the rice expands. Also don't be tempted to overfill the leaves either.
  • NB: Most prepacked vine leaves come with their stalks attached. If they are tender you can leave them on - tuck them in the leaf or alternatively leave sticking out for a pretty effect. If the stalks are tough then remove them with a pair of scissors.
  • Place carefully one at a time in a large pot. You can put up to 3 layers in a pot if necessary.
  • Place a large plate or dish over the top of the vine leaves & gently pour the sauce broth over the top. Cover & cook on medium heat for at least 25 minutes; until the vine leaves are tender.
  • My family enjoys these hot or room temperature drizzled with lemon / lime juice & good quality olive oil. They are really good served as an appetizer with a selection of dips such as garlic mayo etc.

1 (16 ounce) jar grape leaves (or other vine leaves)
1 1/2 cups rice
2 tablespoons tomato paste
2 onions, finely minced
2 tablespoons dried currants
2 tablespoons pine nuts
1 tablespoon cinnamon
1 tablespoon mint
1 teaspoon allspice
1 teaspoon olive oil
lemon wedge

Steps:

  • Sauté onions in olive oil in pan, add rice and add hot water to cover.
  • Cover and simmer until rice is half cooked, about 10 minutes.
  • Turn off heat, add tomato paste, currants, nuts, and spices. Let mixture cool.
  • To prep the grape leaves, rinse in warm water and remove the stems.
  • When rice mixture is cool, place 1 teaspoon or less in center of leaf, fold in right and left sides, then roll the leaf until you have a tiny 'cigar'.
  • Place the dolma in a steamer pot.
  • Repeat until all grape leaves and/or stuffing is finished.
  • Add water to steamer cover and simmer for 30-45 minutes or until the rice inside the dolma is totally cooked.
  • Traditionally this is served cold.
  • Squeeze lemon over the dolma immediately before serving.

1 cup rice, uncooked
1 cup olive oil
2 tbsp sugar

1 tbsp allspice

Steps:

  • Cook onion in 1 cup boiling water. When water evaporates add oil. Saute onion and add rice. Fry 1 minute. Add everything else and 1 cup boiling water. When water evaporates it's finished. Fill raw peppers and put little piece of tomato skin on top. Put in Dutch oven standing up. Add 1 cup boiling water. Cover twice: first with plate, then with lid. Cook 45 minutes or until no water remains.

Stuffed grape leaves were served at the court of King Khosrow II in Persia in the early seventh century. There are numerous versions today of this delicacy, which is popular in every country throughout the Middle East. Meat is used in the making of hot dolma, and cold dolma are without meat. In Egypt the meatless variety is called "false" or "lying" because there is no meat, but it is the most popular. This is my mother's recipe. It is particularly aromatic. The leaves can be bought preserved in brine, but fresh ones have a better flavor. Only very young, fresh, tender ones picked in the spring will do. They freeze very well raw and wrapped in foil.

8 ounces preserved or fresh grape leaves
1 1/4 cups long-grain rice
2 to 3 tomatoes, peeled and chopped
1 large onion, finely chopped, or 4 tablespoons finely chopped scallions
2 tablespoons finely chopped flat-leaf parsley
2 tablespoons crushed dried mint
1/4 teaspoon ground cinnamon
1/4 teaspoon ground allspice
Salt and pepper
2 tomatoes, sliced (optional)
3 or 4 cloves garlic
2/3 cup extra-virgin olive oil
1 teaspoon sugar
Juice of 1 lemon, or more

Steps:

  • If using grape leaves preserved in brine, to remove the salt put them in a bowl and pour boiling water over them. Make sure that the water penetrates well between the layers, and leave them to soak for 20 minutes, then change the water twice, using fresh cold water. If using fresh leaves, plunge a few at a time in boiling water for a few seconds only, until they become limp, and lift them out.
  • Pour boiling water over the rice and stir well, then rinse under the cold tap and drain. Mix the rice with the chopped tomatoes, onion or scallions, parsley, mint, cinnamon, allspice, and salt and pepper to taste.
  • Stuff the grape leaves with this mixture: Place each leaf on a plate, vein side up. Put one heaping teaspoonful of filling in the center of the leaf near the stem end. Fold the stem end up over the filling, then fold both sides towards the middle and roll up like a small cigar. Squeeze lightly in the palm of your hand. Fill the rest of the leaves in the same way. This process will become very easy after you have rolled a few.
  • Pack the stuffed leaves tightly in a large pan lined with tomato slices or leftover, torn, or imperfect grape leaves, occasionally slipping a whole clove of garlic in between them if you like.
  • Mix the olive oil with 2/3 cup water. Add the sugar and lemon juice, and pour the mixture over the stuffed leaves. Put a small plate on top of the leaves to prevent them from unwinding, cover the pan, and simmer very gently for about 1 hour, until the rolls are thoroughly cooked, adding water occasionally, a coffee-cupful at a time, as the liquid in the pan becomes absorbed. Cool in the pan before turning out. Serve cold.
  • Add 3 tablespoons raisins or currants and 4 tablespoons pine nuts to the filling.
  • Mix 1/4 teaspoon powdered saffron or turmeric with the olive oil and water before pouring over the stuffed grape leaves.
  • Soak about 1/4 cup dried chickpeas in water overnight. Then crush them in a mortar and add them to the filling. In this case use 1/4 cup less rice. You may also use drained canned chickpeas.

This Middle Eastern dish is a family favorite. The blend of the spices coupled with the tartness of the lemon makes it out of this world. This recipe has been passed down in my family for many years.

1 (16 ounce) jar grape leaves
2 lbs beef or 2 lbs lamb, minced
1 cup long-grain uncooked rice (basmati rice works best)
3/4 cup tomato sauce
2 tablespoons tomato paste
1 medium onion, finely chopped
2 garlic cloves, minced
2 teaspoons salt
1 teaspoon black pepper
1 teaspoon cumin
1 teaspoon paprika
1/2 teaspoon ground coriander
1/2 teaspoon ground cloves
1/2 teaspoon ground nutmeg
1/2 teaspoon cinnamon
1 pinch ground cardamom
1/2 cup fresh-squeezed lemon juice
2/3 cup canola oil
4 -5 carrots
water

Steps:

  • Soak grape leaves in water for 20 minutes. Drain.
  • Peel and slice carrots lengthwise and line bottom of pot with them. This helps keep the grape leaves from sticking to the pot.
  • Soak rice in hot water for 10 minutes and drain. In a large bowl, combine rice, beef, onion, garlic, tomato sauce, tomato paste, and all spices.
  • Place each grape leaf shiny side down with stem end toward you on a flat surface. Cut off stem. Place 1 tbsp of rice mixture on leaf near the stem end. Roll top over once, fold ends in, and continue to roll completely (rolling away from you). Repeat with remaining leaves.
  • Arrange rolled grape leaves in pot seam side down, tightly packed. Place each layer in opposite direction of previous layer, in a criss-cross fashion. For even cooking, try to have no more than 4 layers.
  • Combine lemon juice and oil and pour over grape leaves. Top with water until approximately 1" below top layer.
  • Place large plate on top, and place a heavy weight on plate (a foil-wrapped brick works great).
  • Bring to a boil, then reduce heat to low and simmer for 1 hour 15 minutes to 1 hour 30 minutes, until rice is thoroughly cooked. Allow to rest for 20-30 minutes.
  • Serve with lemon wedges or Greek yogurt. Enjoy!

Dolma is my all-time favorite Mediterranean dish! This recipe comes from my mother's-mother's family and has never been written down until a year ago. After forty-five minutes of translation and talk between my mother and grandmother, I finally have it down in print!

1 teaspoon minced fresh parsley
1 pound ground beef
½ teaspoon ground allspice
½ teaspoon ground black pepper
¼ teaspoon curry powder
1 (16 ounce) jar grape leaves, drained and rinsed
2 tablespoons vegetable oil
1 potato, sliced into rounds
1 cup canned tomato sauce
2 cups water, or as needed

Steps:

  • In a medium bowl, mix together the uncooked rice, ground beef, parsley, allspice, pepper and curry powder until well blended.
  • Pour oil into the bottom of a large pot, and spread to cover. Make a layer of potato slices to cover the bottom of the pan. The dolmas should not be able to touch the bottom of the pan.
  • Lay the grape leaves out flat on a cutting board. Place about a tablespoon of the beef mixture in the center of one leaf. Fold sides in towards the center, then roll up from the bottom loosely. Set in the pot seam side down. Repeat with the remaining mixture and leaves. For large leaves, you may cut them in half at the center vein. Place a heavy dinner plate on top of the dolma to keep them from unraveling. The cooking pot should be about 2/3 full.
  • Pour tomato sauce and water over the dolma. The liquid should cover them by at least one inch. Adjust the amount of water if necessary. Bring to a boil, then cover, and simmer for 45 minutes to 1 hour, until all liquid has been absorbed and rice is tender.

1 jar grape leaves (available at most Greek, Middle Eastern, and Italian markets)
1½ cups uncooked rice
1 medium onion, diced
¼ cup olive oil
2 cups water
½ cup fresh parsley, chopped
2 Tablespoons fresh dill, chopped
1 teaspoon fresh mint, chopped
¼ cup feta cheese, crumbled
½ cup pine nuts
½ cup raisins
½ cup lemon juice
Salt and pepper, to taste

Steps:

  • 1. In a saucepan, sauté the onion in olive oil until light brown. 2. Add rice and brown lightly. 3. Add the water, salt, and pepper. 4. Bring the water to a boil and simmer for 5 to 7 minutes, or until water is absorbed but rice is only partially cooked. 5. Make certain rice does not stick or burn. 6. Add all the ingredients except the lemon juice and mix well. 7. Drain the grape leaves and place 1 Tablespoon of filling in the center of each leaf. 8. Fold the sides in and roll the leaf up. 9. Place stuffed leaves in a pot in even and tight rows covering the bottom of the pan. When the bottom layer is complete, start another layer. Continue rolling dolmas until all of the filling is used. 10. Add ½ of the lemon juice and enough water to cover half of the rolled leaves. 11. Place a plate on the top layer to hold the stuffed leaves down and to prevent them from unrolling while cooking. 12. Simmer over low heat until most of the liquid is absorbed, about 45 minutes. 13. Remove the plate and dolmas from the pan, drizzle with olive oil and lemon juice, and serve. May be served warm or at room temperature. Serve with Yogurt and Mint Sauce if desired.

1 large white onion, halved crosswise, ends discarded, plus 1/2 onion coarsely chopped
5 tablespoons white vinegar
4 baby carrots
1 stalk celery, coarsely chopped
2 lbs ground beef
1 cup rolled oats or 1 cup breadcrumbs
1 cup white rice
1 cup tomato sauce with garlic
1 cup cold water
1 tablespoon red paprika
1 tablespoon vegetable herb seasoning mix, such as Vegeta
1/2 tablespoon chicken base
1/2 tablespoon fresh garlic in oil
1/2 tablespoon fresh ground black pepper

Steps:

  • Serving suggestions: cold sour cream, cucumber salad.
  • Preheat the oven to 450 degrees F.
  • Boil the halved onions in water with 3 tablespoons of the vinegar until soft but not falling apart, about 15 minutes.
  • Put the chopped onions, carrots and celery in a food processor and blend until finely chopped. Combine the vegetable mixture, ground beef, oats, rice, tomato sauce, cold water, paprika, vegetable herb seasoning, chicken base, garlic and pepper in a bowl and mix well with your hands.
  • Remove the halved onions from the water and separate into cups. Fill each cup with meat mixture and place meat-side up in a single layer in a 12- by 15-inch baking pan. Mix the remaining 2 tablespoons vinegar with enough hot water to pour into the pan to cover halfway up the sides. Cover and bake for 2 hours.
  • To serve, transfer the stuffed onions to plates and cover with sauce. Serve with a cold sour cream and cucumber salad.
