From the Food section of the Kansas City Star (though they say they adapted it from Woman's Day magazine.) It would make 8 patties, but 7 fit in my cast-iron skillet.

1 1/2 lbs ground turkey
1/2 cup parmesan cheese
1/2 cup Italian seasoned breadcrumbs
7 ounces pizza sauce (about 1/2 a can)
8 tablespoons mozzarella cheese, shredded

Steps:

  • Combine the ground turkey, parmesan cheese, and bread crumbs and shape into 7-8 patties.
  • Fry in a little canola oil, turning occasionally, for about 6 minutes. (I think it takes longer, but that's what their's says.).
  • Top patties with pizza sauce and mozzarella cheese. Cover and cook for 1 minute to melt the cheese.
  • Serve on hamburger buns.

Brings me back to the days of carhopping at the Dog 'n Suds back in Chicago! As with pizza, you can also add sliced mushrooms, etc. (If it is not grilling season, these burgers can be broiled on broiling pan sprayed with a little nonstick spray.)

2 1/2 lbs ground chuck
1/3 cup parmesan cheese
1/4 cup onion, minced
1/4 cup green pepper, minced
1 teaspoon oregano
1 teaspoon garlic salt
1/8 teaspoon garlic powder
1/8 teaspoon pepper
6 ounces tomato paste, 1/2 to 1 can
8 slices mozzarella cheese or 8 slices provolone cheese
8 slices tomatoes
8 hamburger buns, preferably grilled

Steps:

  • Combine meat in a large bowl with Parmesan cheese, onion, green pepper, garlic salt, pepper and oregano. If a more garlicky flavor is desired, add 1/8 teaspoons garlic powder to this mixture.
  • Add 1/2 to 1 6-oz. can tomato paste to meat mixture to consistency you desire for patties. Shape into 8 patties. (If you put in too much paste, just add some bread crumbs to get the right consistency.).
  • Grill over medium hot coals on one side until brown. Turn over and top with cheese slices. Cook until cheese is melted.
  • Serve with tomato slices on hamburger buns with dill pickle spears and potato chips or fries. (We like to grill the buns first.).

1 egg white
1 cup green pepper, finely chopped
1/4 cup fresh basil, minced or 2 tablespoons dried basil
2 tablespoons romano cheese, grated (or parmesan)
2 tablespoons breadcrumbs
1 teaspoon salt
1/2 teaspoon pepper
1 lb ground venison or 1 lb ground beef
1 tablespoon oil
1/2 cup onion, chopped
1/4 cup green pepper, chopped
2 garlic cloves, minced
1 (14 1/2 ounce) can crushed tomatoes, undrained (I use one quart)
1 tablespoon fresh mixed Italian herbs or 1 teaspoon dried Italian seasoning
1 teaspoon salt
1/2 teaspoon pepper
1 tablespoon sugar
6 slices mozzarella cheese (approx 3 oz)
6 buns, toasted on the grill

Steps:

  • Start the pizza sauce simmering first: Saute the onion and pepper in oil for 3 minutes. Add the garlic and Italian seasoning and saute 1 minute until the onion is soft. Stir in tomatoes and simmer 10-15 minutes, till it thickens to your liking, stirring occasionally. Add the salt, pepper, and sugar to your taste.
  • Carefully blend the hot sauce until smooth.
  • To make the burgers: Lightly beat the egg white. Add remaining burger ingredients and mix well. Shape into 6 burgers.
  • Grill burgers on medium high heat, for 4-5 minutes on each side or until meat is no longer pink.
  • Top burgers with cheese slices the last 2 minutes of cooking.
  • Serve burgers on buns topped with cheese and tomato sauce.
