This is an easy cake that always gets rave reviews! I don't remember where I originally got this recipe, but it is one I have been making for years. It is so hard not to have seconds with this one.

PINEAPPLE CAKE
2 c self- rising flour
2 c sugar
2 large eggs, slightly beaten
1 can(s) crushed pineapple (20 oz)
1 Tbsp vanilla extract
WARM COCONUT PECAN ICING
1 stick butter
1 c sugar
1 can(s) evaporated milk
1 1/2 c shredded coconut
1 c chopped pecans

Steps:

  • 1. For the Pineapple Cake, preheat the oven to 350 degrees. Generously spray a 9 x 13 pan with cooking oil.
  • 2. Mix the flour and the sugar in a mixing bowl. Add the eggs, vanilla and the can of undrained crushed pineapple and mix until well blended with electric mixer on medium speed.
  • 3. Pour the pineapple mixture into the prepared 9 x 13 pan and bake in the preheated 350 degree oven for 35-45 minutes until the cake is lightly browned and a toothpick comes out clean. Be very careful not to overbake.
  • 4. For the icing, add butter, sugar and evaporated milk together in a heavy saucepan.
  • 5. Bring to a slow boil over medium heat, stirring CONSTANTLY. Once mixture begins to boil, cook until mixture thickens ( about 7 to 10 minutes). When thickened, remove from heat.
  • 6. Stir in 1 ½ cups coconut and 1 cup chopped pecans. Pour out onto warm cake and spread over the top.
  • 7. Enjoy! This is wonderful either served while still warm or cooled.

3 c sugar (2 cups separated from 1 cup)
2 c flour
2 eggs
1 tsp baking soda
2 tsp vanilla (separated)
16 oz crushed pineapple
1/2 c butter
3/4 c evaporated milk
1 c shredded coconut
1 c nuts (pecans or walnuts) chopped

Steps:

  • 1. In a bowl mix 2 cups sugar, flour, eggs, baking soda, 1 tsp vanilla, and crushed pineapple and mix well with a spoon.
  • 2. Pour into a greased 9x13 baking pan.
  • 3. Bake at 350 for 40 minutes.
  • 4. When your cake is finished baking and is still hot make your icing.
  • 5. Icing: Mix butter, 1 cup sugar, evaporated milk, and 1 tsp vanilla in a sauce pan. Cook over medium heat until it thickens. This usually takes about 5 minutes.
  • 6. Remove from heat and add the coconut and chopped nuts. Pour while hot over warm cake. Let cool.

Number Of Ingredients 9

One 3 1/2-pound pineapple, peeled, cored and cut into 1-inch pieces* (see Cook's Note)
2 tablespoons pineapple juice plus 2/3 cup
1/2 cup packed light brown sugar
2 tablespoons unsalted butter, at room temperature
3 egg whites
2/3 cup water
2/3 cup vegetable oil
1 1/2 teaspoons almond extract
One 18.25-ounce box white cake mix (recommended: Betty Crocker Super Moist)

Steps:

  • Place an oven rack in the lower 1/3 of the oven. Preheat the oven to 325 degrees F. Butter and flour a mini Bundt pan.
  • For the Cakes: Place the pineapple in the bowl of a food processor. Pulse until coarsely chopped. In a 10-inch nonstick skillet, combine the chopped pineapple, 2 tablespoons pineapple juice, sugar, and butter over medium-high heat. Bring the mixture to a boil, stirring occasionally. Cook until the liquid evaporates and the mixture begins to brown, about 10 to 15 minutes. Spoon the pineapple mixture into the prepared pan.
  • In a large mixing bowl, combine the egg whites, water, vegetable oil, almond extract, cake mix, and 2/3 cup pineapple juice. Using an electric hand mixer, beat the mixture on medium speed for 2 minutes. Pour the batter over the cooked pineapple. Bake for 28 to 30 minutes until the cakes begin to pull away from the sides of the pan and the tops are golden. Allow the cakes to cool for 15 minutes. Place a piece of parchment paper on top of the cakes. Put a baking sheet, upside-down, on top of the parchment paper. Flip both pans over and allow the cakes to cool completely while still in the Bundt pan, about 1 hour. Unmold the cakes and place on individual serving plates.

1/2 teaspoon salt
1 teaspoon vanilla
1 (20-ounce) can crushed pineapple, undrained

Topping:
1 stick butter or margarine
1 cup sugar
1 (5 1/2-ounce) can evaporated milk
1 cup chopped nuts
1 cup coconut

Steps:

  • Put all ingredients in large bowl and mix with spoon (not mixer). Pour into 9x13x2-inch pan. Bake at 350° for 30-40 minutes or until center is done. Topping: Combine butter, sugar, and milk in small saucepan. Cook 5 minutes. Add nuts and coconut. Spoon on cake while hot. Yummy!
