1 cup butter, softened
2-1/3 cups sugar
1-1/2 teaspoons vanilla extract
3 large eggs, room temperature
3 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 cup buttermilk
ICING:
1/4 cup butter, cubed
1/2 cup packed brown sugar
1/3 cup heavy whipping cream
1 cup confectioners' sugar

Steps:

  • Preheat oven to 350°. Grease and flour a 10-in. fluted tube pan., Cream butter and sugar until light and fluffy, 5-7 minutes. Beat in vanilla; add eggs, 1 at a time, beating well after each addition. In another bowl, whisk together flour, baking powder and baking soda; add to creamed mixture alternately with buttermilk (batter will be thick). Transfer to prepared pan., Bake until a toothpick inserted in center comes out clean, 45-50 minutes. Cool in pan 10 minutes before removing to a wire rack to cool completely., For icing, in a small saucepan, combine butter, brown sugar and cream; bring to a boil over medium heat, stirring constantly. Remove from heat; cool 5-10 minutes. Gradually beat in confectioners' sugar; spoon over cake.

3 cups white sugar
1 ½ cups butter
5 eggs
3 ½ cups all-purpose flour
½ teaspoon baking powder
¼ teaspoon salt
1 ¼ cups whole milk
1 teaspoon vanilla extract
1 (16 ounce) package brown sugar
1 cup butter
¼ teaspoon salt
⅔ cup evaporated milk
1 (16 ounce) package confectioners' sugar, sifted
2 teaspoons pure vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour three 9-inch cake pans.
  • Cream white sugar, 1 1/2 cups butter, and eggs together in a bowl. Beat well.
  • Combine flour, baking powder, and 1/4 teaspoon salt. Add to the sugar mixture alternately with milk. Add vanilla extract. Beat until batter makes ribbons when falling from the whisk or beater. Divide batter among the prepared cake pans.
  • Bake in the preheated oven until a toothpick inserted in the center comes out clean, about 30 minutes. Cool layers on a rack before icing, at least 1 hour.
  • Combine brown sugar, 1 cup butter, and 1/4 teaspoon salt in a saucepan over medium heat. Stir until brown sugar is dissolved, about 3 minutes. Add evaporated milk and continue stirring. Bring to a gentle boil and let bubble for about 4 minutes, stirring constantly to avoid sticking. Remove from heat and allow to cool, about 5 minutes.
  • Mix confectioners' sugar and vanilla extract into the butter-milk mixture using an electric mixer until icing caramelizes and thickens to the desired consistency.
  • Spread icing onto the cooled cake layers. Stack layers; ice top and sides.

1 1/4 cups firmly packed brown sugar
1/2 cup granulated sugar
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground nutmeg
1/2 teaspoon ground allspice
1 cup buttermilk
2/3 cup vegetable shortening
1 teaspoon vanilla extract
3 eggs
1 cup chopped walnuts or 1 cup pecans
1/2 cup butter or 1/2 cup margarine
1 cup firmly packed brown sugar
3 cups powdered sugar
1/2 teaspoon vanilla

Steps:

  • Heat oven to 350*.
  • Generously grease and flour bottom only of 13x9 pan.
  • In large bowl, combine all cake ingredients except walnuts, beat at low speed until just moistened.
  • Beat 3 minutes at medium speed.
  • Stir in walnuts or pecans. see Note* below.
  • Bake at 350* for 40-45 minutes or until top springs back when touched lightly in center.
  • Cool one hour or until completely cooled. In medium saucepan, melt margarine or butter.I do this until slightly browned,,do not burn.over low heat, for 25 minutes, stirring constantly.
  • Add milk, continue cooking until mixture comes to a rolling boil.
  • Remove from heat. Gradually add powdered sugar and vanilla. Mix well.
  • If needed, add a few drops of milk for desired spreading consistency. Spread over cooled cake.
  • NOTE*.whenever I use nuts, pecans or walnuts, ext, I usually chop according to recipe and either toast in oven or place in dry skillet over low heat and "cook" just until fragrant.being careful not to burn.I think it helps bring out the nutty flavor by helping to release the nut oils.
  • To make cupcakes, fill 24-30 paper lined muffin cups, 2/3 full with batter. Bake at 350* for 20-25 minutes. Frost with caramel frosting.

Pastry for two single-crust pies (9 inches)
1-1/2 cups raisins
1 cup butter, softened
1 cup sugar
1 cup packed brown sugar
6 eggs
2 teaspoons vanilla extract
2 to 4 teaspoons ground cinnamon
1 cup chopped nuts
1 cup sweetened shredded coconut
Whipped topping and additional chopped nuts, optional

Steps:

  • Line two 9-in. pie plates with pastry. Trim pastry to 1/2 in. beyond edge of plates; flute edges. Line crusts with a double thickness of heavy-duty foil. Bake at 450° for 10 minutes. Place on wire racks to cool; discard foil. , Place raisins in a saucepan and cover with water; bring to a boil. Remove from heat; set aside.
