Chocolate Dipped Divinity Cookies image

My youngest daughter just loves these cookies. Only when I make them for her I add some chopped pecans and omit the chocolate dipping. Either way they are good cookies!

Time 20m

Number Of Ingredients 7

2 1/2 c shortening like crisco (do not use butter)
1 1/2 c sifted powdered sugar
4 c all purpose flour
1 tsp salt
2 tsp pure vanilla extract
1 c chopped nuts (optional)
chocolate a'peels or chocolate almond bark

Steps:

  • 1. preheat oven to 350 and line cookie sheet with parchment paper.
  • 2. In large mixing bowl combine shortening and powdered sugar and blend well. Add vanilla and salt than the flour. You don't need to chill the dough first but I do.
  • 3. Roll out dough to about 3/8 of an inch thick and cut with a round cookie cutter. Bake for 8 to 10 minutes just until the edge turns a light color. Let cookies cool on the cookie sheet for 5 minutes before moving to a cooling rack.
  • 4. When you have baked all your cookies melt the chocolate a'peels or almond bark over a double boiler and dip half of each cookie into chocolate, and let dry on parchment. Store cookies in airtight container.
  • 5. For variation you can reduce the flour to 3 1/3 cups and 2/3 cup of cocoa powder to make chocolate divinity cookies. I also sometimes add mini chocolate chips as well. A fun batter to work with. I make it ahead and store it in my fridge. Happy Baking!

1 cup sugar
Zipper baggie
wooden spoon
tape
parchment paper
Preheat oven to 300 degrees Fahrenheit

  • 1. Place pecans in baggie and let children beat them with wooden spoon to break into small pieces. Explain that after Jesus was arrested, He was beaten by the soldiers. John 19:1-3 2. Let each child smell the vinegar. Put 1 tsp into mixing bowl. Explain that when Jesus was thirsty on the cross, He was given vinegar to drink. John 19:26-30 3. Add egg whites to vinegar. Eggs represent life. Explain that Jesus gave His life to give us life. John 10:10-11 4. Sprinkle a little salt into each child's hand. Let them taste it and brush the rest into the bowl. Explain that this represents the salty tears shed by Jesus' followers, and the bitterness of our own sin. Luke 23:27 5. So far the ingredients are not appetizing. Add 1 cup sugar. Explain that the sweetest part of the story is that Jesus died because He loves us. He wants us to know and belong to Him. Ps. 34:8, John 3:16 6. Beat mixer on high speed for 12-15 mn. until stiff peaks are formed. Explain that white stands for the purity in God's eyes of those whose sins have been cleansed by Jesus. Isaiah 1:18, John 3:1-3 7. Fold in broken nuts. Drop by teaspoonfuls onto a wax paper covered cookie sheet. Explain that the mounds represent the rocky tomb where Jesus' body lay. Matt. 27:57-60 8. Put the cookie sheet in the oven, close the door, and turn oven OFF. Give each child a piece of tape and seal the oven door. Explain that Jesus' tomb was sealed. Matt 27:65-66 9. Go to bed! Explain that it may be sad to leave the cookies in the oven over night. Jesus' followers were in despair when the tomb was sealed. John 16:20&22 10. On Easter morning, open the oven and give everyone a cookie. Noticed the cracked surface and take a bite. The cookies are hollow! On the first Easter, Jesus' followers were amazed to find the tomb open and empty. Matt. 28:1-9 He is Risen!
