ONE HOUR BUTTERMILK ROLLS



One Hour Buttermilk Rolls image

4 Tbsp butter cut into slices
2/3 cup buttermilk
3/4 cup water
4 cups flour, divided
3 Tbsp sugar
1 Tbsp rapid rise yeast
1 tsp salt

Steps:

  • Preheat over to warm, 170 degrees.
  • Place butter, buttermilk and water into a microwave safe bowl. Microwave until butter is mostly melted and the liquid reaches 115-120 degrees. Mixture will separate, don't worry. Add to the bowl of stand mixer. Attatch the dough hook.
  • Add in 3 cups of the flour, sugar, yeast and salt. Turn on low speed and mix until combined. With remaining 1 cup of flour, add a little at a time until the dough cleans sides of bowl. Usually, 1/2 cup of the flour during this step.
  • Allow dough knead on medium low for 4-5 minutes. Transfer dough to a countertop sprayed with non-stick cooking spray.
  • Divide dough into two equal pieces. Then cut each piece into 6 pieces. Roll each piece into a round ball. Place into a lightly greased 9 x 13 inch baking dish(s), placing 1/2 inch apart. Turn oven to off and place rolls in the warm oven for 20 minutes.
  • Remove rolls from oven and preheat oven to 375 degrees. Lightly brush tops of rolls with melted butter. Place rolls in the 375degree oven and bake for 12-14 minutes, until golden brown on top. Brush with additional melted butter if desired and serve. For best results serve warm. Makes 1 dozen rolls.

This is a recipe I found this Holiday season. It is not an original, but I thought I would share it because it was really good. I made them with a ham to serve as little sandwiches on a buffet.

4 Tbsp butter
2/3 c buttermilk
3/4 c water
4 c flour
3 Tbsp sugar
1 Tbsp rapid rise yeast
1 tsp salt

Steps:

  • 1. Preheat oven to warm, 170 degrees F (for dough rising).
  • 2. Place butter, buttermilk and water into a heat proof bowl. Microwave until butter is mostly melted and between 115-120 degrees F.
  • 3. In a large bowl place flour, sugar, yeast and salt mix to combine. Add warm milk mixture with butter. Mix to form smooth dough. Transfer dough to a lightly floured countertop. Knead several minutes untill firm dough forms.
  • 4. Cut into 12 equal pieces and place onto lightly oiled sheetpan. Place into warm oven and let rise in warm oven for 20-30 minutes.
  • 5. Bake for 12-14 minutes at 350, until just barely turning golden brown on top. Remove, brush with melted butter and serve.

1 package (1/4 ounce) active dry yeast
1/4 cup warm water (110° to 115°)
1 cup plus 2 tablespoons warm buttermilk (110° to 115°), divided
1/2 cup plus 1 teaspoon softened butter, divided
1 large egg, room temperature
1/3 cup sugar
1 teaspoon salt
4 cups bread flour

Steps:

  • Dissolve yeast in warm water until foamy. In a large bowl, combine 1 cup buttermilk, 1/2 cup butter, egg, sugar, salt and yeast mixture, then add 3 cups flour; beat on medium speed until smooth, 1 minute. Add remaining flour, 1/4 cup at a time, to form a soft dough., Turn dough onto a lightly floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour., Punch down dough. Turn onto a lightly floured surface; divide and shape into 20 balls. Place in a greased 13x9-in. pan. Cover with a kitchen towel; let rise in a warm place until almost doubled, about 45 minutes., Preheat oven to 350°. Brush rolls lightly with remaining buttermilk and butter. Bake until golden brown, 20-25 minutes. Cool in pan 20 minutes. Remove to a wire rack; serve warm.

Got this off the internet (somewhere!) a few years ago. Absolutely delicious - they will be gobbled up quickly! You can make them in an hour, but of course the longer you can let them rise, the better!

2 1/4 teaspoons dry yeast or 1 package yeast
1/4 cup sugar
2 tablespoons water
3/4 cup buttermilk
1/4 cup canola oil
1/2 teaspoon salt
2 1/4 cups flour
1/4 teaspoon baking soda
2 tablespoons butter or 2 tablespoons margarine (butter, especially Lurpak Danish butter is of course best)

Steps:

  • Combine yeast and sugar in large bowl.
  • Set aside.
  • Heat the buttermilk and water in the microwave until warm- NOT HOT!
  • About 45 seconds to 1 minute.
  • Pour the buttermilk slowly into the yeast/sugar mixture until combined.
  • Allow this mixture to sit for 5 minutes.
  • Add oil and dry ingredients, mixing until a soft dough forms.
  • Allow the dough to rest for about 10 minutes.
  • While the dough is resting, melt the butter in a 9" round (dark) cake pan.
  • Spray your hands with butter or cooking spray, and scoop out a piece of dough (about 2-3 T. size).
  • Roll it into a ball in your hands.
  • Drop the ball into the pan, and roll it around in the butter.
  • Repeat this process with the remaining dough, buttering hands again as needed.
  • You will wind up with about 12 rolls.
  • Place the pan in a warm place to rise, for 30-60 minutes.
  • Longer is better, of course.
  • Preheat the oven to 425, and bake for 8-12 minutes until golden brown.
  • You don't need butter with these!

These homemade buttermilk dinner rolls simply cannot be beat! So soft and fluffy with the teensiest hint of tangy buttermilk, and baked and ready to eat with a big pat of butter or jam in just 45 minutes!

6 tablespoons butter (divided)
1 cup buttermilk
2 packets Fleischmann's RapidRise® Yeast
4 tablespoons honey
½ teaspoon salt
1 egg
3 ½ - 4 cups all-purpose flour (as needed)

Steps:

  • Preheat the oven to 400 degrees and butter a 9x13 inch pan.
  • Add buttermilk and 4 tablespoons butter to a liquid measuring cup. Microwave for 20 seconds at a time until butter is mostly melted. Buttermilk should be very warm but you should still be able to touch it without burning your finger (about 110 degrees).
  • In a large bowl, combine honey and yeast.
  • Whisk in buttermilk and butter mixture.
  • Whisk in salt and egg.
  • Add 2 1/2 cups flour.
  • Mix (by hand, or with an electric hand mixer, or you can do this in the bowl of a stand mixer fitted with a dough hook attachment) until flour is completely incorporated.
  • Gradually add more flour, 1/4 cup at a time, until dough comes together just enough to form a ball. (It will stick be quite sticky! You should be able to handle it with heavily floured hands.)
  • With floured hands, transfer to a lightly floured surface (be careful not to use too much flour as it will dry out your dough) and knead for 4-5 minutes until dough is smooth and elastic.
  • Divide dough into 12 equal-size pieces and roll each into a ball. Place 1 inch apart in prepared pan.
  • Cover pan tightly with plastic wrap and let dough rise for 10 minutes in a warm place (I place mine near the preheated oven).
  • Uncover, and bake in preheated oven for 15-20 minutes until golden brown on top.
  • Brush immediately with remaining 2 tablespoons butter and serve.

I love the flavor of buttermilk and sourdough in breads and biscuits. These are yeast-risen but can be made with sourdough alone. Longer fermentation times are needed for that. Rising times are included in the preparation times.

3 cups bread flour (384 g)
1 1/4 cups buttermilk (285 g at room temperature)
3/4 cup sourdough starter (170 g of 100% hydration or thickness of mashed potatoes)
2 tablespoons butter (33 g softened)
1 1/2 teaspoons table salt (9 g)
1 1/4 teaspoons instant yeast (6 g)

Steps:

  • Refresh the sourdough starter the night before.
  • Mix the buttermilk, butter, yeast and starter until blended uniformly.
  • Add flour and salt and mix thoroughly, cover and let rest for 20 minutes.
  • Knead for 3 to 4 minutes and stretch and fold the dough, letter style, top to bottom and side to side.
  • Place in a straight sided clear container and let rise for 15 minutes.
  • Stretch and fold the dough and replace in the container to rise until double in volume.
  • Divide into 16 uniform pieces weighing 55 g each and shape into balls.
  • Place on parchment paper and cover with oiled plastic.
  • Let rise until 1 1/2 times it's original volume (I place one roll in a small straight sided glass to judge the rise).
  • Apply an egg wash (1 egg white or egg and 1 tablespoon of water well mixed) and place in a 375F oven near the top of the oven.
  • Bake for 8 min and rotate pan 180 degrees. Bake 8 more minutes until internal temperature is 205°F.
