Ditalini are little pasta tubes, about as long as they are wide. If you can't find ditalini, you can substitute elbow macaroni. This makes an excellent pot luck dish.

1 cup uncooked ditalini
2 tablespoons vegetable oil
1/3 cup white wine vinegar
2 tablespoons sugar
1 garlic clove, crushed
1 teaspoon dry mustard
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper
2 medium top quality vine-ripened tomatoes, cut in 1/2-inch cubes
1 small red onion, cut in 1/2-inch pieces
2 celery ribs, diced
1 cup frozen green pea, defrosted, drained
1/2 cup raisins
1/4 cup roasted sunflower seeds
1/2 cup mayonnaise

Steps:

  • Cook pasta in boiling salted water until tender. Drain in a colander then immerse in cold water until pasta is cool. Drain thoroughly and place in a bowl with the vegetable oil. Toss until pasta is coated evenly with the oil. Cover and refrigerate while preparing the vegetables.
  • Place tomatoes, red onion, and celery in a bowl with a tight-fitting lid. Whisk together vinegar, sugar, garlic, dry mustard, salt, and pepper. Pour over vegetables, cover bowl, and let marinate for several hours in the refrigerator.
  • Drain the marinated vegetables, reserving the liquid. Combine vegetables, cooked pasta, peas, raisins, and sunflower seeds in a large bowl.
  • Whisk the mayonnaise into the reserved marinade and pour over salad. Toss gently to mix. Cover and chill until ready to serve.

SHRIMP AND ROASTED FENNEL DITALINI

Number Of Ingredients 9

1 pound (16 to 20) extra large shrimp, shells intact, thawed if frozen
1 teaspoon fennel seeds
1 teaspoon salt, preferably sea salt, divided
1 fennel bulb, halved and sliced crosswise (chopped fronds for garnish, optional)
4 cloves garlic, chopped
2 tablespoons olive oil
1/2 teaspoon freshly ground black pepper
Grated zest of 1 lemon (1 julienned strip for garnish, optional)
1/2 pound whole-wheat ditalini

Steps:

  • Heat oven to 450°F. Shell shrimp, but keep tails intact, if desired; reserve shells. In a small pan over medium heat, toast fennel seeds until golden brown, 5 minutes; crush. In a bowl, toss shrimp with fennel seeds. In same pan, bring 1 cup water to a boil with 1/2 teaspoon salt and reserved shells; reduce heat and simmer, partially covered, 30 minutes. Remove and discard shells; simmer until stock reduces by half, 5 minutes. In a roasting pan, place sliced fennel, garlic, oil, pepper and remaining 1/2 teaspoon salt; toss. Roast until fennel is tender, 20 minutes. Stir in shrimp, stock and zest; roast until shrimp are just cooked through, 5 minutes. Cook pasta as directed on package until al dente. Drain pasta, reserving 1 cup cooking liquid. Add pasta to roasting pan; roast until pasta is completely cooked, adding reserved liquid a little at a time and stirring to reach desired consistency, 5 to 10 minutes. Serve garnished with julienned zest and fennel fronds, if desired.

CATALINA PASTA SHRIMP SALAD

I came up with this recipe years ago when I went to make pasta salad but didn't want a mayo base salad for a picnic potluck. Shrimp & catalina dressing go perfectly together.

1 pkg ditalini pasta (little tiny tube shaped pasta)
1 small onion chopped
2 celery stalks - chopped in small slices
1 small pkg frozen shrimp (i have also used canned shrimp)
1 small bottle of cantalina dressing (i have used fat free too & it's also good)

Steps:

  • 1. Cook pasta according to package directions, thaw shrimp, combine all ingredients.
  • 2. Chill for several hours. The longer it sets the better it gets. Lasts quite a while in the fridge.

1/4 cup mayonnaise
2 -3 teaspoons prepared mustard (to taste)
1 teaspoon chili powder
1 teaspoon cajun seasoning
1 stalk celery, chopped
2 tablespoons onions, chopped
2 (4 ounce) cans sliced olives
salt

Steps:

  • Cook macaroni according to directions.
  • Drain in colander, rinse with cold water.
  • Mix mayonnaise and mustard together to taste.
  • Add remaining ingredients and mix well.
  • Chill in refrigerator several hours before serving.

1 pound cooked shrimp, chilled
2 tomatoes, chopped
1 green bell pepper, chopped

2 cloves garlic, minced
2 teaspoons olive oil
2 teaspoons Italian seasoning (such as Mrs. Dash®)

  • Bring a large pot of lightly salted water to a boil; cook rotini at a boil until tender yet firm to the bite, about 8 minutes. Run pasta under cold water and let cool in a large mixing bowl.

1 teaspoon olive oil
12 uncooked medium shrimp
1 cup ditalini pasta
¼ cup mayonnaise
¼ cup sour cream
¼ cup frozen peas, thawed and drained
1 stalk celery, thinly sliced on the diagonal
2 tablespoons diced red onion
½ tablespoon lemon juice
1 teaspoon dried dill weed
1 pinch white sugar
salt and ground black pepper to taste

Steps:

  • Heat oil in a cast iron skillet over medium-high heat. Cook shrimp until they are bright pink on the outside and the meat is opaque, about 5 minutes. Immediately immerse shrimp in a bowl of cold water and let cool, at least 10 minutes.
  • Meanwhile, bring a large pot of lightly salted water to a boil. Add pasta and cook, stirring occasionally, until tender yet firm to the bite, 10 to 11 minutes.
  • Peel and devein shrimp. Drain pasta and transfer to a large bowl.
