LOADED TATER TOT NACHOS RECIPE

When it comes to comfort food it doesn't get much better than a plateful of these spicy tater tot nachos. Loaded with four-bean chili, cheddar cheese and a whole lot of deliciousness there sure to please your friends and family!

Number Of Ingredients 17

4 Jalapeños (sliced)
½ cup apple cider vinegar
½ cup water
1 clove garlic (sliced)
1 tbsp sugar
1 tsp sea salt
¼ cup sour cream
¼ cup heavy cream
juice from one lime
sea salt to taste
4 cups tater tots
1 cup chili with beans (your favorite canned variety or homemade)
1 cup grape tomatoes (sliced)
1 cup cheddar cheese (shredded)
3 slices bacon (cooked and chopped)
1 bunch scallions (sliced )
1 tbsp cilantro (finely chopped)

Steps:

  • In a small saucepan combine the vinegar, water, garlic, sugar, and salt and bring to a boil.
  • Add the sliced jalapeños to the pickling mixture stirring well. Remove from heat and allow to sit for 10-15 minutes.
  • Remove the jalapeños from the liquid storing with the liquid in a jar with a lid. Refrigerate until ready to use.
  • Mix sour cream, heavy cream, sea salt and lime juice together in a small bowl. Allow it to sit unrefrigerated for 90 minutes. Cover and refrigerate until needed
  • Preheat oven to 450-degree F.
  • Place tater tots on a sheet pan lined with parchment into the preheated oven. Bake for 25-30 minutes or until crunchy.
  • Carefully mound the crispy tater tots on the parchment sheet.
  • Mix in the grape tomato halves.
  • Add heated chili to the tots, then top with shredded cheddar.
  • Place back into the 450-degree F oven for 5 minutes or until the cheese has melted.
  • Carefully remove the parchment sheet from the baking pan and slide the Tot Nachos onto your serving dish.
  • Garnish with pickled jalapeños, diced bacon, scallions, cilantro and lime crema.
  • Serve and enjoy!

DIRTY TATER CASSEROLE

I was a little tired of the same old tater tot casserole I've always made, so I decided to add a little more flavor to it and wow, after cooking it, it didn't last long! It is a little on the spicy side, so if spicy is not your thing then you may want to substitute the dirty rice with maybe a regular brown grain rice.

1 1/2 bag(s) tater tots, tater crowns, etc.
2 can(s) cream of mushroom soup
1 pound(s) lean ground beef
1 box(es) tony chachere's dirty rice
1 1/2 package(s) colby/jack cheese
- (optional spices; garlic pepper, onion powder)

Steps:

  • First step, Pre-heat oven to 400 degrees. Usually I go ahead and get the tots out of the freezer and set them on the counter while preparing everything else. That way they can be thawing out a little before adding them to the casserole pan.
  • Second step is browning the ground beef. Since you'll be combining it with the dirty rice you might as well just follow the directions on the box, that's what I did. Although, while browning the meat I did add a few sprinkles of Garlic Pepper seasoning (optional) to cook in during this process.
  • Third step, drain meat and add in the dirty rice along with 2 1/4 cups of water. Bring to a boil/ reduce heat and simmer for about 20-25 minutes/ take off heat and let stand for another 5 minutes. Don't forget to stir occasionally while cooking the rice/meat mixture. While the rice/meat is "breathing" (lol) I went ahead and tossed the cans of Cream of Mushroom soup in a pot along with about a 1/3 cup of water ... just enough to smooth it out a little. (cook and set aside after done)
  • Fourth step, I take the tots (no Napoleon Dynamite jokes please) and line the bottom of an 11 x 7 bake pan with them and put the remainder to the side for now. I sprinkled a little more Garlic Pepper seasoning and some Onion Powder seasoning (both are optional) over the top of the tots. I also added about two handfuls of the Colby Jack cheese over the top of them. The soup goes in next, poured evenly over the entire pan, then add in the dirty rice on top of that and smooth it out even. Take the remaining tots and cover as much of the top you can with them. Don't fret if you can't cover the entire top because there weren't enough (depending on how big the bag was). Then take the rest of the cheese and sprinkle generously over the top of the casserole until completely covered.
  • Final step, put in the oven (still no oven here at the casa, so had to use the trusty old roaster) and bake for about 25-35 minutes at 375, making sure the cheese has a nice golden brown look around the edges and bubbly. (Note - since oven temps may vary just make sure to keep an eye on it from time to time.) Take out and let cool for about 10 minutes before serving. Sides - Mini ears of corn, French style green beans, black-eyed peas, mixed greens, Ranch style beans, or no sides. It's that good by itself. If a little spicy is not your thing, then you could substitute the dirty rice with brown rice or something similar in fashion and/or leave out the additional spices. Also, since my crew doesn't like onions (and I do) the majority won out so I left those off the list of ingredients, but IF I had "control of the cards" they would have been finely chopped and sautéed then added to the dirty rice/meat pot and combined with the rest of the mix. Sneaky as I am and as you read above, I did sneak in a little of that onion powder. But the main thing ... they ate it up and loved it, which will always bring a big smile to the cook's face! It's a lot of fun to make and to eat. I think you will enjoy this recipe, especially when the weather is a little nippy outside!

1 (32 ounce) package frozen bite-size potato nuggets (such as Tater Tots®)
4 slices bacon
2 tablespoons butter
1 shallot, minced
2 tablespoons all-purpose flour
1 ½ cups whole milk
2 tablespoons sour cream
1 pinch ground black pepper
1 pinch nutmeg
1 ½ cups shredded sharp Cheddar cheese, divided
3 green onions, sliced
2 tablespoons sour cream, or to taste

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Arrange potato nuggets in a single layer on a baking sheet.
  • Bake in the preheated oven until lightly golden, 20 to 25 minutes.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels and chop coarsely.
  • Melt butter in a saucepan over medium heat; add shallot and cook until fragrant. Stir in flour and cook until light golden, about 2 minutes. Whisk in milk and 2 tablespoons sour cream; stir until smooth and thick, about 5 minutes. Season with black pepper and nutmeg. Stir in 1 cup Cheddar cheese until fully melted.
  • Transfer potatoes to a 9x13-inch baking dish. Sprinkle bacon on top. Pour cheese sauce over the potatoes. Sprinkle remaining 1/2 cup Cheddar cheese on top.
  • Bake in the preheated oven just until cheese melts, about 7 minutes. Remove from the oven; top with green onions and 2 tablespoons sour cream.

5 cups frozen tater tots
1/4 cup olive oil
Salt and freshly ground black pepper
1 1/2 tablespoons crushed garlic
3 tablespoons chopped flat-leaf parsley
1/2 cup grated Parmesan

Steps:

  • Preheat the oven to 400 degrees F.
  • Combine the tater tots and the olive oil in a bowl. Toss to coat, spread on a baking sheet and bake until golden brown and crisp, about 30 minutes.
  • Remove the tater tots from the oven, season with salt and pepper and transfer to a mixing bowl. To the taters, add the garlic, parsley and cheese. Toss to combine and serve immediately.

- olive oil

Steps:

  • Preheat oven to 400 degrees. Line a baking sheet with alumin foil? Stay with non stick cooking spray.
  • Scrub potatoes, dry then cut into bite size cubes. Place in a bowl. Sprinkle with onion soup mix. Stir to coat then place in single layer on baking sheet. Drizzle with olive oil. Bake for 20-30 minutes or unti fork tender.
