1/2 cup chopped onion
1/2 lb finely chopped fresh mushrooms
4 tablespoons butter
1 teaspoon dried tarragon
1/4 cup white wine
1/4 teaspoon salt
1/8 teaspoon fresh ground pepper
3 large white potatoes, peeled and cut into 1 x 2 inch chunks
1/4 cup water
1 cup milk

Steps:

  • Put onion, mushrooms and 2 tablespoons of the butter in 2-quart casserole.
  • Microwave on high power, uncovered, 2 minutes.
  • Stir in tarragon, wine, salt and pepper.
  • Microwave on high power for 5 to 7 minutes, until vegetables are very tender, stirring once.
  • Set aside to keep warm.
  • Put potatoes and water in 2-quart casserole, cover.
  • Microwave on high power for 14 to 16 minutes, until very tender, stirring twice.
  • Let stand, covered, 3 minutes.
  • Add the rest of the butter (2 tablespoons) to potatoes, mash.
  • Add mushroom mixture with its liquor and milk.
  • Whip until fluffy.
  • Add more milk if too thick.

4-5 baking potatoes
1 pkg dried onion soup mix
olive oil

Steps:

  • 1. Preheat oven to 425.
  • 2. Scrub or peel potatoes, cut into bite sized pieces. Place in bowl and drizzle with olive oil. Sprinkle with dry onion soup mix, stir to coat.
  • 3. Spray a baking sheet with cooking spray. Put potatoes on sheet. Bake 20-25 minutes or until fork tender.

OVEN-ROASTED DIRTY POTATOES



Oven-Roasted Dirty Potatoes image

3 large baking potatoes such as russets
2 tablespoons olive oil
1 teaspoon chopped fresh parsley
1/2 teaspoon paprika
1/2 teaspoon garlic powder
1/8 teaspoon black pepper

Steps:

  • 1. Scrub the potatoes, but do not peel them. Cut into 1/2-inch slices. 2. Place the potatoes and all of the remaining ingredients in a large plastic bag, seal, and shake until the slices are well coated. 3. Arrange the potatoes in a single layer on a shallow baking pan, and bake in a preheated 425°F oven for about 15 minutes, or until browned. Turn the slices and bake for another 15 minutes, or until the second side is browned. Serve hot.

1 pound bulk pork sausage or ground beef
2 1/2 cups water
1 package (8 ounces) ZATARAIN'S® Dirty Rice Mix, Original
1 tablespoon butter
4 to 6 eggs, lightly beaten
1/2 cup crumbled cooked bacon
3 tablespoons chopped green onion

Steps:

  • Cook meat in large skillet on medium-high heat until no longer pink. Drain fat. Add water and Rice Mix to skillet; bring to boil. Reduce heat to low; cover and simmer 25 minutes or until rice and potatoes are tender. Remove from heat. Let stand 5 minutes
  • Meanwhile, melt butter in another skillet on medium heat. Add eggs; cook and stir until firm
  • Stir cooked bacon and eggs into rice mixture until well blended. Sprinkle with green onions.
