- Put two martini glasses in the fridge to chill. Thread the olives onto two cocktail sticks and set aside.
- Fill a jug or mixing glass with the ice, then pour in the gin, vermouth and olive brine. Stir until the outside of the jug feels cold. Taste to make sure that it's icy cold and that you're happy with the dilution.
- Strain the mix into the chilled glasses and garnish with the olive skewers.

- Remove pimentos from olives. Stuff the olives with the blue cheese. Soak the olives in some vermouth with a splash of the olive juice while you prepare the drink.
- Pour ice into shaker.
- Pour a dash ofthe vermouth over the ice.
- Briskly shake in shaker for about 10 seconds then discard vermouth.
- Pour the vodka into the shaker with about a spoonful of olive juice (more/less to taste).

"Dirty martini" is a dirty word for many bartenders who find the drink - a martini with a salty slop of olive brine - unimaginative and unappetizing. Naren Young, a New York bartender, decided to create a better version, called Olives 7 Ways, with several bespoke ingredients. That cocktail, served at Saxon & Parole, is fairly complicated to make, so Mr. Young came up with yet another, easier variation for the home bartender.

- Combine vermouth and chopped olives in a sealed glass container and let sit for 3 days. Shake periodically.
- Chill a cocktail glass by filling it with ice or putting it in the freezer for about 5 minutes.
- In a mixing glass filled three-quarters full with ice, pour the gin and 1 1/2 ounces of the infused vermouth. Stir until chilled, about 30 seconds, and strain into the chilled glass. This is a very flavorful and robust dip that can be served with crudites' or with crackers, bagel chips, sesame sticks or any other crispy snack you may have on hand. A friend brought this to work, having purchased it at a gourmet store and everyone raved about it.
