FRENCH DIP STEAK SANDWICHES WITH HORSERADISH SAUCE



French Dip Steak Sandwiches with Horseradish Sauce image

1/2 cup sour cream
3/4 teaspoon prepared horseradish
1 teaspoon salt
1/4 teaspoon freshly cracked black pepper
1 1/2 cups French onion soup
1 1/2 cups beef broth
1/2 teaspoon granulated sugar
2 teaspoons Worcestershire sauce, plus more to taste
1/8 teaspoon salt, plus more to taste
Freshly cracked black pepper
Olive oil, for the grill pan
1 boneless rib-eye steak (about 8 ounces, 1-inch thick)
Salt and freshly ground black pepper

2 small baguettes, split in half lengthwise

Steps:

  • For the horseradish sauce: Combine the sour cream, horseradish, salt and pepper in a medium bowl. Cover and refrigerate to develop the flavors.
  • For the au jus: Combine the onion soup, beef broth, sugar, Worcestershire sauce, salt and 3/4 cold water in a saucepan and bring to a boil over medium-high heat.
  • Reduce heat and simmer 5 minutes. Taste and season with pepper and more salt if needed. Strain the mixture and discard the onions (if there were any in the soup.) Cover and keep warm.
  • For the steak: Heat a grill or grill pan over high heat. Oil the grill pan if needed. Season the steak with salt and lots of black pepper. Grill the steak for 2 to 3 minutes per side for medium rare. Let the steak rest, then thinly slice.
  • Spread the horseradish sauce on one side of each baguette. Dip the steak slices in the warm au jus and place on top of the bread with horseradish sauce, then place the other slices of bread on top. Transfer the remaining au jus to two dipping bowls and serve with the sandwiches for dipping.

Something different to do with cube steaks. I'm not a big fan of cube steaks, but these really are very good and great if you are on a budget! If you are feeling really naughty, melt a slice of Swiss cheese on top.

1 lb beef cube steak
2 tablespoons butter
1/3 cup water
1 teaspoon salt, per 1 cup instant beef bouillon
1 sliced fresh French bread
garlic salt, to taste
salt and pepper, to taste

Steps:

  • In a large skillet, melt the butter over medium-high heat. Then gently, place all the steaks in the skillet in a single layer.
  • Cook until the cubed steaks are golden brown, aprroximately three minutes each side. Season with salt and pepper.
  • When the cubed steaks are done, transfer them to the work surface.
  • For the gravy, drain the fat from the skillet. Pour water in the skillet and instant beef bouillon.
  • Set the oven at 550 degrees Fahrenheit or at broil mode. Place buttered French bread or hamburger bun halves on the baking sheet.
  • Sprinkle some garlic salt into the bread. Place the sheet into the broiler rack for about 4 inches from the heat.
  • Toast the bread until crispy and golden brown.
  • Sandwich the steaks over two toasted bread slices; cut in half.
  • Pour the gravy in small bowls.
  • The best part, each person can dunk the crispy cubed steak sandwich in the gravy.

1 1/2 lbs beef sirloin steaks, at room temperature
1 tablespoon olive oil
salt and pepper
3 half French baguettes, cut in half (or 6 smaller baguettes or rolls)
1/2 cup mayonnaise
1 head butter lettuce, leaves washed and dried
1 avocado, halved and sliced
1/2 cup olive oil
1/3 cup red wine vinegar
1 shallot, finely chopped
1 medium tomatoes, peeled, seeded and chopped
2 garlic cloves, minced
1 cup flat leaf parsley, chopped
1 teaspoon dried oregano
1 hot red pepper, finely chopped
1/4 teaspoon salt

Steps:

  • To make chimichurri sauce, combine all ingredients from 1/2 cup olive oil through 1/4 tsp salt in a bowl. Set aside.
  • Preheat a barbecue grill or grill pan over medium-high heat. Brush steaks with oil, then season with salt and pepper. Cook steaks for 3 minutes each side for medium-rare or until cooked to your liking. (The thickness of the steaks will also determine the amount of time.) Cover loosely with foil and rest for 5 minutes.
  • Cut a slit lengthwise along top of baguettes, cutting almost to base. Pull them open without splitting. Brush inside with mayonnaise, then fill with lettuce and avocado. Thinly slice steaks across the grain, then divide among sandwiches. Spoon sauce over the top of the sandwiches and serve.

This is an easy, quick way to prepare cube steaks. Cube steak is an inexpensive cut of beef, which I've used in the past for salisbury steak. I wanted to cook these steaks but not in a heavy gravy, so this is how lightened them up. You could also substitute flank steak if you can't find cube steaks. DH raved over these and thought I had spent much more time preparing than I actually did. Note: If you cannot find Dale's Steak Seasoning, a good substitute is whisking together 1 tbs. soy sauce and 1 tbs. Worcestershire sauce.

2 cube steaks (approximately 4-inch x 4-inch sized pieces)
2 tablespoons Dale's Steak Seasoning, reduced sodium blend (or 1 tbs. soy sauce and 1 tbs. Worcestershire sauce)
1/4 teaspoon black pepper, freshly ground
1/2 cup Baby Spinach, whole leaves
1/4 cup basil, whole leaves
1/4 cup red bell pepper, sliced thin
1/4 cup goat cheese, crumbled

Steps:

  • Preheat broiler to medium heat or move oven rack to second position under the broiler (depending on what type of oven you have).
  • Pound cube steaks to 1/2-inch thickness (if they aren't already thin enough). Drizzle Dale's Steak Seasoning evenly over both sides of each steak (a little goes a long way) and season with black pepper.
  • Layer baby spinach leaves, basil leaves and sliced red bell pepper atop each steak. For easier rolling, make sure pepper slices are arranged parallel to the direction you plan to roll the steaks. Sprinkle with goat cheese atop these layers to 1/2-inch from outside edge of each steak.
  • Roll each steak up (like a jelly roll), being careful not to spill out the stuffing, and secure open ends with toothpicks.
  • With toothpick-secured sides up, broil steaks for five minutes. Turn over and broil for another five minutes or until desired doneness.
  • Carefully remove toothpicks. This may be served sliced cross-wise and arranged on each plate or whole for each person to slice his/her own.

4 hard rolls, split
½ cup mayonnaise
3 cloves garlic, minced
1 tablespoon Parmesan cheese
3 tablespoons olive oil
2 pounds round steak, thinly sliced
1 large onion, sliced and quartered
1 pinch coarse sea salt
½ teaspoon Worcestershire sauce
⅛ teaspoon liquid smoke
8 (1 ounce) slices provolone cheese
½ teaspoon Italian seasoning

Steps:

  • Preheat an oven to 500 degrees F (260 degrees C). Split the rolls open and toast them on a baking sheet in the oven while it is preheating. Mix together the mayonnaise, garlic, and Parmesan cheese in a small bowl. Refrigerate until ready to use. Remove the rolls from the oven when toasted as desired.
  • Heat olive oil in a large skillet over medium-high heat. Carefully place the sliced steak and onions in the pan and season with sea salt, Worcestershire sauce, and liquid smoke. Cook and stir until the steak is browned and the onion is tender, about 10 minutes.
  • Generously spread the prepared garlic-Parmesan mayonnaise on both halves of the toasted rolls. Divide the steak and onion mixture evenly among the bottom halves of the rolls, piling them high.
