SOUTHERN CHOW CHOW RELISH



Southern Chow Chow Relish image

Transform any meal with a spoonful of my chow chow recipe, a classic Southern relish that's a flavorful combination of tart, sweet, crunchy, and spicy.

Number Of Ingredients 12

12 medium onions (4 cups)
1 medium head cabbage (4 cups)
10 green tomatoes (4 cups)
12 green bell peppers
6 sweet red bell peppers
½ cup coarse salt
6 cups granulated sugar
2 tbsp mustard seed
1 tbsp celery seed
1 ½ tsp turmeric
4 cups white vinegar
2 cups water

Steps:

  • Chop vegetables finely using a food processor or grinder. Place the chopped vegetables in a porcelain or glass container and sprinkle with the salt. Cover and let them stand overnight.
  • Place the vegetables in a large colander and rinse very well under cold running water. Divide into smaller batches if necessary.
  • Drain thoroughly and place in a large stockpot. Combine remaining ingredients and pour over chopped vegetables. Heat to boiling and then boil for 4 minutes.
  • Ladle into clean pint jars that have been sterilized in boiling water. Seal with sterilized lids according to manufacturer instructions. Process in a boiling water bath for 10 minutes.

I used this when I was a preschool teacher on our dinosaur week. I got the recipe off of Mrs. Bee's Busy Classroom.

1/4 cup(s) dirt (cocoa)
1/2 cup(s) swamp water (milk with a little green food coloring)
2 cup(s) crushed bones ( sugar)
1/2 cup(s) fat (butter or margarine)
2 cup(s) dead grass (uncooked oatmeal)
1/2 cup(s) squashed bugs (peanut butter)

Steps:

  • Mix dirt and swamp water. Add crushed bones and fat. Boil about 3 minutes.
  • Add squashed bugs and dead grass, and stir until melted.
  • Remove from heat and stir until mix begins to thicken.
  • Drop by Tbs. onto waxed paper. Cool, eat and Enjoy!!! Kids will LOVE these.

DINOSAUR CHILI

Some types of dinosaurs eat plants (zucchini), others eat meat (beef) and the not-yet-discovered Mole dinosaurs prefer chocolate! A fast, affordable one pot meal for kids of all ages. You can use any canned pasta for kids (Spaghetti-O or other shapes) to make it fun; shown in my photo are Annie's Organics All-Stars.

2 tablespoons butter
2 tablespoons semi-sweet chocolate chips
1 cup purple onion, diced
1 cup zucchini, diced (peel it for picky eaters)
1 lb ground beef
1 1/4 ounces taco seasoning
1 (12 ounce) can tomato paste
1 (14 ounce) can kidney beans, rinsed and drained
1 tablespoon cumin
1 (15 ounce) can pasta (Chef Boyardee Mini Dinosaurs)
cheddar cheese (optional topping)

Steps:

  • In a large pot, melt the butter over medium-high heat; add the chocolate chips and stir constantly until they melt. Add the onion and keep stirring - it will bubble and smell delicious as it caramelizes. Add the zucchini and keep stirring from time to time for 2-3 more minutes, until the veggies are cooked.
  • Add the meat and taco seasoning. Stir together and cook for five minutes or so, until the meat appears cooked.
  • Add the kidney beans, tomato paste, 1/2 cup water, cumin and full contents of the mini dinosaur can. Stir everything together.
  • Reduce heat and simmer for at least 10 minutes.
  • Serve in bowls, topping with cheddar cheese if desired!
