cans domestic beer (12 ounces each)
1/2 cup cider vinegar
2 cups water
2 tablespoons Old Bay Seasoning
2 lbs large shrimp, in the shell
2 tablespoons minced garlic
2 tablespoons creole seasoning
2 cups brown sauce
1 cup prepared horseradish
2 tablespoons Worcestershire sauce
1/4 lime, juice of
1/4 lemon, juice of
2 teaspoons Tabasco sauce

Steps:

  • Pour the beer, vinegar, and water into a high-sided pan. Add the Old Bay Seasoning, cover, and blast the heat up high. When it boils rapidly, add the shrimp.
  • Cover again and cook for 2 minutes, or til the shrimp turn pink and the flesh is just opaque.
  • Drain the shrimp in a colander and cover with a layer of ice to chill them down just enough to stop the cooking.
  • Throw the shrimp into a bowl and toss with the garlic and Creole Seasoning, (They can be eaten warm or chilled.).
  • Whip all of the ingredients for the cocktail sauce together in a bowl, and serve with that mess of shrimp.

Number Of Ingredients 20

1/4 cup vegetable oil
1 cup minced onion
1/2 cup minced green pepper
1 jalapeño pepper, seeded and minced
Pinch each of kosher salt and black pepper
2 tablespoons minced garlic
1 can (28 ounces) tomato sauce
2 cups ketchup (preferably Heinz)
1 cup water
3/4 cup Worcestershire sauce
1/2 cup cider vinegar
1/4 cup lemon juice
1/4 cup molasses
1/4 cup cayenne pepper sauce
1/4 cup spicy brown mustard
3/4 cup dark brown sugar, packed
1 tablespoon chili powder
2 teaspoons coarsely ground black pepper
1/2 teaspoon ground allspice
1 tablespoon Liquid Smoke (optional)

Steps:

  • Pour the oil into a large saucepan and set over medium-high heat. Toss in the onions, green peppers, and jalapeños and give them a stir. Season with a pinch of salt and pepper and cook til soft and golden. Add the garlic and cook for 1 minute more. Dump in everything else except the Liquid Smoke. Bring to a boil, then lower the heat so the sauce simmers. Simmer for 10 minutes. Swirl in the Liquid Smoke and let the sauce cool. Pour it into a container, cover, and store in the fridge til ready to use.
  • Variation: Hot BBQ Sauce
  • Add 2 or 3 seeded and minced habanero peppers (about 1 1/2 teaspoons to 1 tablespoon) along with the onions, peppers, and jalapeños. Also add 1/2 teaspoon cayenne pepper along with the other ingredients for extra punch.

I have always disliked baked beans, but I was served and couldn't stop eating these. A few years later I found out it was a recipe from Dinosaur Barbecue, a famous restaurant based in Rochester, NY. I searched the internet for a version of the recipe not using Dinosaur BBQ's "Mutha Sauce," and doubled the amount of Italian sausage to make them really meaty. I cooked this in a cast-iron dutch oven and brought it camping the next day. It was amazing reheated and great with potatoes baked in the fire. It's almost like chili and very filling. NOTE: I'm not sure about the serving amount. This really makes plenty, and everyone ate several big helpings.

2 (28 ounce) cans baked beans (I used Bush's Homestyle. Choose a less-sweet variety.)
2 tablespoons olive oil
1 onion, chopped
1 green bell pepper, finely chopped
2 garlic cloves, minced (or more, if you love garlic)
1 lb hot Italian sausage, casings removed
1 tablespoon Dijon mustard
1 tablespoon ketchup
2 tablespoons Worcestershire sauce (I accidentally only put 1 in when I made this, still loved it)
1 tablespoon cider vinegar
1 tablespoon molasses
1 teaspoon chili powder
salt and pepper, to taste

Steps:

  • Heat olive oil to medium-high in a large saucepan, and cook onion and pepper until soft, adding salt and pepper.
  • When softened, add garlic and cook another minute.
  • Add sausage, crumbling it into small pieces while it cooks.
  • Drain some of the liquid from the beans- make it about the same level in the can as the beans themselves. Mix into the sausage/veggies.
  • Turn the heat down to medium-low and add remaining ingredients. Cook for 5-7 minutes.
  • Serve immediately, or let cool and reheat. We loved this the next day, as the flavors had a chance to really mix.

  • Add a pinch of sa1t and pepper and cook until vegetables are soft and onions are golden.
  • Add the garlic and cook for 1 minute more. Add remaining ingredients except the Liquid Smoke.
  • Bring to a boil, then lower the heat so the sauce simmers.
  • Simmer for 10 minutes.
  • Turn off heat, add the Liquid Smoke and let the sauce cool.
  • Pour it into a container, cover, and store in the fridge until ready to use.

John Stage almost always leaves something out in the recipes he publishes so they are just a little off. In this case, I think he just wrote "creole seasoning" when in fact, this stuff tastes most authentic with a spice they sell around here in the restaurant and in stores called "Cajun Foreplay." Use it generously. Either way these are delicious, especially served with Dinosaur BBQ Cocktail Sauce (recipe # 295318). Not for wimps!

2 (16 ounce) bottles beer (or 12 oz cans)
1/2 cup cider vinegar
2 cups water
2 tablespoons Old Bay Seasoning
2 lbs shrimp, in shell large
2 tablespoons garlic, pressed (or garlic powder, to taste)
2 tablespoons creole seasoning (use Cajun Foreplay if possible)
dinosaur bbq seafood cocktail sauce (for serving)

Steps:

  • Pour beer, vinegar, and water, and Old Bay in a pot over medium to high heat and cover.

  • Cover with garlic and seasoning. Chill thoroughly in refrigerator until serving.
  • Serve with Dinosaur BBQ Cocktail Sauce.
