- In a small bowl, combine the first eight ingredients. Crumble salmon over mixture and mix well. Shape into four patties. , In a large nonstick skillet coated with cooking spray, cook patties in oil over medium heat for 5 minutes on each side or until browned.

DILLY SALMON
This moist and tender salmon fillet is marinated in a tangy dill sauce. The attractive entree comes from Karla Sprague of Hilton Head Island, South Carolina.

- In a small bowl, whisk the mustard, wine, brown sugar, vinegar and soy sauce until well blended. Gradually whisk in oil. Stir in dill and pepper. Place salmon in a shallow glass dish. Pour 2 cups marinade over salmon. Cover and refrigerate for 1 hour. Cover and refrigerate remaining marinade for basting., Drain and discard marinade. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Place salmon skin side down on grill. Grill, covered, over medium-hot heat or broil 4 in. from the heat for 5 minutes. Baste with some of the reserved marinade. Grill or broil 7-9 minutes longer or until fish flakes easily with a fork, basting occasionally.

FRIED (DILLY) SALMON PATTIES
This reminds me of deviled crab but is made with canned salmon. Its a recipe I put together on short timing.

- Drain canned salmon.
- In a medium bowl, combine salmon,green pepper, onion, dill relish, garlic Italain breading and egg.
- Mix well and make into patties.
- Heat olive oil in frying pan.
- Fry patties on low to medium heat until browned.

DILLY CREAM OF SALMON SOUP
This is an extremely easy cream of salmon soup that can be made with half and half instead of heavy whipping cream (probably even whole milk although I haven't tried that...yet).

Steps:
- Peel and dice potatoes and onions 1/3-1/2" cubes.
- Carefully skin the salmon and cut into 1/2" wide strips; make one horizontal cut to halve strips then put salmon in fridge.
- In a stock pot add water, potatoes, onions and salt.
- Bring to a boil over moderate heat (might take awhile on an electric stove).
- Turn heat to low and simmer for an additional ten minutes (skim any foam).
- Finely chop dill
- Add half and half/cream and bring to boil over moderate heat.
- When slightly thickened, reduce to low heat.
- Add salmon and cook for 3 minutes on low heat.
- Add dill and stir.
- Add ground black pepper to taste then mix in 5 tbsp of softened butter and/or margarine (I like to use 2 tbsps butter and 3 margarine).
- Add mace if you have it, stir and cook for another 5 minutes.
- Taste the soup and if necessary, add salt.
- Done!

- Pat dry potatoes. In a large skillet heat 1/4 cup olive oil over medium heat. Add hash browns in an even layer and push down with spatula. Cook 8-10 minutes on first side. Flip hash browns and push down again to form even layer. Cook an additional 7-8 minutes on the second side till golden brown. Set aside.
- Finely mince most of the dill. Leave a couple sprigs out for garnish. Add minced dill to creme fraiche or sour cream until combined.
- To assemble: Divide hashbrowns into 16 even piles and top with thin piece of smoked salmon, 1 tablespoon dill creme fraiche and garnish with dill sprig.
- Makes 16 appetizer portions.
