2 steaks (8 ounces) high quality ahi tuna (sashimi grade recommended; wild caught if possible*)
1/2 tablespoon neutral oil
3/4 teaspoon kosher salt
Fresh ground black pepper
For serving: Garlic Herb Sauce (optional)

Steps:

  • Allow the tuna steak to come to room temperature by letting it stand for at least 20 minutes.
  • Pat the tuna dry. Sprinkle it liberally with kosher salt and fresh ground black pepper on both sides to get a nice even coating (about 3/4 teaspoon kosher salt for 8 ounces).
  • Heat the oil in a medium skillet over medium high heat.
  • Add the tuna steak and cook 1 to 2 minutes per side, until lightly browned on the outside but still rare on the inside. The tuna will continue cooking while sitting. For a medium-rare tuna steak, the internal temperature should be 130 degrees Fahrenheit when measured with a food thermometer at the thickest point.
  • Cool for 2 minutes. Then slice the tuna against the grain into ½-inch slices and serve immediately, with the sauce if desired.

½ cup lemon juice
½ cup olive oil
2 1 1/4-inch-thick tuna steaks
¼ cup spicy brown mustard
1 teaspoon mustard powder
3 tablespoons white sugar
2 tablespoons white wine vinegar
⅓ cup olive oil
3 tablespoons dried dill

Steps:

  • Combine the lemon juice with 1/2 cup olive oil in a sealable plastic bag; seal and shake. Add the tuna steaks and store in refrigerator to marinate while the grill preheats.
  • Preheat an outdoor grill for high heat, and lightly oil the grate.
  • Whisk the brown mustard, mustard powder, sugar, vinegar, and 1/3 cup olive oil together in a bowl; stir in the dill.
  • Remove the tuna from the marinade and discard the marinade; cook the steaks on the preheated grill until the fish flakes easily with a fork, about 6 minutes per side. Drizzle the steaks with the mustard and dill sauce to serve.

4 tuna, swordfish or other firm fish steaks, 3/4 inch thick (4 ounces each)
1/2 teaspoon peppered seasoned salt
1 small red onion, thinly sliced (1/2 cup)
3/4 cup orange juice
1 tablespoon chopped fresh or 1/4 teaspoon dried dill weed
1 tablespoon butter or margarine
1 teaspoon grated orange peel, if desired

Steps:

  • Spray 10-inch nonstick skillet with cooking spray; heat over medium-high heat. Sprinkle both sides of fish with seasoned salt. Add fish to skillet; reduce heat to medium-low. Cover and cook 6 to 8 minutes, turning once, until tuna is slightly pink in center. Remove fish from skillet and keep warm.
  • Add onion to skillet. Cook over medium-high heat 2 minutes, stirring occasionally. Stir in orange juice; cook 2 minutes. Stir in dill weed, butter and orange peel. Cook 1 to 2 minutes or until slightly thickened. Serve sauce over fish.

1 medium pink grapefruit
1/4 cup lemon juice
1/4 cup lime juice
2 tablespoons honey
1 tablespoon snipped fresh dill or 1 teaspoon dill weed
1 teaspoon crushed red pepper flakes
2 teaspoons minced fresh gingerroot
4 tuna steak or fillets (6 ounces each)

Steps:

  • Peel and section grapefruit over a bowl, reserving juice. Refrigerate half of the grapefruit sections. Add remaining grapefruit to the reserved grapefruit juice. Add the lemon juice, lime juice, honey, dill, red pepper flakes and ginger. Remove 1/4 cup for basting; cover and refrigerate. Pour remaining marinade into a large resealable plastic bag; add the tuna steaks. Seal bag and turn to coat; refrigerate for 30 minutes, turning once., Drain and discard marinade. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill tuna, uncovered, over medium heat or broil 4 in. from the heat for 6-7 minutes on each side, basting frequently with reserved marinade. , Top tuna steaks with reserved grapefruit sections.
