2 medium cucumbers, sliced 1/8 inch thick
1 tablespoon kosher salt
1/2 cup white vinegar
1/4 cup snipped fresh dill
3 tablespoons sugar
1/2 teaspoon coarsely ground pepper

Steps:

  • Place cucumber slices in a colander over a plate; sprinkle with salt and toss. Let stand for 15 minutes, stirring once. Rinse and drain well. , In a large bowl, combine the vinegar, dill, sugar and pepper. Add cucumbers; toss to coat. Cover and refrigerate for at least 15 minutes before serving.

4 cucumbers
salt
1/2 cup white vinegar per qt. jar cucumber
2 teaspoons sugar per qt. jars
1/4 teaspoon pepper per qt. jar
dried dill weed

Steps:

  • Peel cucumbers, slice as thinly as possible. ("Salad shooter" is great!).
  • Sprinkle with salt, mix, let them set in a bowl until they draw water out. Then squeeze them tightly.
  • Put a handful in jar, then a sprinkle of dill. Then more cucumbers, etc. Mix vinegar, sugar, and pepper. Pour over cukes in jar. Stick a knife through to mix vinegar with cucumbers. Refrigerate. (Keeps a long time.).

1-1/2 cups sour cream
1/4 cup thinly sliced red onion

¼ cup sour cream, or to taste
¼ cup vinegar, or more to taste
¼ cup plain yogurt
2 tablespoons mayonnaise
½ lime, juiced
2 teaspoons white sugar
1 teaspoon dill
½ red onion, thinly sliced
½ stalk celery, thinly sliced

Steps:

  • Place cucumber slices in a colander. Generously sprinkle salt over cucumber; let sit until water starts to bead on the slices, about 10 minutes. Drain water from cucumber slices.
  • Whisk sour cream, vinegar, yogurt, mayonnaise, lime juice, sugar, and dill together in a large bowl until dressing is smooth. Mix cucumber, onion, and celery into dressing until evenly coated; season with salt and pepper.

Morgan's Incredible Creamy Cucumber Salad image

Goes perfect with almost any meal. We've even been known to make a meal of it by itself sometimes! Kids will even love this, you'll be surprised! (As a matter of fact, my daughter is the one who named this recipe when she was 7...she requests this almost weekly, and whenever we do make it, she will eat 2 or 3 helpings in one sitting!)

2 large cucumbers, peeled and diced
1 cup onion, chopped fine
1 tablespoon salt
2 tablespoons tarragon vinegar
1 teaspoon ground black pepper
1 teaspoon garlic powder
2 teaspoons dried dill
1 teaspoon onion powder
1 tablespoon sugar
1/4 cup sour cream
3/4 cup mayonnaise
1/4 cup parmesan cheese, grated
1 medium tomatoes, chopped (optional)

Steps:

  • Place cucumbers in a colandar (over a bowl) and sprinkle with the salt. (Don't be scared of the amount of salt, it really doesn't make the cucumbers salty). It will help draw the water out and make your end result less watery. Let that sit for at least 2 hours in the fridge.
  • Meanwhile, dice the onions very fine.
  • After the cucumbers are drained, place them in a large bowl. Add the onions. Pour the vinegar over this mixture, then add the sugar. Let it sit for another hour in the fridge. After this, you will want to taste it to make sure it's not too tangy or too sweet. You'll want a perfect blend of both flavors, combined with the saltiness that's already there.
  • After you're happy with that result, add the rest of the ingredients, ending with the cheese.
  • Adjust all seasonings to taste!
  • Chill for one hour before serving.
  • Some things to note:.
  • * I wouldn't add more salt to this salad other than what you salted the cucumbers with in the beginning. The parmesan adds a bit of saltiness anyway.
  • * You can cut back on the onion if 1 cup seems too much, but I will tell you that once the other flavors are combined, you will NOT taste any overpowering onion flavor. It's just perfect!
  • * Try to use Kosher salt for this as well as the Tarragon vinegar. I think the Tarragon flavor is a must for this salad.
  • * Personally, I've been known to drain the cucumbers over night, and add all of the other ingredients the next day. But that's just me. :-).
  • * Actually, I add a bit more of the garlic powder, onion, powder, and pepper. I play around with the dill measurement as well. ADJUST TO YOUR LIKING.
  • * The "cooking" time is actually the waiting/draining time.
  • * I promise this is worth it! :-) ENJOY!

1kg small pickling or ridged cucumber
85g coarse crystal sea salt
1 tbsp black peppercorns
1 tbsp coriander seeds
1 tbsp yellow mustard seeds
10 cloves
few pieces of mace blades
pinch of dried chilli flakes (optional)
2 bay leaves
700ml white wine vinegar , plus 3.5 tbsp
100g white sugar
handful of dill sprigs

Steps:

  • Cut the pickling or ridged cucumbers into sticks or slices. Layer with the coarse crystal sea salt in a large bowl, cover and leave overnight. Drain away the brine, then rinse.
  • To make the pickling vinegar, put the whole spices in a medium saucepan. Toast over a low heat until they begin to smell aromatic. Add the dried chilli flakes last, as these can easily catch. Add the bay, pour in all of the vinegar and sugar, let it dissolve, and bring to a simmer. Add the dill sprigs.
  • Pack the cucumber into jars, pour over the hot vinegar and seal. Ready to eat in 2 weeks, or longer, if you like.

1/4 cup nonfat Greek yogurt
1/2 teaspoon Dijon mustard

1 tablespoon chopped fresh dill, plus sprigs for garnish
2 tablespoons brine-packed capers, rinsed and chopped
1/2 English cucumber, peeled, seeded, and diced (1/2 cup)

Steps:

  • Prepare an ice-water bath. Place eggs in a medium saucepan, and add cold water to cover by 1 inch. Bring to a boil. Cover, and remove from heat. Let stand for 13 minutes. Drain, and transfer eggs to ice-water bath; let stand until cool.
  • Peel eggs, and cut in half lengthwise. Transfer 3 yolks to a medium bowl, and mash with a fork until smooth; reserve remaining yolks for another use.
