½ cucumber, very thinly sliced
salt and ground black pepper to taste
¼ cup sour cream, or to taste
¼ cup vinegar, or more to taste
¼ cup plain yogurt
2 tablespoons mayonnaise
½ lime, juiced
2 teaspoons white sugar
1 teaspoon dill
½ red onion, thinly sliced
½ stalk celery, thinly sliced

Steps:

  • Place cucumber slices in a colander. Generously sprinkle salt over cucumber; let sit until water starts to bead on the slices, about 10 minutes. Drain water from cucumber slices.
  • Whisk sour cream, vinegar, yogurt, mayonnaise, lime juice, sugar, and dill together in a large bowl until dressing is smooth. Mix cucumber, onion, and celery into dressing until evenly coated; season with salt and pepper.

1/2 cup plain yogurt
1 small clove garlic, finely grated
Finely grated zest and juice of 1 lemon
Kosher salt and freshly ground black pepper
3 small cucumbers, such as Kirby, chopped
1 shallot, chopped (about 1/2 cup)
1/4 cup fresh dill, coarsely chopped, plus more, for serving
1/4 cup fresh mint leaves, coarsely chopped, plus more, for serving

Steps:

  • Stir together the yogurt, garlic, lemon zest and juice, 1 teaspoon salt and a few grinds of pepper in a medium bowl until combined. Add the cucumbers, shallot, dill and mint; stir until the cucumbers are well coated. Serve sprinkled with dill and mint.

Cucumber, Yogurt and Dill Salad image

2 cucumbers, cut into 2-inch-long pieces
1 small red onion, sliced
Kosher salt and freshly cracked black pepper
1/2 cup sour cream
2 tablespoons white wine vinegar
1 tablespoon extra-virgin olive oil
2 teaspoons hot sauce
1 clove garlic, grated or minced
1/3 cup finely chopped fresh dill

Steps:

  • Quarter the cucumber pieces and place in a mixing bowl. Add the onions and season with salt. Mix to combine as you prepare the rest of the salad. This will start to draw out moisture, which will help thin out the dressing.
  • In a mixing bowl, whisk together the sour cream, vinegar, olive oil, hot sauce and garlic. Add the dill and season with salt and pepper. Pour over the cucumbers and onions and mix to combine. Let sit in the refrigerator for 2 hours. Serve!

This Dilled Cucumber Salad is great for a picnic, or it can be served as a side for lunch or dinner.

2 English cucumbers
Coarse salt and ground pepper
1/3 cup plain low-fat yogurt
1/4 cup loosely packed fresh dill, finely chopped, plus dill sprigs for garnish (optional)
1 teaspoon red-wine vinegar

Steps:

  • Halve cucumbers lengthwise. With a spoon, scoop out and discard seeds. Slice crosswise into 1/8-inch-thick pieces. Place in a colander set over a bowl, and toss with 2 teaspoons salt; let stand 15 minutes.
  • Meanwhile, in a medium bowl, combine yogurt, dill, vinegar, and 1/4 teaspoon pepper.
  • Remove cucumbers from colander, and pat dry with paper towels. Add to bowl with yogurt dressing; toss to combine. Garnish with dill sprigs, if desired, and serve.

Crunchy cucumber, cool yogurt and the surprise of tart cherries make this salad alluring, especially when paired with a hot, savory stew, soup or tagine. During Ramadan, the month of the year when observant Muslims fast during daylight hours, it is delicious for iftar, the meal that breaks the fast at sunset. Try it with harira, the traditional Moroccan iftar dish: a fragrant lamb-tomato soup with chickpeas, lentils and vermicelli.
