2 teaspoons dill weed, divided
1 teaspoon salt
1/4 teaspoon pepper
1 boneless beef chuck roast (2-1/2 pounds)
1/4 cup water
1 tablespoon cider vinegar
3 tablespoons all-purpose flour
1/4 cup cold water
1 cup sour cream
1/2 teaspoon browning sauce, optional
Hot cooked rice

Steps:

  • In a small bowl, combine 1 teaspoon dill, salt and pepper. Sprinkle over both sides of roast. Transfer to a 3-qt. slow cooker. Add water and vinegar. Cover and cook on low for 7-8 hours or until meat is tender., Remove meat and keep warm. In a small bowl, combine flour and remaining dill; stir in cold water until smooth. Gradually stir into slow cooker., Cover and cook on high for 30 minutes or until thickened. Stir in sour cream and browning sauce if desired; heat through. Serve beef and sour cream sauce with rice.

Draped over tender beef, carrots and potatoes, a creamy dill sauce adds rich flavor to a family favorite.

2 tablespoons all-purpose flour
1 teaspoon salt
1/4 teaspoon white pepper
1 boneless beef pot roast (about 2 lb), trimmed of fat
1 cup Progresso™ beef flavored broth (from 32-oz carton)
1 tablespoon Dijon mustard
4 cloves garlic, finely chopped
1/2 teaspoon dried dill weed
1 large onion, cut into 12 wedges
1 bag (16 oz) ready-to-eat baby-cut carrots
4 medium Yukon gold potatoes (about 1 1/4 lb), unpeeled, cut into 1-inch cubes
1/2 teaspoon lemon-pepper seasoning
2 tablespoons all-purpose flour
2 tablespoons water
1 teaspoon dried dill weed
1 cup fat-free sour cream

Steps:

  • On sheet of waxed paper or in shallow bowl, mix 2 tablespoons flour, 1 teaspoon salt and the white pepper. Place beef on flour mixture; turn to coat evenly.
  • Spray 5- to 6-quart slow cooker with cooking spray. Heat 12-inch nonstick skillet over medium-high heat. Add beef to skillet; cook about 5 minutes, turning once, until golden brown on both sides. Place in cooker.
  • In small bowl, mix broth, mustard, garlic and dill weed. Pour over beef in cooker. Place onion, carrots and potatoes on top of beef. Sprinkle with lemon-pepper seasoning.
  • Cover; cook on Low heat setting 9 to 10 hours.
  • Remove beef and vegetables from cooker; place on large serving platter and cover to keep warm. In small bowl, beat all sauce ingredients except sour cream with wire whisk until smooth.
  • Strain any fat from liquid in cooker. Pour liquid into 1-quart saucepan; heat to boiling over high heat. Stir flour mixture into hot liquid; cook 2 to 3 minutes, stirring constantly, until thickened. Remove from heat; stir in sour cream.
  • Cut beef into 8 serving pieces. Serve sauce with beef and vegetables.

1 tablespoon canola oil
1-1/2 pounds sliced fresh shiitake mushrooms
2-1/2 cups thinly sliced onions
1-1/2 cups reduced-sodium beef broth
1-1/2 cups dry red wine or additional reduced-sodium beef broth
1 can (8 ounces) tomato sauce
3/4 cup chopped peeled parsnips
3/4 cup chopped celery
3/4 cup chopped carrots
8 garlic cloves, minced
2 bay leaves
1-1/2 teaspoons dried thyme
1 teaspoon chili powder
1/4 cup cornstarch
1/4 cup water

Steps:

  • Sprinkle roast with salt and pepper. In a Dutch oven, brown roast in oil on all sides. Transfer to a 6-qt. slow cooker. Add the mushrooms, onions, broth, wine, tomato sauce, parsnips, celery, carrots, garlic, bay leaves, thyme and chili powder. Cover and cook on low for 6-8 hours or until meat is tender., Remove meat and vegetables to a serving platter; keep warm. Discard bay leaves. 1 (3 -4 lb) chuck roast
1 (10 ounce) can Campbell's Cream of Mushroom Soup
salt
pepper

Steps:

  • Preheat oven to 350 degrees F.
  • Place heavy duty aluminum foil (Reynolds Wrap) in a shallow baking sheet with all 4 edges of foil long enough to bring up and cover the roast.
  • Place roast onto the foil and salt and pepper both sides.
  • Pour soup over top of roast.
  • Bring up the sides of the foil and seal all of the edges very tightly.
  • Place into oven at 350 degrees F. and cook for 1 hour.
  • Reduce heat to 300 degrees F. and cook for the remaining 2 hours.
  • Unwrap roast and remove to a cutting board to slice the meat.
  • Pour the delicious gravy into a bowl.
  • Serve with mashed potatoes using the gravy for the meat and potatoes.
  • Enjoy this YUMMY meal.

BEEF
1/3 cup all purpose flour
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
4 pound beef roast, rump or chuck
2 teaspoons vegetable oil
3 tablespoons dijon-style mustard
6 medium red potatoes, quartered
3 onions, peeled and cut into eighths
4 large carrots cut into 3 pieces
3 celery ribs with tops, cut into 4 pieces
2 garlic cloves peeled
1 1/2 teaspoons dill seed
1 teaspoon peppercorns
1/4 cup beef stock, low sodium
1 tablespoon red wine vinegar
SAUCE
cooking juices from beef
3 tablespoons all purpose flour
1 teaspoon dijon-style mustard
1 teaspoon dill weed
1/2 cup lowfat sour cream

Steps:

  • 1. Combine the flour with the salt and pepper and coat the beef. In a medium skillet, brown the coated beef until it has a nice sear on all sides. Remove to platter, set aside to cool. Once cool, rub the Dijon mustard evenly on all sides of the beef.
  • 2. Place the vegetables in the slowcooker on the bottom and the mustard-coated meat on top. Pour in stock and vinegar around sides not over meat. Cook on Low 10 to 12 hours.
  • 3. Remove beef to a cutting board.
  • 4. Cut the meat into thin slices.
  • 5. Remove vegetables to a serving bowl.
  • 6. Make the gravy. Strain the cooking juices from the slow cooker into a 2 3/4 quart saucepan. Add flour, mustard and dill; stir over medium heat until sauce comes to a boil and thickens. Remove from heat, cool for a minute, add the sour cream. Taste to see if it needs salt.
  • 7. Drizzle the meat with the gravy to serve. Put the rest of the gravy in a gravy boat.
  • 8. Here is what it looks like on the plate. Enjoy!

This recipe is from a Jeff Smith (Frugal Gourmet) cookbook. I often use a chuck roast for this. The original recipe also calls for 3 or 4 dried mushrooms to be added with the other ingredients, but I have never used them.

3 lbs beef top round roast or 3 lbs bottom round beef roast
2 tablespoons peanut oil
1 large yellow onion, peeled and chopped
6 peppercorns
1 bay leaf
1/4 cup beef stock
3 dill pickles, chopped
1 cup sour cream

Steps:

  • Heat dutch oven or large frying pan and make sure it is hot before adding oil.
  • Brown the roast well in the oil.
  • Add the remaining ingredients except the sour cream.
  • Simmer, covered, for about 2 hours or until the meat is very tender.
  • Add the sour cream and simmer for 1/2 hour more.
  • Slice and serve with the sauce on the top.

4 lbs boneless beef chuck roast
2 tablespoons oil
salt and pepper
1/2 cup beef broth
1/2 cup butter
2 cups heavy cream
2 cloves minced garlic
1/4 cup lemon juice
1 1/2 teaspoons salt
3/4 teaspoon black pepper

Steps:

  • Brown meat slowly on all sides in oil in Dutch oven.
  • Season generously with salt and pepper and add broth.
  • Cover and simmer for about 3 hours or until meat is very tender.
  • Remove meat from pan, let rest for 20 minutes, then slice thin.
  • Do not use pan juices.
  • For sauce, melt butter until it bubbles and browns slightly.
  • Add cream, garlic, lemon juice and salt and pepper.
  • Cook over medium heat for about 3 minutes.
  • Spoon half of sauce in a glass 9 x 13 baking dish.
  • Arrange meat slices overlapping in the sauce.
  • Pour the remaining sauce over the top and refrigerate until ready to serve.
  • Allow dish to set out for 30 minutes before baking.
  • Heat through at 350° for about 30 minutes.

My crock pot saves me all the time on busy days. I love dill, I think it is under used and overlooked. This recipe uses my favorite herb in a special way.

ROAST
2-3 lb beef rump roast or top round roast
4 red potatoes
1 onion
3 celery stalks
2 Tbsp dill, fresh
2 Tbsp kosher salt
2 tsp freshly ground pepper
1/4 c balsamic vinegar
1/2 c water
CREAMY MUSHROOM GRAVY
1 lb mushrooms
1 1/2 c sour cream
salt and pepper

Steps:

  • 1. Prep ingredients. Chop fresh dill, cut onion halves in to quarters, chop celery stalks into 4 pieces, and quarter red potatoes.
  • 2. Place salt, pepper, and dill in a small bowl and combine well. Run mixture all over the roast.
  • 3. Place onion, celery, potatoes, water and vinegar in bottom of crock pot. Place roast on top veggies. Set on low for 8 hours.
  • 4. Last 20 mins of cooking prepare gravy. Wipe down and slice mushrooms. In a large skillet heat oil over medium add mushroom and add salt and pepper. Cook until tender moisture releases from mushrooms. Add sour cream and turn heat to low. Let cook for 5 mins stirring occasionally.
  • 5. Remove roast and serve with mushroom sauce along with veggies. Enjoy!!
