SIMPLE MARINATED BROCCOLI

My aunt used to make this delicious side dish when I would visit, and I recently discovered just how easy it is to make. A great way to encourage kids to eat their broccoli! Blanching of broccoli or any form of cooking broccoli is not recommended for this recipe; it tastes best with raw, chilled broccoli.

½ cup olive oil
¼ cup red wine vinegar
1 (.7 ounce) package dry Italian salad dressing mix (such as Good Seasons®)
3 heads broccoli, cut into florets

Steps:

  • Combine olive oil, red wine vinegar, and Italian dressing mix in a sealable container; shake vigorously.
  • Place broccoli in a plastic storage container, cover with marinade, and refrigerate, stirring occasionally, for at least 3 hours.

Got this recipe from a co-worker and have made it often. One of the few ways I can get my husband to eat broccoli! This recipe can be halved, as it makes alot.

3 heads broccoli
1 cup white vinegar
1 1/2 cups canola oil
1 tablespoon sugar
1 tablespoon Accent seasoning (optional)
1 tablespoon dried dill weed
1 teaspoon fresh ground pepper
1 teaspoon garlic salt
1/2 teaspoon salt

Steps:

  • Cut or break off broccoli florets-- set aside.
  • Mix remaining ingredients until sugar and salt dissolves (Do NOT use a metal bowl).
  • Pour marinade over broccoli and let marinate overnight.

1/3 cup chopped onions or 1/3 cup chopped leek
1 garlic clove, minced
2 teaspoons extra virgin olive oil
1/3 cup reduced-sodium chicken broth
1 lb broccoli, cut into spears
2 teaspoons lemon juice
1 teaspoon cornstarch
1 tablespoon chopped fresh dill or 1/2 teaspoon dried dill
to taste kosher salt
to taste fresh ground black pepper
lemon slice (optional)

Steps:

  • In a large saucepan cook and stir onion and garlic in hot oil about 3 minutes or until tender. Add broth; bring to boiling. Add broccoli. Return to boiling; reduce heat. Cover and simmer for 8 to 10 minutes or until tender. Transfer vegetables to a serving platter, reserving broth in pan (add additional broth, if necessary, to measure 1/2 cup).
  • In a small bowl combine lemon juice and cornstarch; add to broth in saucepan. Cook and stir until thickened and bubbly; cook and stir for 2 minutes more. Stir in dill. Season to taste with kosher salt and pepper. Spoon sauce over vegetables; toss to coat. If desired, garnish with lemon slices.

Not quite adopted into our Indian cuisine, one has to create and find innovative ways to cook it. I generally tend to just steam it and use it in salads. This one is to be had raw, after having been marinated overnight. A great idea for the relish tray.

1 cup cider vinegar
1/3 cup vegetable oil
1/8 cup water
1 tablespoon dill
2 cloves garlic, minced

  • Remove tough ends from broccoli stalks.
  • Also remove the large outer leaves and cut into florets, reserving stalks for another use.

3 heads raw broccoli
1 cup oil
1/3 cup cider vinegar
1 teaspoon dried dill
1 dash pepper
1/2 cup sugar
1 cup mayonnaise
1 teaspoon ketchup
1 teaspoon curry powder

Steps:

  • Mix marinade ingredients in a bowl and set aside.
  • Rinse broccoli and cut or break into small florets.
  • Pour marinade over broccoli; place in a sealed bowl or zipper bag.
  • Turn frequently to mix and let marinate at least 2 hrs.
  • Combine ingredients for dip.
  • Place dip, covered, in refrigerator and let seasonings blend for at least 2 hours.
  • You may want to make the actual dip the night before so that all flavors have blended nicely.
  • Before serving, drain broccoli of marinade and serve with curry dip.
