Very simple potatoes that are tastier than you would think. They soak up the liquid and absorb all the flavor. Good, no fuss side dish.

1/2 cup dijon-style mustard (such as Grey Poupon)
3 tablespoons olive oil
1 clove garlic, minced (or more to taste)
1 teaspoon italian seasoning
8 medium potatoes, cut into chunks (about 3 pounds)

Steps:

  • Mix first 4 ingredients in a small bowl.
  • Lightly grease 13 x 9 pan or shallow baking sheet.
  • Toss potatoes with mixture.
  • Bake at 425 for about 40 minutes, or until tender, stirring occasionally.

2 tablespoons olive oil
1 tablespoon Dijon mustard
1 clove garlic, minced
¼ teaspoon thyme
¼ teaspoon rosemary
salt and ground black pepper to taste
5 red potatoes, cut into 1-inch pieces

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a roasting pan.
  • Stir olive oil, Dijon mustard, garlic, thyme, rosemary, salt, and pepper together in a bowl; add potatoes and toss to coat. Transfer potatoes to prepared roasting pan.
  • Roast in preheated oven, turning occasionally, until tender in the middle, 40 to 45 minutes.

My mum lost this recipe recently and it turned into a bit of a crisis when we couldn't find a comparable one online, as this is the best one we've found (and just about the only potato salad I'll eat), so when we found it again, we agreed that it should be preserved on here in case it goes missing in the future!

1 cup Hellmann's mayonnaise
1/4 cup hellmann's Dijonnaise mustard
2 tablespoons vinegar
2 tablespoons fresh dill or 2 tablespoons parsley, chopped
1/2 teaspoon salt
1/4 teaspoon pepper
2 lbs small red potatoes, cooked and cubed
1 cup celery, sliced
1/2 cup green onion, sliced

Steps:

  • In a large bowl, combine first 6 ingredients.
  • Stir in potatoes, celery and onions.

1/2 to 2/3 cup milk or half-n-half
1 1/2 cups shredded Gruyere cheese
1 rounded tablespoon Dijon mustard
Salt and pepper

  • Boil the potatoes until tender, about 15 minutes. Drain and return to the hot pot. Mash with the milk or half-n-half. Stir in the cheese and mustard and combine, and then season with salt and pepper.
