The Dijon mustard provides a slight tang that really kicks these potatoes to the next level! These are a family favorite at our house.

2 tablespoons olive oil
1 tablespoon Dijon mustard
1 clove garlic, minced
¼ teaspoon thyme
¼ teaspoon rosemary
salt and ground black pepper to taste
5 red potatoes, cut into 1-inch pieces

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a roasting pan.
  • Stir olive oil, Dijon mustard, garlic, thyme, rosemary, salt, and pepper together in a bowl; add potatoes and toss to coat. Transfer potatoes to prepared roasting pan.
  • Roast in preheated oven, turning occasionally, until tender in the middle, 40 to 45 minutes.

6 medium red potatoes, chopped into bite-size pieces
1 clove garlic, peeled and minced fine
1/4 cup Dijon mustard
3 tablespoons honey

Steps:

  • Place potatoes in a bowl.
  • Mix the garlic, mustard, and honey together and pour over potatoes and stir to coat Put into a shallow baking dish and bake at 400 F until fork tender (about 15 minutes).

2 1/2 pounds small red potatoes (or small Yukon Gold potatoes)
2 yellow onions
3 tablespoons good olive oil
2 tablespoons whole-grain mustard
Kosher salt
1 teaspoon freshly ground black pepper
1/4 cup chopped fresh flat-leaf parsley

Steps:

  • Preheat the oven to 425 degrees.
  • Cut the potatoes in halves or quarters, depending on their size, and place them on a sheet pan. Remove the ends of the onions, peel them, and cut them in half. Slice them crosswise in 1/4-inch-thick slices to make half-rounds. Toss the onions and potatoes together on the sheet pan. Add the olive oil, mustard, 2 teaspoons salt, and the pepper and toss them together. Bake for 50 minutes to 1 hour, until the potatoes are lightly browned on the outside and tender on the inside. Toss the potatoes from time to time with a metal spatula so they brown evenly.
  • Serve hot sprinkled with chopped parsley and a little extra salt.

Steps:

1/4 cup Dijon mustard
1/4 cup olive oil
1 -2 teaspoon honey
1 tablespoon chopped fresh parsley

Steps:

  • Set oven to 375 degrees.
  • Mix together mustard, honey, oil and salt and pepper; add to the potatoes and onion slices.
  • Pour the sauce over potato/onion then toss well coate.

If you are a lover of honey mustard, then this recipe is worth trying...it is so good, you won't be buying store-bought ever again, this lasts for 6 months in the fridge, but it will be gone long before then, you will be using it all the time! Note: this honey mustard can also be used as a dip.

1 3/4 cups mustard powder
3/4 water
1 small onion, finely minced
2 cups dry white wine
1/3 cup white wine vinegar
2 teaspoons sugar
1 1/2 teaspoons salt
5 fresh garlic cloves, minced or pressed
2 bay leaves
1 teaspoon allspice
3/4 cup honey

Steps:

  • In a small bowl, stir water and mustard powder together until smooth.
  • In a heavy-bottomed saucepan, combine wine, vinegar and all remaining ingredients (EXCEPT HONEY).
  • Simmer, uncovered over medium heat until reduced by half (about 10-15 minutes).
  • Pour reduced liquid through a strainer into the prepared mustard/water paste; whisk or stir till smooth.
  • Cook mixture over med-low heat, stirring constantly for about 5 minutes, or until slightly thickened (the mixture will thicken more as it cools).
  • Stir in the honey.
  • Let cool completely.
  • Store in clean glass jars, cover tightly.
  • Store in the refrigerator for up to 6 months (but it won't last that long!).
