½ pound asparagus spears, trimmed and bottom thirds thinly peeled
3 tablespoons unsalted butter
¼ cup chopped pecans
2 (4 ounce) fillets salmon
salt and ground black pepper to taste
2 tablespoons olive oil
½ lemon, halved (juice only)
⅓ (8 ounce) package angel hair pasta
2 tablespoons butter
1 tablespoon minced parsley
1 tablespoon chopped fresh basil
2 tablespoons butter
1 tablespoon Dijon mustard
½ lemon, halved (juice only)

Steps:

  • Place asparagus spears into a large skillet, and pour in enough water to cover the bottom of the skillet about 1/2 inch deep. Place skillet over medium heat, bring to a boil, and reduce heat to medium-low. Simmer until the water has evaporated, about 5 minutes.
  • Stir unsalted butter and pecans into the skillet with asparagus, and let simmer until asparagus are beginning to brown and pecans are fragrant, about 2 more minutes. Remove from heat.
  • Season salmon fillets with salt and black pepper and set aside for about 5 minutes; pat off any excess moisture with paper towels.
  • Heat olive oil in a skillet over medium-high heat, and pan-fry the salmon fillets in the hot oil until browned and the flesh flakes easily and is nearly opaque in the center, 4 to 5 minutes per side. Squeeze half a lemon over the salmon fillets as they cook.
  • Fill a large pot with lightly salted water and bring to a boil; stir in the angel hair pasta, and return to a boil. Cook the pasta uncovered, stirring occasionally, until cooked through but still slightly firm, 4 to 5 minutes. Drain well and return to saucepan.
  • Stir 2 tablespoons butter, parsley, and basil into the cooked pasta until coated; sprinkle with salt and black pepper to taste.
  • To make sauce, melt 2 more tablespoons of butter in a small saucepan over low heat until melted; stir in Dijon mustard, and squeeze remaining lemon half into the sauce. Allow to simmer for about 3 minutes to blend flavors.
  • To serve, divide angel hair pasta between two plates, top each serving of pasta with half the asparagus and pecans, and arrange a fillet over the asparagus. Spoon Dijon dressing over fillets to serve.

2 cups self-rising flour
1/3 cup shredded Cheddar-jack cheese blend
3 slices thin deli ham, chopped
3 tablespoons salted butter, slightly frozen
1 cup buttermilk
All-purpose flour, for dusting
Nonstick cooking spray, for the baking sheet, optional
1 stick (8 tablespoons) salted butter, softened
2 tablespoons honey
1 tablespoon whole-grain Dijon mustard
Blackberry or raspberry preserves, for serving

Steps:

  • For the biscuits: Preheat the oven to 400 degrees F.
  • Place the self-rising flour in a large bowl and toss with the cheese and ham. Grate the butter into the flour mixture. Pour in the buttermilk and mix gently with a wooden spoon. Once the dough comes together, turn it out onto a floured surface, divide it into 8 equal balls and pat them down lightly.
  • Put the balls in a cast-iron pan or on a baking sheet sprayed with cooking spray. Bake until brown, 20 to 25 minutes.
  • For the butter: In a bowl, mix together the butter, honey and mustard.
  • When the biscuits are done, brush some of the butter over the tops. Serve the biscuits with the remaining butter and the preserves.

1/2 small red onion, thinly sliced
Four 4-ounce top blade steaks
Kosher salt and freshly ground black pepper
1/3 cup Food Network Kitchen™ Inspirations French Style Dijon Balsamic Vinaigrette
3 tablespoons crumbled blue cheese
2 tablespoons unsalted butter, at room temperature
3 tablespoons chopped flat-leaf parsley
4 stalks celery, thinly sliced
1 tablespoon olive oil

Steps:

  • Soak the onions in a bowl of cold water for 10 minutes (this helps remove some of the pungent bite).
  • Pierce the steaks with a fork and sprinkle with salt and pepper. Coat them in 3 tablespoons of the French Style Dijon Balsamic Vinaigrette in a shallow bowl or baking dish. Set aside while you prepare the blue cheese butter and salad.
  • Mash the blue cheese, butter and 1 tablespoon of the parsley in a small bowl and season with salt and pepper.
  • Drain the onion and pat dry. Toss with the celery and the remaining 2 tablespoons parsley in another bowl. Season with salt and pepper.
  • Heat the oil in a large cast-iron skillet over high heat. Cook the steaks until browned on the bottom, 3 to 5 minutes. Flip and continue to cook 3 to 5 more minutes for medium-rare. Transfer to a plate and let rest 5 minutes.
  • Divide the celery salad among 4 plates. Top each with a steak and drizzle with any pan juices or collected juices on the plate. Top each steak with a mound of blue cheese butter. Drizzle with the remaining vinaigrette.

2 cloves garlic, finely chopped
1 teaspoon salt
1 teaspoon freshly ground pepper
2 teaspoons finely chopped fresh or 1/4 teaspoon dried thyme leaves
1/2 cup Progresso™ panko crispy bread crumbs
1/2 cup crumbled chèvre (goat) cheese (2 oz)
2 tablespoons shredded Parmesan cheese
8 boneless pork loin chops (1 inch thick)
2 tablespoons olive oil
2 cups Progresso™ chicken broth (from 32-oz carton)
2 teaspoons grated lemon peel
2 tablespoons fresh lemon juice
4 teaspoons Dijon mustard
2 tablespoons butter

Steps:

  • In 12-inch nonstick skillet, heat reserved oil from sun-dried tomatoes over medium-high heat. Stir in tomatoes, garlic, 1/2 teaspoon each of the salt and pepper and 1 teaspoon of the thyme. Cook 2 minutes; transfer tomato mixture to medium bowl. Stir in bread crumbs and cheeses; set aside.
  • In thick side of each pork chop, cut a slit about 2 inches deep and 3 inches long to form a pocket (do not cut in half). Spoon 2 tablespoons tomato-cheese mixture into each pocket; pinch edges of pork to seal. Sprinkle pork with remaining 1/2 teaspoon each salt and pepper. Cover; refrigerate 1 hour.
  • Heat oven to 450°F. In same nonstick skillet, heat 1 tablespoon of the olive oil over medium-high heat. Cook 4 pork chops in oil 4 minutes, turning once. Place pork on cooling rack in 15x10x1-inch pan. Repeat with remaining 1 tablespoon olive oil and 4 pork chops. Bake 25 minutes or until meat thermometer inserted in center of pork reads 145°F.

• 1 1/2 tablespoons chopped fresh Italian parsley
• 1 1/2 tablespoons chopped fresh cilantro
• 1/2 teaspoon cayenne pepper
• 1/2 teaspoon freshly ground black pepper
• 1/2 teaspoon coarse kosher salt
• 2 1/2 tablespoons dry white wine
• 2 tablespoons fresh lemon juice
• Rock salt
• 24 freshly shucked oysters (such as Malpeque or Bluepoint) on the half shell

  • • Cook bacon in a heavy medium skillet over medium heat until crisp. Using a slotted spoon, transfer bacon to food processor. Prepare the corn on the cob using your favorite method. For this particular recipe I cooked the corn in a large pot of water, but grilling the cobs would work wonderfully, I have no doubt.

1/2 cup butter, softened to room temperature

1/2 head garlic
1/2 teaspoon olive oil
1/2 tablespoon Dijon mustard
3/4 teaspoon butter, softened
2 (3 ounce) hoagie rolls, cut in half lengthwise
4 slices sandwich pickles (sandwich length)
1/8 lb thinly sliced smoked turkey
1/8 lb thinly sliced turkey ham
4 slices swiss cheese (Jarlsberg is good)

Steps:

  • Preheat oven to 350°.
  • To make butter:.
  • Remove white papery skin from garlic head (do not peel or separate cloves); drizzle with oil. Wrap 1/2 head in foil. Bake at 350° for 1 hour; cool 10 minutes. Separate cloves; squeeze to extract garlic pulp. Discard skins. Combine garlic pulp, mustard, and butter in a small bowl; set aside.
  • Double this and save the butter to make more sandwiches later!
  • To make sandwiches:.
  • Scoop out inside of the roll halves, leaving a 1/2" shell. Spread about 2 teaspoons garlic butter over cut sides of top and bottom halves of each roll. Arrange pickles, turkey, ham, and cheese evenly on bottom halves of rolls; top with top halves.

1 tablespoon finely chopped fresh tarragon
1 teaspoon dried lavender or a mix of fresh and dried

1/4 cup mild-variety honey, such as Hamptons Honey Company
3 tablespoons champagne vinegar
2 tablespoons Dijon mustard
Kosher salt and freshly ground black pepper

Steps:

  • For the filet mignon: Remove the filet from the refrigerator 30 minutes before grilling. Heat a charcoal or gas grill to high for direct grilling.
  • For the fine herb goat cheese: Mash together the cheese, parsley, chives, tarragon, lavender and black pepper in a small bowl.
  • For the vinaigrette: Whisk together the honey, vinegar, mustard and salt and pepper to taste in a bowl until combined. Slowly whisk in the olive oil until emulsified.
  • Brush the filet mignon with the canola oil and sprinkle with salt. Press the pepper onto the entire surface.
  • Grill until golden brown and slightly charred on both sides and cooked to medium-rare doneness, about 6 minutes per side. Remove from the grill and let rest on a cutting board for 5 minutes before thinly slicing
  • Fill the lettuce leaves with a few thin slices of the filet, a small dollop of the goat cheese and a drizzle of the vinaigrette.

1 cup (2 sticks) butter, softened
1/4 cup GREY POUPON Dijon Mustard
1/4 cup chopped fresh tarragon

Steps:

  • Beat all ingredients with electric hand mixer on medium speed until well blended. Spoon into airtight container.
  • Refrigerate at least 30 min. or until firm.
  • Spoon 1 Tbsp. of the butter mixture over each 3-oz. serving of cooked pork chops.

Stuffed Pork Chops with Dijon Butter Sauce image

8 sun-dried tomatoes in oil, drained and 1 tablespoon oil reserved, finely chopped
2 cloves garlic, finely chopped
1 teaspoon salt
1 teaspoon freshly ground pepper
2 teaspoons finely chopped fresh or 1/4 teaspoon dried thyme leaves
1/2 cup Progresso® panko crispy bread crumbs
1/2 cup crumbled chèvre (goat) cheese (2 oz)
2 tablespoons shredded Parmesan cheese
8 boneless pork loin chops (1 inch thick)
2 tablespoons olive oil
2 cups Progresso® chicken broth (from 32-oz carton)
2 teaspoons grated lemon peel
2 tablespoons fresh lemon juice
4 teaspoons Dijon mustard
2 tablespoons butter

Steps:

  • In 12-inch nonstick skillet, heat reserved oil from sun-dried tomatoes over medium-high heat. Stir in tomatoes, garlic, 1/2 teaspoon each of the salt and pepper and 1 teaspoon of the thyme. Cook 2 minutes; transfer tomato mixture to medium bowl. Stir in bread crumbs and cheeses; set aside.
  • In thick side of each pork chop, cut a slit about 2 inches deep and 3 inches long to form a pocket (do not cut in half). Spoon 2 tablespoons tomato-cheese mixture into each pocket; pinch edges of pork to seal. Sprinkle pork with remaining 1/2 teaspoon each salt and pepper. Cover; refrigerate 1 hour.
  • Heat oven to 450°F. In same nonstick skillet, heat 1 tablespoon of the olive oil over medium-high heat. Cook 4 pork chops in oil 4 minutes, turning once. Place pork on cooling rack in 15x10x1-inch pan. Repeat with remaining 1 tablespoon olive oil and 4 pork chops. Bake 25 minutes or until meat thermometer inserted in center of pork reads 145°F.
  • Meanwhile, in small bowl, mix broth, lemon peel, lemon juice, mustard and remaining 1 teaspoon thyme. Pour into skillet, stirring to loosen browned bits. Heat to boiling; reduce heat. Simmer 7 minutes or until slightly thickened. Stir in butter; cover to keep warm. Serve pork chops with sauce.
