Categories     Main Dish Recipes     Seafood Main Dish Recipes     Salmon     Salmon Fillet Recipes

Time 40m

Yield 2

Number Of Ingredients 14

½ pound asparagus spears, trimmed and bottom thirds thinly peeled
3 tablespoons unsalted butter
¼ cup chopped pecans
2 (4 ounce) fillets salmon
salt and ground black pepper to taste
2 tablespoons olive oil
½ lemon, halved (juice only)
⅓ (8 ounce) package angel hair pasta
2 tablespoons butter
1 tablespoon minced parsley
1 tablespoon chopped fresh basil
2 tablespoons butter
1 tablespoon Dijon mustard
½ lemon, halved (juice only)

Steps:

  • Place asparagus spears into a large skillet, and pour in enough water to cover the bottom of the skillet about 1/2 inch deep. Place skillet over medium heat, bring to a boil, and reduce heat to medium-low. Simmer until the water has evaporated, about 5 minutes.
  • Stir unsalted butter and pecans into the skillet with asparagus, and let simmer until asparagus are beginning to brown and pecans are fragrant, about 2 more minutes. Remove from heat.
  • Season salmon fillets with salt and black pepper and set aside for about 5 minutes; pat off any excess moisture with paper towels.
  • Heat olive oil in a skillet over medium-high heat, and pan-fry the salmon fillets in the hot oil until browned and the flesh flakes easily and is nearly opaque in the center, 4 to 5 minutes per side. Squeeze half a lemon over the salmon fillets as they cook.
  • Fill a large pot with lightly salted water and bring to a boil; stir in the angel hair pasta, and return to a boil. Cook the pasta uncovered, stirring occasionally, until cooked through but still slightly firm, 4 to 5 minutes. Drain well and return to saucepan.
  • Stir 2 tablespoons butter, parsley, and basil into the cooked pasta until coated; sprinkle with salt and black pepper to taste.
  • To make sauce, melt 2 more tablespoons of butter in a small saucepan over low heat until melted; stir in Dijon mustard, and squeeze remaining lemon half into the sauce. Allow to simmer for about 3 minutes to blend flavors.
  • To serve, divide angel hair pasta between two plates, top each serving of pasta with half the asparagus and pecans, and arrange a fillet over the asparagus. Spoon Dijon dressing over fillets to serve.

DIJON BUTTER

This is a compound butter that is great with potatoes, perogies and many other foods. When it melts is almost a sauce in itself. I like it on leftover cold salt potatoes too.

DIJON BALSAMIC STEAK SALAD WITH BLUE CHEESE BUTTER

Dijon Balsamic Steak Salad with Blue Cheese Butter image

Inexpensive steaks get an upgrade from a Dijon balsamic vinaigrette and a dollop of blue cheese butter. The vinaigrette also makes an earthy, tangy dressing for a crunchy celery salad.

Provided by Food Network Kitchen

Categories     main-dish

Time 40m

Yield 4 servings

Number Of Ingredients 9

1/2 small red onion, thinly sliced
Four 4-ounce top blade steaks
Kosher salt and freshly ground black pepper
1/3 cup Food Network Kitchen™ Inspirations French Style Dijon Balsamic Vinaigrette
3 tablespoons crumbled blue cheese
2 tablespoons unsalted butter, at room temperature
3 tablespoons chopped flat-leaf parsley
4 stalks celery, thinly sliced
1 tablespoon olive oil

Steps:

  • Soak the onions in a bowl of cold water for 10 minutes (this helps remove some of the pungent bite).
  • Pierce the steaks with a fork and sprinkle with salt and pepper. Coat them in 3 tablespoons of the French Style Dijon Balsamic Vinaigrette in a shallow bowl or baking dish. Set aside while you prepare the blue cheese butter and salad.
  • Mash the blue cheese, butter and 1 tablespoon of the parsley in a small bowl and season with salt and pepper.
  • Drain the onion and pat dry. Toss with the celery and the remaining 2 tablespoons parsley in another bowl. Season with salt and pepper.
  • Heat the oil in a large cast-iron skillet over high heat. Cook the steaks until browned on the bottom, 3 to 5 minutes. Flip and continue to cook 3 to 5 more minutes for medium-rare. Transfer to a plate and let rest 5 minutes.
  • Divide the celery salad among 4 plates. Top each with a steak and drizzle with any pan juices or collected juices on the plate. Top each steak with a mound of blue cheese butter. Drizzle with the remaining vinaigrette.

CORN ON THE COB WITH HORSERADISH-DIJON BUTTER SAUCE

Corn on the Cob With Horseradish-Dijon Butter Sauce image

Mmmmm! From a flyer included with our organic produce delivery. I was hoping to test this recipe substituting fresh horseradish for jarred but for some unknown reason couldn't find any at the store. Prepare the corn on the cob using your favorite method. For this particular recipe I cooked the corn in a large pot of water, but grilling the cobs would work wonderfully, I have no doubt.

Provided by COOKGIRl

Categories     Corn

Time 15m

Yield 8 ears of corn

Number Of Ingredients 7

8 ears corn, husked, cleaned and silk removed
1/2 cup butter, softened to room temperature
1/4 teaspoon salt (reduced from 1/2 teaspoon)
1/4 teaspoon cracked black pepper
1 tablespoon fresh parsley, minced
2 tablespoons Dijon mustard
2 teaspoons prepared horseradish cream or 1 teaspoon freshly grated horseradish

Steps:

  • Cook the ears of corn as suggested in *Steps #4 and #5.
  • Sauce: combine ingredients and mix well.
  • For each ear of corn, spread on approximately 1 tablespoon of the sauce.
  • *Note: For stove top directions to cook corn, bring large pot of water to boil. Add the prepared corn cobs to the water, cover and simmer for approximately 10-12 minutes.
  • If grilling corn, spread sauce on cobs, wrap tightly in foil and grill. Or, grill corn directly on the grill basting on the sauce as the ears cook.

GRILLED OYSTERS WITH TWISTED BUTTER BACON, DIJON & GREEN ONION BUTTER image

Categories     Shellfish

Number Of Ingredients 12

• 3 slices hickory-smoked or apple wood-smoked bacon, cut crosswise into 1/2-inch-wide strips
• 1 cup (16 tablespoons) Twisted Butter Bacon, Dijon Mustard & Green Onion Butter, cut into 1/2-inch cubes
• 4 garlic cloves, peeled
• 1 1/2 tablespoons chopped fresh Italian parsley
• 1 1/2 tablespoons chopped fresh cilantro
• 1/2 teaspoon cayenne pepper
• 1/2 teaspoon freshly ground black pepper
• 1/2 teaspoon coarse kosher salt
• 2 1/2 tablespoons dry white wine
• 2 tablespoons fresh lemon juice
• Rock salt
• 24 freshly shucked oysters (such as Malpeque or Bluepoint) on the half shell

Steps:

  • • Cook bacon in a heavy medium skillet over medium heat until crisp. Using a slotted spoon, transfer bacon to food processor. Add TWISTED Bacon, Dijon Mustard & Green Onion Butter, garlic, Italian parsley, cilantro, cayenne pepper, black pepper, and coarse salt. Blend until smooth, occasionally scraping down sides of bowl. With machine running, gradually add white wine, then fresh lemon juice and continue to process until blended. • Place large sheet of waxed paper on work surface. Drop butter mixture by heaping tablespoonfuls onto paper in long log. Using the paper as an aid, shape butter into a 2-inch-diameter log. Wrap to enclose; chill butter until firm, at least 2 hours. • Prepare barbecue (medium-high heat). Spread 1/2-inch-thick layer of rock salt on large rimmed baking sheet. Place baking sheet on grill rack and heat 20 minutes. • Cut twenty-four 1/8- to 1/4-inch-thick rounds from cayenne-butter log. Transfer hot baking sheet from grill to heatproof surface. Nestle oysters in hot rock salt. Top each oyster with slice of cayenne butter. • Return baking sheet with oysters to grill. Close grill and cook until butter melts and starts to brown, about 6 to 8 minutes. Spoon a shallow layer of additional rock salt onto each of 6 plates.
