3/4 c flour
1/2 tsp salt
1 small package vanilla pudding (not instant)
1 egg
1 tsp baking powder
1/2 c milk
1 large can sliced peaches, save juice
1- ( 8 ) oz cream cheese, room temperature
1/2 c sugar
1/2 tsp cinnamon
3 Tbsp reserved peach juice

Steps:

  • 1. pre- heat oven at 350. In large bowl, combine flour, baking powder, and pudding.
  • 2. add egg and milk; beat for 2 mins. on medium speed.
  • 3. Pour into a 10 inch GREASED pie pan.
  • 4. place sliced peaches on top then set aside.
  • 5. combine cream cheese, 1/2 c sugar and 3 T peach juice; beat for 2 mins until smooth
  • 6. spoon on top of peaches keeping away from edges about 1 inch.
  • 7. sprinkle 1 T of sugar and 1/2 tsp. cinnamon on top.
  • 8. bake for 30-35 mins.

This is a simple, quick, old fashioned, baked, two crust peach pie made with fresh peaches and simple ingredients. It's great during summer peach season.

1 (15 ounce) package pastry for a 9 inch double crust pie
1 egg, beaten
5 cups sliced peeled peaches
2 tablespoons lemon juice
½ cup all-purpose flour
1 cup white sugar
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
¼ teaspoon salt
2 tablespoons butter

Steps:

  • Preheat the oven to 450 degrees F (220 degrees C).
  • Line the bottom and sides of a 9 inch pie plate with one of the pie crusts. Brush with some of the beaten egg to keep the dough from becoming soggy later.
  • Place the sliced peaches in a large bowl, and sprinkle with lemon juice. Mix gently. In a separate bowl, mix together the flour, sugar, cinnamon, nutmeg and salt. Pour over the peaches, and mix gently. Pour into the pie crust, and dot with butter. Cover with the other pie crust, and fold the edges under. Flute the edges to seal or press the edges with the tines of a fork dipped in egg. Brush the remaining egg over the top crust. Cut several slits in the top crust to vent steam.
  • Bake for 10 minutes in the preheated oven, then reduce the heat to 350 degrees F (175 degrees C) and bake for an additional 30 to 35 minutes, until the crust is brown and the juice begins to bubble through the vents. If the edges brown to fast, cover them with strips of aluminum foil about halfway through baking. Cool before serving. This tastes better warm than hot.

1 large can of peaches (3-1/2 cups), save the juice
one 8-ounce package of cream cheese
1/2 cup sugar
1/2 teaspoon cinnamon

Steps:

  • Combine flour, baking powder, salt, puddingmix, egg, and milk ina a large bowl. Beat for two minutes on medium speed. Pour into a 10-inch greased pie pan. Place drained peaches on top, then set aside. Combine cream cheese, 1/2 cup sugar, and 3 Tablespoons peach juice. Beate for two minutes until smooth. Spoon on top of the peaches and keep away from the edge-- about 1 inch. Sprinkle 1 tablespoon of sugar and 1/2 teaspoon of cinnamon on top. Bake at 350 degrees for 30 to 35 minutes.
