7 eggs
1/2 cup diced ham
1 TBSP milk (or water)
1 tsp heaping Ranch dressing
1/2 cup shredded Cheddar Jack cheese
chives, salt & pepper, to taste

Steps:

  • Heat a frying pan on medium heat. Spray with a bit of non-stick cooking spray and add in diced ham, stirring occasionally.
  • Crack eggs into a bowl. Add in water and Ranch dressing. Whisk until combined.
  • Pour eggs into frying pan with ham. Using a rubber spatula, mix gently. Allow to cook, turning eggs occasionally. Once eggs are nearly cooked add in half the cheese. Stir to combine. Remove from heat once completely cooked (time will vary depending on how soft you like your scrambled eggs.)
  • Top with remaining cheese and serve.

I hate scrambled eggs. Except, that is, when I make them. These, I like. If you're looking for firm eggs, go somewhere else; these are both moist and gooey, while not undercooked (I have a horror of salmonella). Simply double to serve 3 to 4 (or two people with bigger appetites).

2 large eggs
1/2 teaspoon Worcestershire sauce (I use Lea & Perrins, of course)
2 tablespoons nonfat milk or 2 tablespoons low-fat milk
salt and pepper
1 slice cooked ham, chopped into bite-size pieces
1/4-1/3 cup shredded cheddar cheese or 1/4-1/3 cup Mexican blend cheese
nonstick cooking spray

Steps:

  • Spray non-stick frying pan with cooking spray.
  • Heat up over medium to medium-high heat.
  • (Use medium on an electric stove, medium-high on a gas.) While pan is heating, whisk together eggs, Worcestershire sauce, milk, salt, and pepper with a fork, just until blended.
  • Pour into pan and stir continually for about 2 to 3 minutes, until eggs are cooked.
  • Because of the milk, they will remain moist, but they should not be runny or sticky.
  • Turn off heat, but leave pan on burner.
  • Add ham and cheese.
  • Stir until everything is mixed, ham is heated, and cheese is melted.
  • Yum!

8 eggs, beaten
3 tablespoons milk, or more to taste
¼ teaspoon seasoned salt (such as Season-All®)
salt and ground black pepper to taste
¼ cup olive oil
1 jalapeno pepper, seeded and minced
½ cup chopped deli slices applewood-smoked ham
1 cup finely shredded Cheddar cheese, divided

Steps:

  • Beat eggs, milk, seasoned salt, salt, and black pepper together in a bowl.
  • Heat olive oil in a large non-stick skillet over medium-high heat; saute jalapeno in hot oil until slightly softened, 2 to 3 minutes. Add ham to jalapeno and cook until heated through, about 1 minute.
  • Pour egg mixture into ham mixture. Cook and stir until eggs are set but not dry, 3 to 5 minutes. Sprinkle 1/2 of the Cheddar cheese over eggs; cook and stir until cheese is melted. Transfer eggs to a plate and sprinkle remaining cheese over the top.

1/4 cup mayonnaise or salad dressing
1 tablespoon yellow mustard
2 teaspoons sugar
2 teaspoons cider vinegar
1/4 teaspoon salt
1/8 teaspoon pepper
3 oz fully cooked ham, diced
1 jar (2 oz) diced pimientos, drained
1 tablespoon chopped fresh parsley

Steps:

  • In 4-quart saucepan or Dutch oven, place eggs in single layer; add enough cold water to cover eggs by 1 inch. Cover and heat to boiling; turn off heat. If necessary, remove pan from heat to prevent further boiling. Cover and let stand 20 minutes. Immediately run cold water over eggs or place them in ice water until completely cooled.
  • Meanwhile, in medium bowl, mix remaining ingredients except ham, pimientos and parsley.
  • Peel eggs; cut lengthwise in half. Reserve egg white halves. Add egg yolks to mayonnaise mixture; mix well with wire whisk. Stir in ham and pimientos.
