This recipe from Margaret Haen, of Sheboygan, Wisconsin, uses a pound and a half of apples, making the cake dense and moist.

1/2 cup (1 stick) unsalted butter, melted, plus more for pan
2 cups all-purpose flour, (spooned and leveled)
1 cup granulated sugar
1/2 cup packed light-brown sugar
1 1/4 teaspoons baking soda
1/2 teaspoon salt
2 teaspoons ground cinnamon
1 1/2 teaspoons ground ginger
1/4 teaspoon ground nutmeg
1 1/2 pounds apples, peeled, cored, and cut into 1-inch chunks
1/2 cup chopped walnuts
2 large eggs, lightly beaten
Confectioners' sugar, for dusting

Steps:

  • Preheat oven to 350 degrees. Butter a 9-by-13-inch baking pan; set aside. In a large bowl, whisk together flour, sugars, baking soda, salt, cinnamon, ginger, and nutmeg. Add the apples, walnuts, butter, and eggs; stir just until combined.
  • Spoon into pan; smooth with a spatula. Bake 40 to 45 minutes, or until a toothpick inserted in center comes out clean. Cool in pan. Dust with confectioners' sugar to serve.

4 tablespoons butter
1 cup sugar
1 egg
1 cup flour
1 teaspoon cinnamon
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/8 teaspoon salt
3 large apples, peeled, cored, cut into crescent slices

Steps:

  • Preheat oven to 350 degrees F.
  • Cream toghether butter and sugar. Add egg and beat.
  • Sift together flour, cinnamon, baking powder, baking soda and salt.
  • Beat dry ingredients into butter mixture.
  • Stir apples into batter, which will be thick and hard to stir.
  • Turn into a buttered 9" pie pan and spread smooth.
  • Bake for 1 hour, until just brown.

Lower in fat than a lot of the turnover recipes I've seen, this is my whole grain version of my favorite pastry.

2 cups whole wheat flour
3/4 cup vegetable shortening
3/4 teaspoon salt
1/8 cup egg white
1 1/2 teaspoons sugar
1/4 cup water
1 1/2 teaspoons vinegar
3 granny smith apples, pared & finely chopped
3 tablespoons sugar
1/2 teaspoon cinnamon
1/4 teaspoon fresh lemon juice
1 pinch kosher salt
6 teaspoons light margarine
1 tablespoon honey

Steps:

  • Sift together flour and salt.
  • Cut in shortening, add water.
  • Roll 1/8" thick & cut into twelve 4" squares. Set aside.
  • Mix apples, sugar, cinnamon, lemon juice, and salt. Drizzle with honey.
  • Place 1 heaping tablespoon apple mixture in center of each square.
  • Dot with 1/2 teaspoon margarine.
  • Moisten edges with water, fold into triangle, and press edges together with fork.
  • Place on greased cookie sheet. Prick top with fork.
  • Bake 25 to 30 minutes at 400°F.

1/2 cup (packed) dark brown sugar, divided
6 tablespoons unsalted butter, melted, divided
3/4 cup old-fashioned oats
1/3 cup whole wheat flour
1/2 teaspoon ground cinnamon
1/2 teaspoon kosher salt
Vanilla ice cream (for serving)

Steps:

  • Preheat oven to 350°F. Toss apples, 1/4 cup brown sugar, and 2 tablespoons butter in a 2-quart baking dish.
  • Toss oats, whole wheat flour, cinnamon, salt, remaining 1/4 cup brown sugar, and remaining 4 tablespoons butter in a small bowl until evenly mixed and no dry spots remain (it should be very wet and form into clumps when pressed together). Sprinkle oat mixture over apples and bake until topping is golden brown (it will crisp as it cools) and filling is juicy and bubbling, 50-60 minutes. Let cool 10 minutes to let juices set. Serve topped with scoops of ice cream.

1 cup walnuts or 1 cup pecans, chopped

Steps:

  • Preheat oven to 350°F.
  • Grease and flour a 13x9-inch baking pan.
  • Combine flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Stir in nuts.
  • Cream butter and sugar together. Stir in eggs, one at a time, mixing well. Stir in vanilla.
  • Peel, core, and chop apples. You should have about 3 cups.
  • Stir dry mixture and milk alternately into creamed mixture, starting and ending with dry mixture, making 3 additions of dry and 2 of milk.
  • Fold in the chopped apples.
